1 cup reduced-fat sour cream
1/2 cup fat-free mayonnaise
1/3 cup fat-free milk
2 teaspoons sugar
2 green onions, finely chopped
2 garlic cloves, minced
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small bowl, whisk the sour cream, mayonnaise, milk and sugar. Stir in the onions, garlic, salt and pepper. Cover and refrigerate for at least 1 hour before serving.

This must-try garlic salad dressing uses lemon juice to add a sparkle to your green leafy salads. Serve it with sliced carrots and cucumbers. Make extra for the busy weekdays.

1 Lemon (substitute with bottled lemon juice if you don't have fresh lemons)
2 cloves garlic (use 1 clove if you want a milder garlic flavor)
2 tablespoon Olive oil (you can experiment with different oils)
½ teaspoon Salt (to taste)
¼ teaspoon Pepper (freshly ground, to taste)

Steps:

  • Gather the ingredients.
  • Squeeze the lemon to extract the juice. Collect about 1 tablespoon of lemon juice. This gives you a 2:1 ratio of oil to acid. If you like your salad dressings more acidic, squeeze 2 tablespoons of lemon juice from the lemon for a 1:1 ratio of oil to acid. Add the lemon juice to your glass jar.
  • Peel your garlic cloves. Squeeze the cloves of garlic through the garlic press. Add the garlic pulp to the lemon juice.
  • Add salt and pepper to your lemon juice and garlic mixture. Add enough salt and pepper to taste. You can add more later if it's underseasoned.
  • Add the olive oil to your salad dressing.
  • Lock the glass container's lid in place. Shake the container to mix the salad dressing until the ingredients are evenly combined. The garlic salad dressing is ready to serve.

8 ounces bacon
3/4 cup olive oil
1/4 cup red wine vinegar
Pinch salt and pepper
Pinch salt and pepper
1 clove garlic, minced
1 pound leaf spinach, tough stems removed
8 ounces mushrooms, thinly sliced

Steps:

  • In a medium skillet, cook the bacon over medium-high heat until just crisp. Drain on paper towels and crumble when cool enough to handle. Set aside.
  • In a small bowl, whisk together the oil, vinegar, salt, pepper and garlic.
  • Wash the spinach leaves very well and spin dry. Tear the leaves into small pieces and place in a medium salad bowl. Add the mushrooms and bacon, and toss to combine. Pour 2/3 cup of the dressing over the salad (reserve the rest for another use) and toss again. Serve immediately.

1 head (about 1 pound) firm, white escarole (once cleaned, about 6 packed cups) or other salad greens
2 cloves garlic, peeled, crushed and finely chopped (about 1 1/2 teaspoons)
1 tablespoon hot Dijon-style mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon vinegar
4 tablespoons vegetable or olive oil or a mixture of both

Steps:

  • Wash the salad greens thoroughly in a sink filled with cold water. Lift the greens from the water and spin dry in a salad dryer.
  • For the dressing, stir together all the remaining ingredients in the bowl that you will use for serving the salad.
  • At serving time, add the greens to the bowl and toss thoroughly with the dressing. Serve immediately.

Our Test Kitchen came up with this full-flavored vinaigrette. Roasted garlic is blended with Italian seasoning, Dijon mustard, tarragon vinegar and lemon juice in the zesty dressing. Try it drizzled over crisp greens or cherry tomatoes.

3 whole garlic bulbs
1 teaspoon plus 2 tablespoons olive oil, divided
3 tablespoons tarragon vinegar
2 tablespoons water
1 tablespoon sugar
1 tablespoon lemon juice
1-1/2 teaspoons Italian seasoning
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off of garlic bulbs. Brush with 1 teaspoon oil. Wrap each bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes., Squeeze softened garlic into a blender. Add the vinegar, water, sugar, lemon juice, Italian seasoning, mustard, salt, pepper and remaining oil; cover and process until smooth. Store in the refrigerator.
