SALAMI TARTLET CANAPE BITES
Purchase salami slices that are medium-thick and around 2 1/2 inches in diameter as these will be a perfect fit for the muffin holes. Super easy to make and create an interesting alternative when providing nibbles for a party. They are also great with slice of tomato before you pour in the egg.

- Preheat oven to 400°F
- Line base and sides of two 12-hole, 1/3-cup capacity muffin pans with salami.
- Pour 1 tablespoon egg into each salami case. Sprinkle with cheese.
- Bake for 6 to 8 minutes or until egg is set and cheese has melted. Season with salt and pepper. Serve.

- In a small bowl, mix cream cheese and preserves. Fill a star-tipped pastry bag with cream cheese mixture set aside.In a double boiler, melt the cheese spread. Cheese will be a soft consistency and easily spreadable. Trim crust from bread spread each slice with 1 tablespoon spread. Cut in triangles.Cut the salami slices in half and roll each half into a cone. With a wooden pick, skewer on olive, then the salami cone. Fasten the salami cones to the bread triangles. Pipe cream cheese mixture into each cone. Cover and chill.
