4 salmon fillets
2 tablespoons olive oil
2 tablespoons brown sugar
4 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon paprika
1 teaspoon chili powder
½ lemon

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a baking sheet.
  • Place salmon fillets on the prepared baking sheet. Mix olive oil, brown sugar, garlic, smoked paprika, paprika, and chile powder together in a bowl. Spread mixture over salmon fillets. Squeeze lemon juice on top.
  • Bake in the preheated oven until fish flakes easily with a fork, 13 to 15 minutes.

Nonstick cooking Spray
2 tablespoons packed light brown sugar
1 tablespoon chili powder
1 teaspoon ground cumin
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
6 (6-ounce) salmon fillets, skin and any pin bones removed
1 tablespoon olive oil

Steps:

  • Coat your grill or a grill pan with cooking spray and preheat over medium heat. While the grill is heating, combine the brown sugar, chili powder, cumin, salt, and pepper. Brush each salmon fillet with 1/2 teaspoon of the oil, then rub each fillet with about 1/2 tablespoon of the spice mixture.
  • Grill the salmon, flesh side down, until charred, 4 to 5 minutes. Flip the salmon and cook another 5 to 6 minutes for medium doneness. For well done fish, cook an additional 1 to 2 minutes. Remove to a platter and serve immediately.

2 tablespoons light brown sugar
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1/4 cup panko breadcrumbs
1/2 cup parsley leaves, chopped
2 tablespoons unsalted butter, melted
1 1/2 pounds skin-on salmon fillet, preferably center-cut
1 tablespoon Dijon

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
  • Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

1 lb Salmon
2 Tbsp unsalted butter
1 Tbsp honey
3 Tbsp lime juice (about 2 limes)
1/2 tsp lime zest
3 cloves of garlic, minced (or 1 tsp of Brazilian Sofrito)
3 Tbsp fresh cilantro, roughly minced
1 tsp ground smoked paprika
1/2 tsp ground achiote pepper (optional)
pinch of black pepper
1/4 tsp ground cayenne pepper
1 tsp kosher salt

Steps:

  • Line a baking sheet with foil.
  • In a small bowl, combine all the peppers and salt. Then, rub the salmon on both sides and place it on the lined baking sheet and set aside while you take care of the next steps.
  • Position a rack in the middle of your oven, and preheat it to 375F.
  • While your oven is heating up, add the butter and the garlic to a small microwave safe bowl, and microwave for 10-20 seconds - just enough to melt the butter.
  • Then, add in the honey, half of the chopped cilantro, the lime juice and the zest to the melted butter mixture, and whisk to combine.
  • Using a small culinary brush, brush the salmon on both sides. Then, roll or fold the sides of the foil around the salmon (like a little boat) and pour any remaining honey butter mixture on top. The foil boat will ensure all that sauce stays under/around the salmon while it bakes.
  • Bake until cooked through (about 15-20 mins) depending on how thick your fish is and how "done" you like your salmon.
  • Serve with the remaining chopped cilantro and lime slices!

1/2 large lemon, juice of
1/2 large orange, juice of
salt and pepper
1 whole orange, zest of
2 tablespoons brown sugar
1 tablespoon chili powder
1 clove garlic, minced
2 tablespoons butter, melted

Steps:

  • In a shallow dish large enough to hold the salmon, combine the juices, salt and pepper.
  • Add the salmon, turning to coat with the marinade.
  • Let marinate at room temperature for 20 minutes, turning the fillets once.
  • Preheat the oven to 425F.
  • Line a shallow baking pan with aluminum foil and grease with a little of the melted butter.
  • In a small dish, combine the orange zest, brown sugar, chili powder and minced garlic.
