Slightly modified from Texas Tapestry cookbook. A nice "different" appetizer to add to your collection.

20 -25 slices genoa salami (very thin slices)
16 ounces cream cheese
1 clove garlic, minced
1 tablespoon onion, very finely minced
1 tablespoon finely chopped parsley
1 teaspoon lemon juice
1 pinch salt
1 pinch dry mustard
1 -2 dash Tabasco sauce

Steps:

  • Combine all ingredients except salami.
  • With one hand, fold a piece of salami into a cornucopia shape.
  • Pipe the cheese filling into the salami, using a star tube.
  • Lay the filled cornucopia seam side down on your serving tray.
  • Repeat process until you have used all ingredients.
  • Cover and chill (at least 30 minutes) until ready to serve.

Yummy appetizers. You can make up a tray with these, or use your imagination and use bologna or other meats. If I use bologna, I add a tablespoon of mustard to the cheese spread.

1 (8 ounce) package cream cheese
9 pieces salami, large thick sliced
12 olives
toothpick

Steps:

  • Soften the cream cheese and spread each slice of salami with the cream cheese.
  • Stack the slices on top of each other, ending with the top slice having no cheese on it.
  • Cover and refrigerate till cheese is set and meat is good and cold.
  • Cut into 12 wedges. Garnish with an olive on a toothpick and push into top of wedges.

  • In a small bowl, combine the cream cheese, salami and pickle relish., Spread over tortillas. Roll up tightly; wrap in plastic. Refrigerate for 15 minutes. Unwrap and cut each tortilla into 1-in. slices.

12 ounces salami, thinly sliced
3/4 teaspoon seasoning salt
1 teaspoon prepared horseradish

Steps:

  • Combine cream cheese, horseradish and seasoning salt. (Light or fat-free cream cheese also works well).
  • Spread 1 1/2 teaspoons of mixture on each salami slice.
  • Roll up and secure with toothpicks.
  • ANOTHER OPTION: Sometimes I mixed the cream cheese with 1 teaspoon of garlic, and 1/4 cup of shredded parmesan.
  • These are good with olives on the toothpicks.

A festive charcuterie board takes the guesswork out of pairing by letting everyone choose their own adventure--whether that's roasted sweet potato rounds topped with turkey and a dollop of cranberry for the perfect holiday bite, or a classic pairing of sharp Cheddar and fresh apple.

8 ounces garnet sweet potatoes, sliced into 1/4-inch-thick rounds
Olive oil, for drizzling
Kosher salt and freshly cracked black pepper
1/3 cup apricot jam
1 1/2 teaspoons Dijon mustard, plus more for serving
1 baguette, sliced
8 ounces aged Cheddar
8 ounces roasted turkey, thinly sliced
8 ounces Camembert
8 ounces salami, thinly sliced
8 ounces Asher blue cheese
5 ounces multi-seed crackers
1 Honeycrisp apple, thinly sliced
1/3 cup whole cranberry sauce
1/3 cup coarsely chopped walnuts

Steps:

  • For the roasted sweet potato rounds: Preheat the oven to 425 degrees F.
  • Put the sweet potato rounds on a baking sheet and generously drizzle with olive oil on both sides. Season with a generous pinch of salt and pepper. Roast, flipping halfway through, until tender and browned on both sides, 20 to 25 minutes. Place the sweet potatoes on a rack to cool.
  • For the friendsgiving board: In a small serving bowl, combine the apricot jam and Dijon mustard. Add some plain Dijon mustard to a second small bowl for serving.
  • Place a cornucopia basket on the corner of a large rectangular cutting board. Put the baguette slices, Cheddar, turkey, Camembert, salami, blue cheese and crackers in and around the cornucopia, allowing them to elegantly drape over the edge onto the board. On one corner of the board, lay the apple slices, sweet potato rounds and plain Dijon mustard with a spreading knife. On the opposite corner of the board, dollop the cranberry sauce. Arrange the walnuts next to the bowl of mustard-infused apricot jam, along with a knife for spreading. Place mini pumpkins and gourds in the empty spaces of the board to fill it with fun and festive flare.
