8 salmon fillets (6 ounces each), skin removed
4 teaspoons grated orange zest
4 teaspoons balsamic vinegar
4 teaspoons honey
1 teaspoon salt
SAUCE:
1 teaspoon cornstarch
1 cup orange juice
2 teaspoons honey
1 teaspoon balsamic vinegar
1/4 teaspoon salt

Steps:

  • Preheat oven to 425°. Place salmon in a greased 15x10x1-in. baking pan. In a small bowl, mix orange zest, vinegar, honey and salt; spread over fillets., Roast 15-18 minutes or until fish just begins to flake easily with a fork. Meanwhile, in a small saucepan, mix cornstarch and orange juice. Bring to a boil; cook and stir 1 minute or until thickened. Stir in honey, vinegar and salt; serve with salmon.

1 tablespoon olive oil
2 teaspoons butter,
4 (6-ounce) skinless salmon fillets, ((170 grams each))
1/4 cup fresh orange juice, ((about 1/2 an orange))
3 tablespoons honey
2 tablespoons low-sodium soy sauce
4 cloves garlic, (crushed or minced)
salt and cracked black pepper, (to taste)
1/2 an orange, (sliced to serve)

Steps:

  • Heat butter (or oil) in a pan or skillet over medium-high heat. Sear salmon skin-side up for 3-4 minutes. Flip and sear for 2 minutes.
  • Pour in the orange juice and allow to reduce to half the quantity (it takes about 1 minute to reduce down if your pan is hot enough). Add the garlic and cook until fragrant (30 seconds). Move the salmon to the sides of the pan and add in the honey and soy sauce, stirring well to combine all of the flavours together.
  • Bring to a simmer until reduced to a nice syrup (this takes about another 30 seconds to 1 minute), and move the salmon around in the sauce to evenly coat. Remove from heat once the salmon is cooked to your liking.
  • Season with salt and pepper to your tastes. Drizzle with the sauce to serve. Best served over rice, noodles, steamed vegetables or with a salad.

1 lb salmon (skin on)
1 orange (ZEST and JUICE)
1 orange (JUICE)
3 Tbsp soy sauce
2 Tbsp honey

Steps:

  • Preheat the oven to 425 and line a baking sheet with parchment paper, folding up the edges to keep keep sauce in.
  • Combine juice from 2 oranges, zest from 1 orange, soy sauce, and honey in a bowl. Whisk well.
  • Pour a few spoonfuls of sauce on the prepared baking pan. Place salmon skin up and pour remaining sauce over it.
  • Bake for about 7 minutes and carefully flip salmon skin down. Spoon some sauce over the top of the salmon.
  • Bake for 18-20 minutes, until salmon is done. Bake time will depend on the size and thickness of salmon filet.
  • Enjoy salmon over rice or quinoa.

unsalted butter
olive oil
3/4 cup small-diced red onion (1 small onion)
1 1/2 cups small-diced celery (4 stalks)
1/2 cup small-diced red bell pepper (1 small pepper)
1/2 cup small-diced yellow bell pepper (1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers, drained
1/4 teaspoon Tabasco sauce
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons Old Bay Seasoning
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
crushed red pepper flakes, to taste
1/2 lb cooked salmon
3/4 cup panko breadcrumbs (Japanese bread crumbs) or 3/4 cup plain breadcrumbs
1/2 cup good mayonnaise
2 teaspoons Dijon mustard
2 extra-large eggs, lightly beaten

Steps:

  • Place 2 tablespoons of butter, 2 tablespoons of oil, the onion, celery, red and yellow bell peppers, parsley, capers, Tabasco sauce, Worcestershire sauce, Old Bay Seasoning, salt, and peppers in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes.
  • Cool to room temperature; flake the salmon into a large bowl, add the bread crumbs, mayonnaise, mustard, and eggs and toss lightly.
  • Add the cooked mixture and mix well.
  • Cover and chill in the refrigerator for 30 minutes.
  • Shape into salmon cakes, 2 1/2 to 3 ounces each.
  • Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large saute pan over medium heat.
  • Add the salmon cakes and fry for 3 to 4 minutes on each side, until browned.
  • Drain on paper towels; keep them warm in a 250 degree F oven and serve hot.
  • TO COOK SALMON:.
  • Brush with olive oil, sprinkle with salt and pepper, and roast in a 350ºF oven for 15 to 20 minutes, until just cooked.
  • Cover tightly with aluminum foil, allow to rest for 10 minutes, then chill completely.
  • Flake with your hands.
  • *Salmon cakes can be shaped and stored overnight in the fridge on baking sheets wrapped in plastic; fry just before serving.
