This is a recipe I adopted from the Recipezaar account. KC Cooker tested it out as part of an adoptee swap and had some great suggestions. I've changed the recipe to incorporate her suggestions and I think the end result is a nice improvement.

1 1/2 cups mayonnaise or 1 1/2 cups Miracle Whip
1/2 cup sour cream
1/2 teaspoon cayenne pepper, to taste
1 teaspoon cajun seasoning, to taste

  • Blend all of the ingredients together until smooth.
  • Cover and chill.

24 slices smoked salmon
6 hard-boiled eggs , cooled, shelled and sliced
2 x 100g bags baby spinach
12 large wraps , we used multigrain
200g light mayonnaise
6 tbsp Dijon mustard
1 small red onion , very finely sliced

Steps:

  • Mix the mayonnaise and mustard, divide into 2 small bowls, then stir the onion into one bowl.
  • To assemble, spread a layer of the onion mayonnaise over each wrap and add 2 slices of smoked salmon, some sliced hard-boiled egg and a generous helping of spinach to each. Roll up tightly. The wraps can be made several hours ahead and kept covered in the fridge. To serve, cut each wrap on the diagonal into 2 pieces. Serve with the extra mustard mayo for drizzling.

Using canned salmon, lettuce and some seasoning you can create this simple, healthy lunch. Low-fat, low-calorie and no fuss, this is the easiest lunch ever

400g can cannellini beans , rinsed and drained
213g can wild red salmon , drained, skin and bones removed if you like
½ lemon , zested and juiced
1 spring onion , finely chopped
1 tbsp Greek yogurt
1 tbsp dill , chopped
8 large romaine lettuce leaves

Steps:

  • Mix together all the ingredients except the lettuce in a bowl.
  • Trim the chunky part of the stalk at the base of each lettuce leaf so they are easier to roll up, then place the leaves in pairs on top of each other, head to toe. Spoon on the salmon mixture, then roll up and keep in place with strips of baking parchment, which make the wraps easier to hold and eat. Pack into a container to keep the wraps from getting crushed and, if possible, chill to keep the lettuce crisp.

Perfect for dipping. Try it with crab cakes, steak sandwiches, chicken fingers, and fish. Will hold perfectly for 5 days. Yields 1 3/4C, so I am guessing on servings. It would depend on what you are using it for. I am basing servings on using it as a dip, not a condiment.

1 can (184 g) salmon, drained
1/4 cup (60 mL) coriander
1 garlic clove, chopped
1/2 onion, chopped
2 tsp (10 mL) lemon juice
1 tsp (5 mL) honey
4 tsp (20 mL) fresh bread crumbs
1/4 cup (60 mL) mayo
1 tsp (5 mL) lemon juice
1 tbsp (15 mL) grainy mustard
1 Salt and pepper, to taste
12 iceberg lettuce leaves

Steps:

  • 1. Mix the first 7 ingredients in a bowl to make the salmon mixture.
  • 2. In a medium-sized, non-stick pan, heat canola oil and fry salmon mixture for 5 minutes over medium heat. Place salmon mixture in the lettuce leaves and wrap.
  • 3. In a small bowl, mix mayonnaise, lemon juice and grainy mustard. Season with salt and pepper. Use as a dipping sauce for the wraps.
  • 4. Serve wraps with dipping sauce.
