An easy, light yet filling, pasta pomodoro dish with salmon. Goes great with colorful steamed mixed veggies.

1 (8 ounce) package spaghetti
¼ cup extra-virgin olive oil
1 onion, chopped
1 tablespoon minced garlic
4 (4 ounce) salmon fillets
salt and pepper to taste
3 Roma tomatoes, chopped
1 tablespoon chopped fresh basil
½ cup grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Reserve 1 cup of the pasta water. Drain well in a colander set in the sink.
  • Heat olive oil in a large skillet over medium-high heat. Place onion and garlic in the skillet in an even layer then lay salmon fillets on top. Place a lid on the skillet and cook the salmon until it flakes easily and the onions are tender. Flake all of the salmon. Season with salt and pepper, then reduce the heat to medium. Toss the spaghetti, tomatoes, and basil with the salmon and sprinkle with Parmesan cheese. Stir in some of the pasta water if the pasta becomes dry.

6 ounces salmon fillets
1 bunch fresh basil
1 cup tomatoes, chopped
2 tablespoons olive oil
salt
pepper

Steps:

  • Preheat oven to 375 degrees.
  • Reserve a few basil leaves for garnish, chop the remaining leaves and mix them ina bowl with the tomatoes and olive oil.
  • Place salmon in a baking dish and cover with some of the tomato-basil mixture, reserving the ramainder for later use.
  • Season with salt and pepper to taste.
  • Bake for 15-20 minutes or until the salmon is cooked to taste.
  • Garnish with basil leaves and the reserved tomato-basil mixture.
  • Tip: serve with rice, mashed potatoes, or your favorite vegetable.

Salmon con Pomodoro Fresco image

Another recipe for all you Salmon Lovers!! For this recipe you will use fresh plum tomatoes to make a quick pan sauce for the salmon. Oh so good!

3 tablespoon(s) olive oil
1 medium onion, peeled and quartered
4 clove(s) garlic, peeled and crushed
1 sprig(s) fresh thyme, or 1 tsp dried thyme
2 sprig(s) fresh parsley, or 1 tsp dried parsley
4 - salmon fillets (8 ounces each)
- salt and pepper to taste
1 cup(s) white wine
4 medium tomatoes, cut into 1 inch cubes
8 - fresh basil leaves, chopped, or 2 tsp dried basil

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, thyme and parsley. Saute' for 2 minutes. Drain and discard the oil.
  • Season the salmon with salt and pepper. Add it to the skillet and cook over medium high heat for 3 to 4 minutes. Then turn the fillets over and cook for another 3 minutes.
  • Add the wine, tomatoes and basil to the skillet. Season with salt and pepper. Cook covered, over low - medium heat for 8 minutes. Serve each salmon fillet topped with a generous spoonful of tomato sauce.
