We're cooking up Salisbury Steak with Onions and Gravy. It's one of those traditional Southern comfort food items you'll find on the menu at Mom and Pop style restaurants and diners throughout the South. Fresh ground beef, caramelized onions and a rich brown gravy make this one more delicious item to serve to your family and friends.

I remember enjoying it often when I was growing up, but when I decided to add it to my recipe collection, I wasn't able to find it in my modern cookbooks. I came up with these ingredients on my own and experimented until it tasted like I remembered. -Faye Hintz, Springfield, Missouri

Salisbury Steak, my favorite image

I just ate my first Salisbury steak that I really liked. This recipe almost made me want to lick the plate. For the Heinz chili sauce, I used Andy's http://www.justapinch.com/recipes/sauce-spread/other-sauce-spread/homemade-chili-sauce.html I tweaked the original recipe, just a little for our taste, so you should read the...

PATTIES
(but you can make them anyway you like)
1 lb lean ground beef
1/4 medium of an onion, finely chopped
1/4 of a green pepper, finely chopped
2 tsp minced garlic
1/4 tsp dry mustard
1/4 tsp paprika, sweet mild
2 tsp emeril's essence creole seasoning - also referred to as bayou blast:
http://www.emerils.com/recipe/1806/
1/4 tsp salt and pepper, to taste
SAUCE
6 Tbsp butter
8 oz (about 2 cups) sliced fresh mushrooms
2 tsp flour
2/3 c heinz chili sauce ( i made andy's homemade chili sauce)
https://www.justapinch.com/recipes/sauce-spread/other-sauce-spread/homemade-chili-sauce.html
1/2 c beef broth ( i use beef bullion)
2 tsp lemon juice
2 tsp worcestershire sauce
1 dash(es) frank's hot sauce (two drops)

Steps:

  • 1. Make your beef patties however you like or you can use the one I posted. Mix your ground beef in a large bowl. Add onion, bell pepper, garlic, dry mustard, paprika, bayou blast and salt and pepper. Divide and shape your beef mixture into 4 patties and place in frying pan over med heat. Fry until done (approx 20 min). Or you can broil or barbecue your patties. I pan fried because it was snowing to hard.
  • 2. While the patties are cooking, make your sauce.
  • 3. In a large saucepan, melt the butter over med heat and add the sliced mushrooms. Cook for about 10 minutes until mushrooms are tender then sprinkle with flour and stir until mixed well with the butter. While mushrooms are cooking, add Andy's chili sauce, beef broth, lemon juice, Worcestershire sauce and hot sauce into a small bowl and mix. Add sauce mixture to mushroom/butter/flour in saucepan and bring to a boil. Turn down heat and simmer for about 1 or 2 minutes more.
  • 4. Spoon the sauce over the patties. Make Andy's sauce the day before or have it handy in the refrigerator..

MY FAVORITE SALISBURY STEAK

My Favorite Salisbury Steak image

This recipe is out of a recipe book given to me by my mother in law called "Bluebonnet Trail Cookbook". Not a big fan of salisbury steak, this is absolutely fabulous and flavorful when in the mood for a great comfort food meal. My whole family of 6 loves when this is served for dinner. I usually double the recipe but am posting the original.

SALISBURY STEAK

Salisbury Steak image

I got this from a old Mennonite Cookbook that was passed on to me by my late mother in law. I tweaked it just a bit to had more flavor. This is as close to a perfect salisbury steak as I have ever eaten. It has an onion flavor all through it with out having the texture of onions. My grandchildren just loved it.

This easy Salisbury steak recipe will become a regular in your meal rotation! It's delicious. The French onion soup adds a rich and robust flavor. This gravy has a different flavor than other Salisbury steak recipes since it's savory with a hint of sweetness.

SUPER SALISBURY STEAK

Super Salisbury Steak image

This is our family's favorite Salisbury Steak recipe - the only one I make! It's easy and delicious. We like this served with rice, noodles, mashed potatoes, baked potatoes - or best of all with home-made macaroni and cheese. Recipe can easily be halved, but I figure it takes very little extra effort to make a big batch, so I usually make this large recipe and freeze any extra individual servings. Makes for super easy on-the-fly meals. If you use wine, try not to use "cooking" wine - table wine is much better.

Time 45m

Yield 8 Steaks, 8 serving(s)

Number Of Ingredients 13

2 lbs lean ground beef
2 cups soft breadcrumbs (preferably from "rustic" type bread or home-made bread, white or wheat)
2 eggs
1 1/2 teaspoons kosher salt
onion powder, to taste
garlic powder, to taste
1 tablespoon vegetable oil
1/2 onion, sliced
8 ounces sliced mushrooms (optional)
1 cup red wine (optional)
32 ounces beef broth
1/3 cup cornstarch
1/2 cup cold water

Steps:

  • Mix together the meat, eggs, bread crumbs, salt, onion powder and garlic powder. (I use my hands.).
  • Form meat into 8 oblong patties.
  • Heat vegetable oil (medium high heat) in a large dutch-oven type pan.
  • Fry patties (in batches if necessary) about 4 minutes per side. You just want them to brown nicely - they won't be "done". Adjust heat if necessary to prevent over-browning.
  • Remove patties to a plate.
  • Pour off all but about 1 T of fat in the pan.
  • Add sliced onions and break them apart into rings. Also add mushrooms if using.
  • If pan gets too dry, add a small amount of the wine (if using) and/or the beef broth.
  • Stir with wooden spoon to get all those delicious browned bits off the bottom of the pan.
  • Cook, stirring frequently until the onion rings are limp and well browned.
  • Add the rest of the wine and boil for a few minutes to reduce the liquid.
  • Add the beef broth and bring to a boil.
  • In a small container with a tight fitting lid, add water to the cornstarch, attach lid and shake vigorously.
  • Slowly pour the cornstarch liquid into the boiling broth, while stirring.
  • When gravy has thickened, gently set the meat patties back into the pan and spoon gravy over the top of any patties needing it.
  • Lid the pot, reduce heat and simmer for 30 minutes.
