I got this recipe from my mother and have taken it to a number of potlucks. It always receives raves. Even non-salmon lovers like this appetizer.

1 (7 ounce) can salmon, drained and flaked
1 (8 ounce) package cream cheese, softened
1 tablespoon lemon juice
3 tablespoons finely chopped green onions
2 teaspoons prepared horseradish
¼ teaspoon salt
¼ teaspoon hot pepper sauce
¼ teaspoon Worcestershire sauce
½ cup chopped walnuts
¼ cup chopped fresh parsley

Steps:

  • In a medium bowl, mix salmon, cream cheese, lemon juice, green onions, horseradish, salt, hot pepper sauce and Worcestershire sauce. Form the mixture into a ball and wrap in plastic. Chill in the refrigerator 3 hours, or until firm.
  • On a large piece of wax paper, mix walnuts and fresh parsley. Roll the ball in the walnuts and parsley until thoroughly coated. Chill in the refrigerator until serving.

1 tablespoon finely chopped onion
1 teaspoon prepared horseradish
¼ teaspoon salt

Steps:

  • In a medium bowl, thoroughly mix cream cheese, onion, horseradish, salt and lemon juice. Mix in the salmon, distributing it evenly throughout. Form mixture into a ball and roll in the parsley. Wrap in plastic and chill in the refrigerator until serving.

Quick & easy appetizer (the cook time is actually the time to allow the mixture to firm in the frig, longer is better).

8 ounces cream cheese, softened
1 tablespoon lemon juice
2 teaspoons horseradish (prepared, not cream)
1 small onion, minced
1 (15 ounce) can salmon, drained
1/4 cup chopped parsley (I have also done this with finely chopped green onions)
1 cup chopped pecans

Steps:

  • Mix salmon with cream cheese, lemon juice, horseradish, and onion.
  • Refrigerate until firm.
  • Mix parsley and pecans together.
  • Form salmon mixture into a ball.
  • Roll in pecan-parsley mixture.
  • Serve on a plate with your favorite crackers around it.
  • If you are not fond of horseradish, I would cut it down to 1 teaspoons.
  • (I love the taste of horseradish so I usually add more).

8 ounces cream cheese
1 medium red onion, chopped
2 tablespoons fresh dill (or 1 T dried dill weed)
1 red onion, cut into thin rings
3 tablespoons capers
dill sprigs (to garnish)
lemon wedge (to garnish)

Steps:

  • Combine salmon, cream cheese, chopped onion and dill.
  • Shape into ball, wrap in plastic, and refrigerate at least 2 hours.
  • To serve: Cover serving tray with onion rings and sprinkle over capers. Place salmon ball on onion bed and capers. Garnish with dill and lemon wedge. Serve with toasts.

I've been experimenting with Liquid Smoke lately and found this great recipe. This can be made quickly, in advance, and taste great! Goes great with crackers, crudites or your favorite breadsticks. Prep time includings 6 hours chilling.

1 tablespoon fresh lemon juice
