These are delicious steaks my mom used to make when I was growing up. They are easy too! They go great with mashed potatoes or white rice and have a flavorful sauce left over, almost like a gravy.

1 pound ground beef
⅓ cup dry bread crumbs
1 egg
1 (1 ounce) package dry onion soup mix
1 tablespoon vegetable oil
1 (10.75 ounce) can condensed golden mushroom soup
1 (10.75 ounce) can water

Steps:

  • Mix ground beef, bread crumbs, egg, and onion soup mix together in a bowl; shape into 6 oblong patties.
  • Heat oil in a large skillet over medium-high heat. Cook patties until browned, about 5 minutes per side.
  • Stir golden mushroom soup and water together in a bowl; pour over the patties in the skillet. Turn patties to coat in the liquid. Bring liquid to a simmer, reduce heat to medium-low, place a cover on the skillet, and cook until steaks are very firm, hot, and grey in the center, 10 to 15 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

EVOO for liberal drizzling
2 tablespoons butter
2 large onions, sliced
Salt and coarse black pepper
Ground thyme
1 bay leaf
2 pieces stale white bread, crust trimmed
Milk or half-n-half
About 1 2/3 pounds ground sirloin
1 large egg, beaten
1/4 cup Worcestershire sauce
3 tablespoons grated onion
2 tablespoons flour
1/2 cup dry white wine
1 cup beef stock
Watercress, for garnish, optional

Steps:

  • Place a drizzle of EVOO in a skillet over medium heat and melt the butter into the oil. Add the onions, season with salt and pepper, a little ground thyme and add the bay. Caramelize the onions until very soft and sweet and light golden in color, 20 to 25 minutes.
  • Meanwhile, soak the bread in milk or half-n-half. Place the meat in a bowl and add the egg. Squeeze out the bread and crumble into crumbs as you add to the bowl. Add the Worcestershire and grated onion to the beef. Sprinkle with salt and pepper and combine. Form into 4 (1-inch thick) oval loaves. Heat a drizzle of EVOO in a large skillet over medium-high heat. Add the loaves and cook until cooked through, about 15 minutes, turning occasionally. Transfer the meat to a plate.
  • Sprinkle the flour over the caramelized onions, stir 1 minute. Deglaze the pan you cooked the meat in with the wine and pour into the onions. Add the beef stock and thicken a moment. Serve the gravy over the Salisbury steaks. Garnish with a little watercress, if desired.

1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 pound extra-lean ground turkey

SAUCE:
2 tablespoons olive oil
2 tablespoons all-purpose flour
1-1/2 cups reduced-sodium beef broth
1 tablespoon low-sodium Worcestershire sauce

1 can (4 ounces) sliced mushrooms, drained

Steps:

  • In a large bowl, combine 1/3 cup bread crumbs, onion, Worcestershire sauce, steak sauce, garlic and seasonings. Add turkey; mix lightly but thoroughly. Shape into four 1/2-in.-thick oval patties. Place remaining bread crumbs in a shallow bowl. Press patties into crumbs, patting to help coating adhere., In a large nonstick skillet, heat 1-1/2 teaspoons oil over medium heat. Add patties; cook 3-4 minutes on each side or until a thermometer reads 165°. Remove from pan., In same pan, heat 2 tablespoons oil over medium heat. 1 1/2 pounds ground chuck (80 percent meat, 20 percent fat)
1/2 cup Italian breadcrumbs
1/4 cup yellow mustard
1/4 cup ketchup
2 tablespoons red onion pulp (grate an onion on a rasp grater or the small side of a box grater)
1 1/2 teaspoons kosher salt
Freshly ground black pepper
2 strips bacon
2 cups beef stock
2 cups heavy cream
5 to 6 slices yellow American cheese (4 ounces)
One 12-ounce bag egg noodles
1/2 cup loosely packed fresh parsley, chopped

Steps:

  • For the Salisbury steaks: In a large bowl, add the chuck, breadcrumbs, mustard, ketchup, onion pulp, salt and a few hefty grinds of black pepper and gently mix to combine. Divide into fourths and make four 1/2- to 3/4-inch-thick oval burgers; set aside.
  • In a large pan with straight sides on medium heat, add the bacon and cook until crisp, 8 to 10 minutes. Remove to a paper towel-lined plate, leaving the bacon fat in the pan. Cool the bacon, then chop.
  • In the same pan, turn the heat to high and add the formed burgers. Sear on one side for a few minutes, then remove to a plate.
  • For the sauce: In the same pan, add the beef stock and scrape up any bits. Add the heavy cream and American cheese and stir. Bring to a boil. Stir in the noodles. Nestle the burgers into the noodles and sauce, cover, lower the heat to a simmer and cook until the burgers are done and the noodles are cooked, about 10 minutes. Stir in the parsley and bacon.
  • Serve family style or place a burger on a plate with noodles and serve topped with sauce.

1 lb ground beef
1/2 cup dry breadcrumbs
1/2 teaspoon salt
1/4 teaspoon pepper
1 egg
1 large onion, sliced
1 (10 1/2 ounce) can condensed beef broth
1 (4 ounce) can mushroom stems and pieces, drained. (I usually use fresh sliced mushrooms, about 8 ounces)
2 tablespoons cold water
2 teaspoons cornstarch

Steps:

  • Mix ground beef, bread crumbs, salt, pepper and egg; shape into 4 oval patties, each about 3/4-inch thick.
  • Cook patties in 10-inch skillet over medium heat, turning occasionally, until brown, about 10 minutes.
  • Drain.
  • Add onion, broth and mushrooms. Heat to boiling; reduce heat. Cover and simmer until beef is done, about 10 minutes. (I usually start boiling the water for homemade mashed potatoes at this time and the steaks will be ready by the time you get the mashed potatoes ready).
  • When patties are done, remove them from skillet. Keep warm.
  • Heat onion mixture to boiling. Mix water and cornstarch; stir into onion mixture. Boil and stir 1 minute.
  • Serve over patties and mashed potatoes.

This is great for a crowd, or to have planned-overs! We like it served with mashed potatoes, noodles, rice, or mac-n-cheese and an in-season vegetable. The kids like it with creamed style corn, or corn pudding.

2 can(s) condensed french onion soup
1 c oatmeal
3/4 c egg beaters
3 lb ground chuck
1/2 tsp sea salt
1 Tbsp mrs. dash garlic seasoning
1/2 tsp freshly ground black pepper
GRAVY
3 Tbsp all-purpose flour
remaining onion soup
1/2 c ketchup
3 Tbsp steak sauce (you can substitute worcestershire sauce)
1 tsp dry mustard
1/3 c dry red wine

Steps:

  • 1. Preheat oven to 350.
  • 2. In large bowl, combine the ground beef, oatmeal, egg substitute, salt, Mrs. Dash Garlic Seasoning, pepper and 2/3 Cup of the condensed onion soup.
  • 3. Shape into 10=12 oval patties. Spray non-stick pan with olive oil, or use just enough oil to cover bottom of pan. Brown on both sides over medium high heat. You do not want to crowd the pan when browning, so only do 3-4 steaks at a time, remove from and keep warm while you finish browning the rest. Keep warm while you make the gravy.
  • 4. In medium bowl blend flour and the remaining soup til smooth; add the ketchup, red wine, steak sauce and dry mustard.
  • 5. Place steaks in lightly greased 9X12 baking dish. Pour gravy over the steaks. Bake covered with foil for 25 minutes. Remove foil and bake an additional 10 minutes, or until steaks are done, and gravy has thickened.

1 tablespoon onion soup mix

Steps:

  • Combine the egg substitute and the oats in a medium mixing bowl. Let stand for 3 minutes to soften the oats. Add the onion soup mix, minced onion, garlic powder, pepper, and beef. Mix until well combined, and then shape into 4 oval patties about 1 inch thick, 3 inches wide, and 4 1/2 inches long.
  • Put 2 tablespoons of the flour in a medium shallow bowl. Dip the patties in the flour to coat them on all sides. Shake off any excess.
  • Put the remaining flour in a medium mixing bowl. Slowly whisk in enough broth to form a paste. Then slowly whisk in the remaining broth, then the ketchup and Worcestershire sauce until well combined. Set aside.
  • Preheat a large nonstick skillet to medium-high heat. When the skillet is hot, lightly mist it with spray. Put in the patties side by side. Brown on both sides, 1 to 2 minutes per side. Pour the broth mixture into the skillet. Add the onion rings to the skillet. Use a wooden spoon to stir them gently into the broth mixture, being careful not to break the patties. Bring the liquid to a boil. Cover the pan, reduce the heat to low, an simmer for 15 minutes, flipping the patties once, halfway through. Transfer the patties to a platter. Spoon the onions and gravy over the patties. Serve immediately.

3 tablespoons corn or canola oil
1 1/2 cups chopped onion
1 1/2 cups minced celery
2 apples, about 1 pound (Rome Beauties work well)
1 1/2 pounds ground beef
2 large eggs
1 teaspoon finely chopped garlic
1 teaspoon salt
1/2 teaspoon freshly ground pepper
2 to 3 slices firm, fresh bread, for making 1 1/2 cups fresh bread crumbs
2 medium-size carrots, peeled
1 medium to large onion, peeled
2 cups water
1 tablespoon dark soy sauce
1/4 teaspoon freshly ground black pepper
1 1/2 tablespoons tomato paste
1/4 teaspoon Tabasco sauce
1/2 teaspoon salt

Steps:

  • To make the meat mixture, heat the oil in a saucepan. When hot, add the onion and celery and cook for 4 to 5 minutes over medium heat, until they are softened slightly. Set aside.
  • Preheat oven to 400 degrees.
  • Core but do not peel the apples. Cut them into a 1/2-inch pieces. (You should have about 2 cups.) Add to the onion and celery mixture and set aside.
  • Place the meat in a large bowl. Add the onion-celery-apple mixture to it and mix in with the eggs, garlic, salt and pepper.
  • For the bread crumbs, tear the slices of bread into large pieces and place in the bowl of a food processor. Process until crumbed. You should have 1 1/2 cups. Add to the meat mixture and mix well to incorporate.
  • Dampen your hands with water and form the mixture into 6 large patties, each weighing approximately 1/2-pound. Arrange in a large roasting pan so there is a little space between the "steaks," and place in the oven for 20 minutes.
  • Meanwhile, make the sauce: Coarsely chop the peeled carrots and onion in a food processor or by hand (to yield a 2-cup mixture). Place in a saucepan with 2 cups of water, the soy sauce, pepper, tomato paste, Tabasco and salt. Bring to a boil, reduce the heat, and boil gently for 5 minutes.
  • When the steaks have cooked for 20 minutes, remove from the oven. They will probably stick to the bottom of the pan so you can incline the pan and pour out most of the accumulated fat around them. Spoon the sauce over and around the steaks and place them back in the oven for 10 minutes. Set aside until ready to serve.

1 pkg lipton's onion soup mix
1/2 c cracker crumbs, i used saltines, crushed
1 large egg
2 .75 oz packets of dry brown gravy mix
1 c sour cream, i used light
1 small can mushroom stems, drained
mashed potatoes

Steps:

  • 1. Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. Make patties using ground beef or ground turkey, cracker crumbs, egg and soup mix.
  • 2. Spray a lg skillet w/ cooking spray, place over medium heat. Fry patties until browned all both sides. In bowl, mix together dry gravy mix, water as instructed on gravy package and sour cream.

My version of Salisbury steak with a bit of heat. You can omit hot pepper sauce if you are not into heat or have children who do not like spicy food.

1 1/2 lbs ground beef
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/4-1/2 teaspoon thyme
4 green onions, finely chopped
1/2 green pepper, finely chopped
1 1/2 tablespoons parsley, finely chopped
1 tablespoon Worcestershire sauce
2/3 cup breadcrumbs
2 eggs
1 tablespoon oil
1/3 lb mushroom, sliced
1/4 cup butter
salt and pepper
1 tablespoon flour
3/4 cup beef stock
3/4 cup red wine, dry
1/3 cup tomato ketchup
1 teaspoon mustard
1 1/2 teaspoons Worcestershire sauce
1 1/2 teaspoons sugar
2 tablespoons sherry wine
1 -2 tablespoon hot pepper sauce
water

Steps:

  • For Patties: Combine all meat patty ingredients well until almost pasty except the oil and form into 6 oblong patties.
  • Cook patties in 1 T oil in the moderately heated skillet for 4 minutes each side.
  • Remove patties and set aside.
  • For Sauce: In the same skillet, saute mushrooms in butter, add salt and pepper then stir in flour.
  • Add beef stock, wine and stir until mixture comes to a boil.
  • Stir in remaining ingredients and simmer for a few minutes.
  • Add beef patties to the skillet containing mushroom sauce and continue to simmer for 15 to 20 minutes spooning sauce over meat patties occasionally.
  • Add some water if sauce seems too dry.

1/3 cup finely chopped onion
2 tablespoons uncooked instant rice
1/8 teaspoon salt
1/8 teaspoon pepper
1 egg white
1/2 pound lean ground beef (90% lean)
3 teaspoons olive oil, divided
3/4 cup sliced fresh mushrooms
1 cup beef broth
2 teaspoons Worcestershire sauce
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • In a small bowl, combine the onion, rice, salt, pepper and egg white. Crumble beef over mixture and mix gently. Shape into two 4-1/2-in. x 2-in. oval patties. , In a large skillet, brown patties in 1-1/2 teaspoons oil for 3-4 minutes on each side. Remove and set aside; drain drippings., In the same skillet, cook mushrooms in remaining oil until tender. Stir in broth and Worcestershire sauce. Return patties to the pan. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until rice is tender and meat is no longer pink., Remove patties; keep warm. Combine cornstarch and water until smooth; stir into pan juices. Cook and stir for 2 minutes or until thickened. Serve with patties.

People used to request these when I was catering!I once made 200 of them! They aren't your "Joe-average" salisbury steaks, and are definitely company-worthy! This makes a lot, but leftovers freeze well. My own concoction! :)

2 2/3 lbs ground beef
1 (10 3/4 ounce) can cream of mushroom soup, divided
1 (10 1/2 ounce) can French onion soup, divided
1/8 teaspoon garlic powder
1 cup seasoned bread crumbs
1 large egg, lightly beaten
salt
fresh coarse ground black pepper
2 tablespoons butter
1 teaspoon browning sauce
1/2 teaspoon Worcestershire sauce
8 ounces sliced fresh mushrooms
1/8 teaspoon salt (to taste)
1/8 teaspoon fresh coarse ground black pepper (to taste)
chopped fresh parsley, garnish (optional)

Steps:

  • In large mixing bowl, combine well with hands the hamburger, 1/3 cup cream of mushroom soup, 1/3 cup french onion soup, garlic powder, bread crumbs and egg.
  • Shape into six 6 1/2" x 4 1/2" oval patties, 1/2" thick.
  • Place on cookie sheet as you go.
  • Sprinkle tops with salt and pepper.
  • In 2 frying pans, place a little butter and melt.
  • Add 3 patties to each pan seasoned-side down.
  • Salt and pepper other sides while bottoms are frying.
  • Fry over medium-high heat for 3 minutes or till deep browned.
  • TURN CAREFULLY. You don't want to "flip" them or you'll break them. I just gently and carefully roll them over slowly with 2 spatulas.
  • Brown other sides for about 2 minutes.
  • While patties are cooking, mix sauce ingredients together:.
  • Rest of soups, browning sauce, Worcestershire, salt, pepper, and mushrooms.
  • When patties are done, carefully place onto clean cookie sheet(s).
  • Pour grease out of pans and wipe with paper towels.
  • Place a little bit of sauce into each pan, just a spoonful each and swirl around with back of spoon.
  • Place patties back into pans.
  • Pour/spoon rest of sauce evenly over each patty.
  • Bring to a simmer and simmer 3-5 minutes longer. Stir sauce occasionally.
  • Remove to warm platter, pour any sauce from pans over the tops.
  • Garnish with fresh chopped parsley if desired.
  • Great with mashed potatoes dotted with butter, green beans and crusty warm bread! :).
  • Serves 6 hungry guests! :).
  • *All 6 patties can be done in an electric skillet if you've got one handy. Just watch them so they don't burn if yours runs hot, too.
  • **This does not make a ton of gravy -- just enough to compliment the steaks, not drown them, LOL! If you prefer a lot more, double the sauce part.

1 lb lean ground sirloin
1 medium onion, diced
1 (14 ounce) can sliced mushrooms, drained and divided
2 tablespoons butter
1 egg, beaten
1/2 cup breadcrumbs
1 tablespoon Worcestershire sauce
1 tablespoon prepared horseradish
1 teaspoon kosher salt
1 teaspoon black pepper
11 1/2 ounces beef consomme (I use Campbells)
2 tablespoons cornstarch
3 tablespoons water

Steps:

  • Corse chop 1/2 of the drained can of mushrooms.
  • Saute onions and chopped mushrooms in butter over medium heat just until the onions are tender. Remove from heat and let cool.
  • In a large bowl, mix ground sirloin, bread crumbs, egg, worcestershire sauce, horseradish, spices and cooled onion/mushroom mixture together and make 4 oval patties.
  • Fry or broil the 4 patties to desired doneness ( I like medium well).
  • While the steaks are cooking, add the consomme' and remaining 1/2 can of mushrooms to a medium sauce pan and bring to a simmer.
  • Mix the cornstarch and water together and use to thicken the gravy mixture to the desired thickness just before serving.

Salisbury Steaks with Onion Gravy Recipe - (4.6/5) image

2 cube steaks
1 medium sized onion, peeled and sliced
2 Tbsp. all-purpose flour
1 tsp. Worcestershire sauce
salt & pepper
1 cup beef broth (or stock)

Steps:

  • Pat each steak dry, with a paper towel and season with coarse salt & pepper. Heat a skillet on medium-high with about 2 teaspoons of olive (or vegetable) oil, until shimmering and hot. Sear the steaks until golden brown-- about 2-3 minutes. Turn over and cook the same way. Remove from the skillet, onto a plate and cover with foil. I like to keep my steaks in a warm oven. There should be a lot of brown fond (crust) on the bottom of the pan; that's where all the flavor for the sauce comes from. Add a little more olive oil, then add the onion. Cook until soft and slightly golden-- 3-5 minutes. Add the flour, and stir to cook for about 2 minutes. Add the beef stock, stirring all the while, and then the Worcestershire sauce. Bring to a simmer until nicely thickened. If the sauce is too thick, add a dash more beef stock. Return the steaks, and their natural juices, to the pan and heat for about 1 more minutes. Serve over mashed potatoes (or rice or egg noodles).
