SWEET AND SPICY PINEAPPLE SALMON



Sweet and Spicy Pineapple Salmon image

Salmon is roasted in a sweet and spicy pineapple sauce, along with pineapple slices, in this easy, healthy meal that's ready in 30 minutes or less!

2-2.5 lbs. salmon
Salt and pepper, to taste
2 (8 oz.) cans pineapple slices, drained (reserve juice for glaze)
1/2 cup sweet chili sauce
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon brown sugar
1/4 cup pineapple juice
Chopped fresh cilantro, for garnish

Steps:

  • Preheat oven to 425 degrees. Line a baking sheet with foil. Spray with non-stick cooking spray.
  • Lay salmon on foil and season with salt and pepper. Arrange pineapple slices around edges of salmon. Fold edges of foil up around the salmon and pineapple.
  • In a small bowl, whisk together sweet chili sauce, rice vinegar, soy sauce, brown sugar and pineapple juice. Pour glaze over salmon.
  • Bake for 12-15 minutes. Switch oven to broil and cook for an additional 4-5 minutes, or until edges of salmon just begin to blacken.
  • Sprinkle with chopped fresh cilantro before serving, if desired.

1 cup uncooked instant brown rice
1 cup water
1 cup diced fresh pineapple
1/4 cup chopped red onion
2 tablespoons chopped fresh cilantro
2 medium limes, juiced (2 to 4 tablespoons)
1/2 cup canned low-sodium black beans, drained, rinsed
4 salmon fillets (4 oz each)
Chili powder

Steps:

  • Heat gas or charcoal grill for indirect cooking as directed by manufacturer.
  • In small bowl, place rice and water; let soak 10 minutes. Meanwhile, in second small bowl, stir together pineapple, onion, cilantro and lime juice.
  • After rice has soaked 10 minutes, drain off water. Stir in beans.
  • Cut 4 (24-inch-long) sheets of 18-inch-wide heavy-duty foil. Fold each in half crosswise to make 4 (18x12-inch) pieces of foil.
  • Spoon one-fourth of rice onto each piece of foil, mounding rice in center. Top each mound of rice with 1 salmon fillet. Sprinkle each with dash chili powder. Top each with pineapple salsa.
  • To make each packet, bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packets sealed-seam-side up on unheated side of grill. Cover grill; cook 8 minutes. Turn packets; cover grill and cook 8 minutes longer. Turn packets seam-side-up; remove packets from grill. Place packets on individual serving plates. Carefully open packets to allow steam to escape.

3 tablespoons original Mrs. Dash seasoning mix
1/2 cup diced green pepper
1/2 cup diced red pepper
1 cup canned crushed pineapple in juice, drained with juice reserved
1 teaspoon finely grated fresh ginger

Steps:

2 limes
3 tablespoons Thai sweet chili sauce
2 tablespoons reduced sodium soy sauce
1 tablespoon Dijon mustard
4 pieces skinless salmon fillets (6 ounces each)
1 ripe small pineapple (about 3 pounds)
9 ounces Baby Spinach (a 9-ounce prepackaged bag)

Steps:

  • Adjust oven rack so it is 6 inches from heat source. Preheat broiler.
  • From limes, grate 1/2 teaspoon peel and squeeze 3 tablespoons juice. In large bowl, stir lime peel and juice, chili sauce, soy sauce, and Dijon mustard until blended. Reserve 3 tablespoons of mixture to glaze salmon; set remainder aside.
  • Arrange salmon on foil-lined rack in broiling pan. Spray with Pam, if desired. Place pan in oven and broil 5 minutes. Brush salmon with reserved chili-sauce mixture and broil 4-5 minutes longer or until salmon is opaque throughout.
  • Meanwhile, peel and core pineapple, then cut into 1/2-inch chunks. (You should have about 3 cups.) Add the cut-up pineapple to bowl with the remaining chili-sauce mixture and toss to coat.

1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
1 small red bell pepper, chopped (1/2 cup)
2 medium green onions, sliced (2 tablespoons)
4 salmon fillets (6 oz each), skin removed
1 teaspoon salt
1/2 cup chutney
1 cup pineapple chunks

Steps:

  • Heat coals or gas grill for direct heat. Cut four 18x12-inch pieces of heavy-duty foil; spray each piece with cooking spray.
  • In large bowl, mix rice and broth; let stand about 7 minutes or until broth is almost absorbed. Stir in bell pepper and onions. Place 3/4 cup rice mixture on center of each sprayed foil piece. Top rice with salmon. Sprinkle each salmon fillet with 1/4 teaspoon salt; top with 2 tablespoons chutney and 1/4 cup pineapple chunks.
