I figured if I love tuna salad, egg salad, and chicken salad--why not try salmon salad? This is a wonderful little lunch with interesting flavors between the cucumber, salmon, hard-boiled eggs, lemon juice, and cayenne pepper. Super simple and yummy!

2 cups salmon, cooked and flaked
2 hard-boiled eggs, crushed
1 red bell peppers or 1 green bell pepper, diced
1 cucumber, peeled, seeded, and diced
1/2 cup onion, chopped
4 -5 tablespoons mayonnaise, enough to moisten
1/4 teaspoon cayenne pepper
salt and pepper
1/2 lemon, juiced

Steps:

  • In a large bowl, gently toss together the salmon and crushed hard-boiled eggs.
  • In another bowl, combine bell pepper, cucumber, onion, and mayonnaise.
  • Add seasonings and stir to combine.
  • Pour mixture over salmon, add lemon juice, and toss lightly to combine.
  • Serve over lettuce or as a sandwich.

2 lbs shrimp, cleaned and de-veined
1 tablespoon shrimp seasoning (recommended Old Bay)
1 cup rice
1/2 cup chopped onion
1/2 cup chopped green olives
black pepper
1 cup mayonnaise

Steps:

  • Boil shrimp in water, to cover, with shrimp seasoning just until pink.
  • Drain and reserve the shrimp boil water.
  • Chop shrimp into bite-size chunks, put on paper towels; set aside to cool.
  • In the reserved water, boil the rice according to package instructions until tender, drain and set aside.
  • Add the onion, olives, and black pepper, to taste, to the rice.
  • Then stir in the mayonnaise.
  • Add the cooled, dry shrimp last.
  • Toss and serve.

2 lbs salmon fillets
house seasoning (if you want to store on your own ( 1 cup salt, 1/4 c black pepper, and 1/4 c garlic powder. Mix well)
2 lemons, juice of
1 medium orange, sectioned and seeded
1 medium onion, sliced thin
1 small red bell pepper, julienned
1 small green bell pepper, julienned
1 pint strawberry, cleaned and sliced
1/2 cup water
1/2 cup honey
1/2 cup fresh dill (chopped) or 1/2 cup fresh chervil (chopped)
4 garlic cloves, minced
1 bunch chives, chopped

Steps:

  • Preheat oven to 350.
  • Place salmon fillet on a foil-lined pan.
  • Season with House Seasoning and lemon juice, then cover and surround fish with orange, onion, and red and green bell pepper.
  • Mix strawberries, water, honey, chervil or dill, garlic, and chives together.
  • Pour evenly over salmon.
  • Cover with foil and pierce foil, allowing salmon to steam.
  • Bake for 25 to 30 minutes.
  • Serve with rice.
