A savory Brussels sprouts dish with a homey taste from bacon, a little sweetness from the pears, and some tang from the balsamic vinegar.

1 pound Brussels sprouts, cut in half
2 Anjou pears, cubed
3 tablespoons olive oil, divided
1 onion, diced
1 teaspoon garlic powder
salt to taste
1 slice bacon, cut into small pieces, or more to taste
¼ cup balsamic vinegar

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Lightly grease a baking pan.
  • Combine Brussels sprouts and pears in a bowl with 2 tablespoons olive oil, diced onion, garlic powder, and salt. Spread into the prepared pan.
  • Bake in the preheated oven until browned and tender, 25 to 30 minutes, tossing after 15 minutes to brown evenly.
  • While baking, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Drain bacon grease form the skillet and discard; add remaining olive oil and balsamic vinegar to the skillet. Cook over low heat, stirring constantly, until mixture reduces slightly, 3 to 4 minutes. Pour over roasted mixture and serve.

2 to 3 pounds Brussels sprouts, halved
2 teaspoons olive oil
Drizzle of balsamic vinegar
Kosher salt and freshly ground black pepper
8 ounces thick-cut pancetta, cubed
2 ounces goat cheese, crumbled

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the Brussels sprouts on a baking sheet, drizzle with the olive oil and balsamic vinegar, and sprinkle with salt and pepper. Roast until tender on the inside and golden on the outside, 15 minutes.
  • Add the pancetta to a saute pan over medium heat. Cook until crisp and golden, 6 to 7 minutes.
  • Transfer the roasted Brussels sprouts to a serving platter and garnish with fried pancetta and crumbled goat cheese.

2 pounds fresh Brussels sprouts, trimmed and halved
3 tablespoons olive oil, divided
1/2 teaspoon salt
1/4 teaspoon pepper
2 ounces sliced pancetta or bacon strips, chopped
2 garlic cloves, minced
1 tablespoon balsamic vinegar
1/3 cup dried cranberries
1/2 cup pine nuts, toasted

Steps:

  • Preheat oven to 400°. Place Brussels sprouts in a 15x10x1-in. baking pan; toss with 2 tablespoons oil, salt and pepper. Roast 30-35 minutes or until lightly charred and tender, stirring halfway., Meanwhile, in a large skillet, heat remaining oil over medium-high heat. Add pancetta; cook and stir 4-6 minutes or until crisp. Add garlic; cook 1 minute longer. Remove from heat; stir in vinegar., In a large bowl, combine Brussels sprouts, cranberries and pancetta mixture; toss to combine. Sprinkle with pine nuts.

Made this with Thanksgiving dinner and it was excellent!! I ended up quartering the brussels sprouts just because Ilike them with more bite than just the leaves. The pancetta is wonderful in this, adds great flavor.

6 ounces pancetta, cut into small dice (1 1/2 cups)
2 lbs baby Brussels sprouts, leaves separated
1/4 cup dried cranberries (Craisins recommended)
3 tablespoons shallots, finely chopped
1 garlic clove, minced
2 tablespoons balsamic vinegar
1/4 cup chicken stock
4 slices white bread, cut into cubes and made into croutons
kosher salt & freshly ground black pepper

Steps:

  • In a large saute pan over medium heat, add a 2 count of olive oil and add the pancetta. Cook until the fat renders, 2 to 3 minutes and the pancetta is nice and crispy.
  • Add the garlic, shallots, cranberries and separated brussel sprout leaves. Toss well to combine all the ingredients.
  • Add the balsamic and chicken stock and continue to cook until the brussel sprouts have just wilted, 3-4 minutes.
  • Season to taste with salt and freshly ground black pepper then serve.
