Make ordinary salmon extra special by topping it with a pistachio crust. You can have it on the table in under 30 minutes for a quick weeknight meal or a dinner party for guests. Serve with a chilled glass of Sauvignon Blanc.

¼ cup crushed pistachios
2 tablespoons panko bread crumbs
1 tablespoon grated Parmesan cheese
1 tablespoon butter, melted
4 (6 ounce) fillets salmon with skin, center cut
salt and ground black pepper to taste
2 tablespoons olive oil
1 tablespoon Dijon mustard
4 lemon wedges

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine pistachios, panko bread crumbs, Parmesan cheese, and butter in a small bowl; stir with a fork until evenly combined.
  • Lightly season salmon fillets with salt and pepper on both sides.
  • Heat olive oil in a large oven-safe skillet over medium heat. Sear salmon fillets, flesh-side down, for 2 to 3 minutes. Turn heat off and flip salmon pieces over so skin side is down. Brush tops of salmon evenly with Dijon mustard. Top with pistachio mixture, pressing mixture down onto salmon.
  • Bake in the preheated oven until salmon flakes easily with a fork, 10 to 12 minutes. Serve with lemon wedges.

I don't remember where I got this recipe but it is totally sinful! We eat ALOT of salmon and I am always looking for new ways to prepare it. This is really different and has a very rich taste. It would be an appropriate dish for a special night or dinner party but is easy enough for a work night.

1/4 cup pistachios
10 -15 basil leaves
3 -4 cloves garlic
1/2 cup butter
1 teaspoon lime juice
1/2 cup white wine
4 (6 ounce) salmon fillets

Steps:

  • In food processor, combine butter, pistachios, garlic, basil and lime juice.
  • Season with salt and pepper.
  • Refrigerate.
  • Preheat oven to 400.
  • Place salmon in buttered baking dish and cover with wine.
  • Season with salt and pepper.
  • Bake till opaque--about 10 minutes Place 2-3 tablespoons of butter mixture on each piece of salmon.
  • Continue baking until done in center-about 5 more minutes or more (depending on thickness of your salmon).
  • Garnish with additional basil leaves.
  • Serve with rice or angel hair pasta.

1 salmon fillet (1 pound)

  • Preheat oven to 400°. In a shallow bowl, toss pistachios with bread crumbs and cheese., Place salmon on a greased foil-lined 15x10x1-in. pan, skin side down; sprinkle with salt and pepper. 1 cup lightly packed fresh basil leaf
1/3 cup toasted pistachio nut
1 tablespoon lime juice
2 garlic cloves
6 tablespoons butter (melted (no substitutes)
1 dash salt
1 dash pepper
6 (6 ounce) salmon fillets
1 tablespoon cooking oil
salt
pepper

Steps:

  • PISTACHIO-BASIL BUTTER:.
  • Combine basil, pistachio nuts, lime juice, garlic, butter, salt, and pepper in a food processor.
  • Blend till basil and pistachios are finely chopped, stopping to stir as necessary.
  • Transfer to a container; cover and keep cool till ready to use; if you refrigerate it, make sure it is at room temperature when you start to cook the salmon.

2 (about 1/2 pound each) salmon fillets
Coarse salt and freshly ground pepper
2 cups freshly squeezed orange juice
2 cups shelled salted pistachios
Zest of 1 orange, plus more for garnish
1/4 cup olive oil
Nonstick cooking spray

Steps:

  • Season the salmon with salt and pepper. Place in a large baking dish with 1 cup orange juice. Cover with plastic wrap, and marinate in refrigerator, for at least 1 and up to 2 hours.
  • Preheat oven to 425 degrees. Finely chop pistachios and zest in food processor. With the processor running, drizzle in oil and remaining 1 cup juice until a paste forms; set aside.
  • Lightly coat a rimmed baking sheet with cooking spray. Place salmon on baking sheet; discard excess marinade. Top with pistachio mixture, pressing lightly to adhere.
  • Bake until salmon is cooked through and pistachios are golden, 20 to 25 minutes. Garnish with zest, if desired. Serve immediately.
