5 ounces smoked salmon, cut into small pieces
1 onion, chopped
1 clove crushed garlic
2 cups sliced fresh mushrooms
¾ cup prepared basil pesto sauce
3 tablespoons tomato paste
2 tablespoons olive oil
1 tablespoon chopped fresh basil
¼ cup water
8 ounces spaghetti

Steps:

  • Cook pasta in a large pot of boiling water until al dente.
  • In a skillet, heat olive oil over medium heat. Add onion, mushrooms, and garlic until onion is transparent and mushrooms are tender. Stir in tomato paste, pesto sauce, fresh basil, water, and smoked salmon; cook gently for 5 to10 minutes, or until desired consistency is achieved.
  • Drain pasta. Serve sauce over noodles.

150g cherry tomatoes , halved or sliced
2 salmon fillets (about 260g)
2 tbsp olive oil
350g penne
1 small broccoli (about 300g), cut into small florets
150g pesto
250g mascarpone
50g breadcrumbs
20g grated parmesan

Steps:

  • Heat the grill to high. Arrange the tomatoes and salmon over a baking tray, season and drizzle with half the oil. Grill for 10 mins until the salmon is cooked through and the tomatoes are juicy. Leave to cool.
  • Cook the penne following pack instructions, until al dente. Add the broccoli for the final 2 mins of cooking time. Drain the pasta, reserving a large mugful of water.
  • Return the pasta and broccoli to the pan, then stir in the pesto, mascarpone, half the tomatoes and enough of the reserved pasta water to thin the sauce to the consistency of double cream. Flake in the salmon, discarding the skin. Tip into a large baking dish, then mix the breadcrumbs with the parmesan and remaining oil, and scatter this over the mixture. Dot the rest of the tomatoes on top. If baking straightaway, heat the oven to 200C/180C fan/gas 6. Or, cover and chill until you're ready to cook. Will keep chilled for up to 24 hours.
  • Bake for 20 mins (or 25 mins from chilled) until the top is golden and crunchy.

8 ounces dry pasta (I used shells)
12 ounces skinless salmon
1 lemon
salt and pepper
1 teaspoon grated lemon zest
1 tablespoon olive oil
1 teaspoon lemon juice
1/2 cup heavy cream
1/4 cup pine nuts
2 garlic cloves
1/2 lb Baby Spinach (about 10 cups)
1/3 cup olive oil
1 cup freshly grated parmesan cheese
kosher salt and black pepper
1 tablespoon grated lemon zest
1 cup heavy cream

Steps:

  • Prepare the pasta - Bring a large pot of water to a boil. When water is boiling, add 1 tablespoon salt and dry pasta; stir to separate pasta. Cook pasta until al dente and drain; set aside.
  • Prepare the salmon - Adjust oven rack to upper-middle position and heat broiler. Line a baking sheet or pan with aluminum foil. Zest the lemon and set aside. Cut half of the lemon into thin slices and place on the lined baking sheet. Reserve the other lemon half to use later.
  • Season one side of the salmon liberally with salt and pepper, sprinkle with lemon zest, then rub with olive oil. Place the salmon on top of the lemon slices on the baking sheet. Broil until salmon is no longer translucent and is firm when pressed, about 10 minutes. Remove from broiler and sprinkle with lemon juice using the remaining half of lemon. Use a fork to flake the salmon into bite-sized pieces. The salmon skin will stick to foil and can be discarded.
  • Prepare the spinach pesto sauce - In a food processor, pulse the walnuts and garlic until chopped. Add two-thirds of the spinach (the remainder will be used later), oil, half (1/2 cup) of the Parmesan, and ¼ teaspoon each salt and pepper. Puree until smooth, scraping down the sides of the processor bowl as necessary.
  • In a large saucepan over medium high heat, pour in the heavy cream and simmer until reduced to 1/2 cup. Once reduced, add the spinach pesto, the reserved spinach, remaining parmesan and stir. Cook until cheese melts through and spinach wilts down.
  • To assemble - Transfer the cooked pasta to a large serving dish. Top with the spinach pesto sauce and salmon, and toss to combine. Serve with freshly grated parmesan.

1 (500 g) packet pasta, shapes (I used penne)
2 tablespoons olive oil
1 onion, thinly sliced
1 (400 g) can red salmon or 1 (400 g) can pink salmon
150 g frozen peas
2 tablespoons pesto sauce
1 tablespoon lemon juice
25 g parmesan cheese, grated
salt and pepper
parmesan cheese, shavings to garnish

Steps:

  • Cook pasta until almost tender, about 10 minutes (Do not drain).
  • Meanwhile, heat the oil in a frying pan, add the onion and fry for about 5 minutes until softened.
  • Drain the salmon discarding any skin and bones, flake salmon roughly with a fork.
  • Add the peas to the pasta and cook for a further 3 minutes.
  • Drain the pasta and peas, retaining 2 tablespoonfuls of the cooking water, return pasta and retained water to the pan.
  • Stir in pesto, lemon juice, Parmesan, onion and flaked salmon.
  • Season lightly with salt and pepper and toss gently.
  • Serve immediately, garnished with the Parmesan shavings.

This simple, flavorful dish is filling and super-quick to make. It can be served hot or chilled, making it perfect for either an easy dinner or picnic lunch.

Kosher salt
One 16-ounce box fusilli pasta
2 tablespoons olive oil
1 large red bell pepper, cut into small dice
1 pound skinless salmon fillet, cut into 1/2-inch cubes
1/4 teaspoon red pepper flakes, optional
1/4 teaspoon cracked black pepper
Juice of 1/2 lemon
1 1/2 cups lightly packed basil leaves, plus more for garnish
1 large clove garlic
1/4 cup pine nuts, toasted (see Cook's Note)
1/4 teaspoon kosher salt
1/4 teaspoon cracked black pepper
1/2 cup extra-virgin olive oil
1/4 cup grated Parmigiano-Reggiano, plus more for garnish (optional)

Steps:

  • Bring a large pot of water to a boil over high heat. Add a large pinch of salt and cook the pasta according to package directions for al dente, about 8 minutes.
  • Meanwhile, place a large skillet over medium-high heat. Add the oil and bell pepper. Cook until the bell pepper starts to soften, about 1 minute. Add the salmon and red pepper flakes, if using, to the skillet and sprinkle with salt and the black pepper. Cook for about 2 minutes without stirring. Then continue cooking and stirring until the salmon is cooked through, about 2 minutes. Add the lemon juice. Transfer the mixture to a large bowl and set aside.
  • For the pesto: Place the basil, garlic, pine nuts, salt and black pepper in a blender. Start on low speed, then increase to medium. With the motor running, slowly drizzle in the olive oil and blend until smooth. Stop the blender and scrape down the sides. Add the cheese and blend a few seconds just to incorporate. Taste and adjust the seasoning.
  • Drain the pasta and add it to the bowl with the salmon. Add the pesto and toss. Taste and adjust the seasoning. Serve immediately, or refrigerate until chilled. Finish with basil leaves and grated cheese if desired.

CREAMY PESTO PASTA WITH SALMON

Oh so yummy & oh so quick! I prefer to use Dreamfield's pasta, as it has very few digestable carbs and makes this dish even healthier! If you can't find Dreamfield's whole wheat pasta also works! I promise, you won't feel like this is a diet dish in the end!

12 ounces penne rigate
canned mushroom slices (about a handful or so)
knorr's creamy pesto sauce mix
1/4 cup olive oil
1 cup skim milk
4 -6 ounces salmon fillets
4 slices provolone cheese
shaved parmesan cheese
salt and pepper

Steps:

  • 1. Boil water & put on pasta.
  • 2. Remove any skin from salmon. Salt and pepper & grill 4-6 minutes on each side. You'll know it's done when the salmon becomes flakey.
  • 3. In a small sauce pan, mix pesto sauce mix with the oil and milk. Stir constantly and bring to a low boil. Turn heat down and continue to stir until all oil has been incorporated and the sauce begins to thicken.
  • 4. Add mushrooms to sauce and allow them to cook a little while the pasta gets to al dente.
  • 5. Drain pasta and seperate out into bowls evenly. Put both cheeses (the amount depends on how much you like -- I prefer one slice of provolone and a pinch of shaved parmesan).
  • 6. Poor creamy pesto sauce with mushrooms over cheese and pasta.
  • 7. Top with grilled salmon fillets. You can add a squeeze of fresh lemon juice if you'd like to, just go light!

2 x salmon fillets, weighing about 125 g (4 oz) each
juice of half a lemon
100 g (31⁄2 oz) spaghetti (wholemeal if possible)
2 teaspoons pesto sauce
1 teaspoon olive oil
salt and freshly ground black pepper

Steps:

  • Preheat the grill to high and put a saucepan of water on to boil. Wipe the salmon fillets clean, run them briefly under the cold tap to rinse, then pat them dry with kitchen paper. Squeeze the lemon juice into a heatproof dish and place the salmon fillets in it. Turn them around in the lemon juice, and leave them skin side up. Place the dish under the hot grill for 5 minutes. Put a pinch of salt in the saucepan of water, and when it is boiling, add the pasta, then leave it to cook. Put the pesto in a small dish, add the olive oil and mix it in well. Take the salmon out from under the grill and turn it skin-side down. Using a small knife, spread a third of the pesto mixture on the top of each fillet. Put back under the grill and cook for a further 5 minutes or until the salmon is cooked right through and the pesto is bubbling and beginning to colour. Just before the salmon is done, the spaghetti should be ready. Drain it, return it to the pan and stir in the rest of the pesto; it will just be enough to give a little added flavour to the pasta. Combine well, over a very low heat, until the pasta is coated. Divide the pasta between 2 plates, and then put a fillet of salmon on top of each one. Season and serve immediately.
