This is hands down the best salmon log I've ever had. My family makes it for every get together, and my boyfriend demands it randomly (and he doesn't like salmon!). You don't have to chill it for that long, just until it's set.

Number Of Ingredients 9

1 (1 1/2 lb) can salmon (use canned always)
1 (8 ounce) package cream cheese, softened
1 tablespoon lemon juice
2 teaspoons grated onions
1 teaspoon prepared horseradish
1/4 teaspoon salt
1/4 teaspoon liquid smoke
1/2 cup chopped pecans (optional)
3 tablespoons snipped parsley (dried works best)

Steps:

  • Drain and flake salmon, removing skin and bones.
  • Combine salmon with next six ingredients; mix thoroughly.
  • Chill several hours.
  • Combine pecans and parsley (or, just use parsley, I never use pecans).
  • Shape salmon mix in 8x2 inch log; roll in nut mix; chill well.
  • Serve with Crackers.

1 8 ounce package cream cheese, softened
2 tablespoons lemon juice
2 tablespoons grated onion
1 teaspoon prepared horseradish
1/4 teaspoon salt
1/2 cup chopped pecans plus extra
3 tablespoons chopped parsley

Steps:

  • Drain and flake salmon, remove skin and bones. Combine salmon with next seven ingredients; mix thoroughly. Chill several hours. Combine additional pecans and parsley. Shape salmon mixture into 8x2 log; roll in nut mixture and chill well.

2 cups canned salmon, drained, flaked, and skin and bones removed
1 (8 ounce) package cream cheese, softened
2 teaspoons grated onions
1 teaspoon prepared horseradish
1 tablespoon lemon juice
1/4 teaspoon salt
1 teaspoon liquid smoke (optional)
1/2 cup crushed pecans
3 tablespoons snipped dill

Steps:

  • Thoroughly mix together the salmon, cream cheese, onion, horseradish, lemon juice, salt and liquid smoke in a medium bowl.
  • Chill the salmon mixture at least 1 hour; shape into an 8 X 2 inch log.
  • Combine nuts and dill; roll log in the nut mixture.
  • Chill at least 2 hours more or overnight.

My Mom loved having her family over for Christmas Eve, and would make all kinds of finger foods and treats. One of everybody's favorites was her Salmon Log. I never got her recipe before she passed away, but found this one online a few years ago, and its just like hers. There is nothing as comforting as a reminder of something...

16 oz can of salmon
1 tsp lemon juice
2 tsp onion grated
1 tsp horseradish
1/4 tsp salt
1/4 tsp liquid smoke flavoring
1/2 c chopped pecans
3 Tbsp snipped parsley
8 oz cream cheese

Steps:

  • 1. Mix all ingredients, except pecans and parsley a day ahead and refridgerate covered.
  • 2. Form into two logs and roll in pecans to coat log.Sprinkle with parsley and refridgerate until ready to serve. Serve with crackers of your choice.

This is an easy appetizer to make, using simple ingredients that can be found at any grocery store. But it makes a great presentation. Try it on tiny rye bread slices, or sesame-seasoned crackers.

1 lb canned alaskan salmon
8 oz cream cheese, softened to room temperature
1 Tbsp lemon juice
1 Tbsp finely minced onion
1 tsp prepared horseradish
1/2 tsp salt
1/4 tsp liquid smoke flavoring
1/2 c chopped pecans
1/4 c chopped fresh parsley

Steps:

  • 1. Drain, flake, and remove bones if desired, from the salmon. Combine salmon with cream cheese, lemon juice, onion, horseradish, salt, and liquid smoke flavoring. Mix thoroughly and chill several hours or overnight.
  • 2. Combine the chopped pecans and parsley on a sheet of waxed paper. Shape the salmon mixture into a log. Roll the log in the parsley and nuts. Place on appropriate serving dish and garnish with parsley leaves if desired. Refrigerate until serving time.

1 tablespoon lemon juice
8 ounces cream cheese -- softened
1 teaspoon prepared horseradish

1/4 tsp liquid smoke (if using canned salmon)
chopped parsley
salt and pepper
1/2 cup pecans (for log) -- chopped
8 ounces almonds, whole (for fish shape)

Steps:

  • Combine all ingredients except nuts. Mix thoroughly. Chill. Either shape into log and roll in pecans and additional parsley. Or shape into a fish and cover with almonds to look like scales. Serve with crackers and/or sliced cucumbers.

2 c salmon, cooked, fresh; or 1lb. can of salmon
1 pkg cream cheese, 8oz.
1 Tbsp lemon juice
2 tsp onion, grated
1 tsp horseradish
1/4 tsp salt
1/4 tsp liquid smoke
1/2 c pecans, chopped
3 Tbsp fresh italian parsley, chopped

Steps:

  • 1. If using canned, drain and flake salmon being sure to remove any bones. If using fresh, flake cooked salmon into bite size pieces.
  • 2. Combine salmon with next six ingredients.
  • 3. Cover and chill mixture several hours.
  • 4. Shape mixture into a log and roll in pecans and parsley. Chill well and keep chilled until serving.
