1 1/2 cups uncooked macaroni
2 cups cooked salmon, flaked
3 hard-boiled eggs, chopped
1/2 cup diced cheddar cheese
2 cups grape tomatoes, halved
1/2 cup chopped scallion, white and green parts
1/4 cup diced sweet gherkin
2 tablespoons sweet pickle juice
1/2 cup diced celery
3/4 cup mayonnaise, to desired moistness
1/2 teaspoon dried dill weed
1/4 teaspoon pepper
salt, to taste

Steps:

  • Cook macaroni according to package directions; drain and rinse w/ cold water until cooled. Drain again.
  • Place cooled drain macaroni in a large mixing bowl and add all remaining ingredients.
  • Stir well to evenly mix.
  • Chill about 2 hours before serving.

1 (16 ounce) package elbow macaroni
10 ½ ounces canned peas and pearl onions, drained
2 (7 ounce) cans skinless, boneless salmon, drained and flaked
2 cups mayonnaise
1 teaspoon onion powder
1 teaspoon salt, or to taste
1 teaspoon black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook macaroni for 8 to 10 minutes, or until al dente; drain and rinse under cold water until cool.
  • In a large bowl, mix together macaroni, peas and onions, salmon, and mayonnaise. Season with onion powder, salt, and pepper, and mix well. Cover, and refrigerate 2 hours, or until well-chilled.

I have no clue who Margie is, but I have been making this delicious pasta salad for years. I usually double the recipe and always remove the skin and the bones. I usually substitute dehydrated minced onions for the green onion.

7 3/4 ounces canned salmon, drained
1/2 green bell pepper, finely chopped (1/2 cup)
2 tablespoons green onions, chopped
2 tablespoons mayonnaise or 2 tablespoons Miracle Whip
1 teaspoon Worcestershire sauce
1 teaspoon lemon pepper
1 tablespoon lemon juice
8 ounces elbow macaroni, cooked and drained

Steps:

  • In a large bowl combine salmon, green pepper, green onion, mayonnaise (or Miracle Whip), Worcestershire sauce, lemon pepper and lemon juice.
  • Mix together.
  • Add hot cooked macaroni and toss together.
  • Salad can be served at once or refrigerated and served cold.

1/3 c lowfat plain yogurt
2 Tbsp light mayonnaise
2 Tbsp fresh chopped parsley

3 eggs, hard-cooked, quartered
1 c cooked elbow macaroni or other pasta, drained
1 can(s) (7 3/4 oz.) salmon, drained and flaked
1/2 c chopped green bell pepper
1/4 c chopped celery
1/2 cucumber, peeled, seeded and diced
2 Tbsp chopped green onion

Steps:

  • 1. In a small bowl, combine dressing ingredients; cover and refrigerate.
  • 2. Drain and flake salmon. Prep vegetables.
  • 3. Cook eggs to hard boiled (could do ahead). Cook macaroni per package directions, rinse with cold water and drain.
  • 4. In medium bowl, combine remaining ingredients, except lettuce and eggs. Stir in dressing and toss.
  • 5. Serve on lettuce leaves, and garnish with eggs. Makes 4 servings. Each serving is 205 calories.

1/4 tsp. basil
1/4 tsp. dill weed

  • Cook macaroni according to pkg. directions. Rinse and drain under cold water. Mix ingredients except tomatoes and lettuce. Cover and refrigerate at least 1 hour. Spoon on lettuce leaves. Garnish with tomato wedges.

High school recipe for Foods III, senior class. When Salmon was about the same price as Tuna. I love to play with this salad, adding other things and trying new herbs. But this is the "Original" version.

2-3 c cooked macaroni
1 c cucumber, chopped
1- 15oz can(s) can salmon, flaked (remove bones and skin if desired)
1 Tbsp grated onion
1 Tbsp minced parsley
1 Tbsp chopped fresh dill
3/4 c mayonnaise
1/4 tsp salt
1/8 tsp pepper
2-4 Tbsp lemon juice
1/2 to 3/4 c chopped celery

Steps:

  • 1. Cook Macaroni as directed in salted water. Drain macaroni and cool under very cold running water. Shake as much water off as possible before making salad.
  • 2. While cooking pasta, chop and prepare all other ingredients.
  • 3. Combine all ingredients and toss lightly to blend.
  • 4. Serve on lettuce cups and garnish with chopped parsley and /or paprika.

3 can(s) salmon, canned in water (boneless)
1 pint(s) grape tomatoes
4 stick(s) celery
1 package(s) frozen peas
2/3 cup(s) hellmanns mayo
1/3 cup(s) light sour cream
1 1/2 teaspoon(s) lemon pepper
1 teaspoon(s) dill weed
1 teaspoon(s) dried onion
2 teaspoon(s) lemon juice

Steps:

  • Cook Pasta as directed on box, until al dente. Strain out hot water, refill with cold water to cool pasta, repeat once more to ensure pasta is cooled. Set aside in large tupperware bowl, and place in fridge. Large bowl will allow you to mix in everything else later.
  • Prepare sauce in small-medium bowl. Mix mayo, sour cream, lemon pepper, lemon juice, dill, and onion. Stir together, and place in fridge to chill and distribute flavors.
  • Wash grape tomatoes, and cut in halves. Also microwave peas with 2 Tbsp. water for 2min. Strain water out of peas. Take macaroni bowl from fridge and add the tomatoes and peas.
  • Open salmon cans, and drain water. Add the salmon into large bowl with mac etc.
  • Take out sauce bowl from fridge and stir into large bowl with macaroni etc. Mix until everything is coated. Return to fridge to chill until time to serve. I like to add a little more lemon pepper after serving as a final touch! Enjoy

1 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon pimiento
4 teaspoons chicken bouillon (I use Watkins)
