1/2 cup whole-berry cranberry sauce
2 tablespoons raspberry vinegar
2 tablespoons seedless raspberry jam
1/4 teaspoon salt
1/3 cup olive oil
SALAD:
8 cups fresh spinach, torn
3 medium kiwifruit, peeled and sliced, divided
1 cup fresh raspberries, divided
1/2 cup whole-berry cranberry sauce
2 cups diced cooked turkey breast
3/4 cup coarsely chopped macadamia nuts, toasted

Steps:

  • In a blender, combine the cranberry sauce, vinegar, jam and salt. Cover and process until smooth. While processing, gradually add oil in a steady stream. Refrigerate until chilled., To serve, combine the spinach, half of the kiwi, 1/2 cup raspberries and cranberry sauce in a large bowl. Add 1/2 cup dressing; toss to coat. Transfer to a serving platter. Arrange the turkey, macadamia nuts and remaining fruit over top; drizzle with remaining dressing. Serve immediately.

I was given this recipe at a bridal shower our rural farming community held for me. It's become my all-time favorite salad. The color and tang the berries add to the lovely mix make it perfect for company or just my husband and me.

1 package (10 ounces) frozen sweetened raspberries, thawed and drained
1/4 cup sugar
2 teaspoons cornstarch
1/4 teaspoon celery seed
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/2 cup cranberry juice
1/4 cup red wine vinegar
SALAD:
1 package (6 ounces) fresh baby spinach
1 can (11 ounces) mandarin oranges, drained
1/3 cup dried cranberries
3 green onions, sliced
1/4 cup sunflower kernels
1/4 cup chopped pecans
1/4 cup slivered almonds

Steps:

  • Place raspberries in a blender; cover and process until pureed. Strain and discard seeds; set puree aside. , In a large saucepan, combine the sugar, cornstarch, celery seed, cinnamon and cloves. Stir in the cranberry juice, vinegar and reserved raspberry puree. Bring to a boil over medium heat; cook and stir for 1 minute or until thickened. Remove from the heat; cool. Cover and refrigerate., In a large salad bowl, combine the spinach, oranges, cranberries, onions, sunflower kernels, pecans and almonds. Drizzle with dressing; gently toss to coat. Refrigerate any leftover dressing.

1 pound mixed field greens
1 cup dried cranberries
1 cup walnut pieces
One 22-ounce can mandarin oranges, drained and chilled
1 1/2 cups grape tomatoes, halved
1 1/2 cups crumbled feta cheese
1 cup fresh raspberries
1/2 cup apple cider vinegar
1/2 cup aged balsamic vinegar
2 teaspoons sugar
1 1/2 tablespoons Dijon mustard
1/2 cup extra-virgin olive oil

Steps:

  • For the salad: Place the salad greens in a large bowl. Mix in the cranberries, walnuts, mandarin oranges, grape tomatoes and feta.
  • For the vinaigrette: Combine the raspberries, vinegars, sugar and mustard in a blender until smooth. Slowly stream in the oil until combined.
  • Toss the salad with the vinaigrette before serving.

6 ounces salad greens (I like boston bibb and red leaf lettuce)
3 green onions, sliced
11 ounces mandarin oranges, drained
1/3 cup dried cranberries (craisins)
1/4 cup almonds, sliced
1/4 cup sunflower seeds
1/4 cup pecans, coarsely chopped
12 -16 ounces frozen unsweetened raspberries, thawed
1/4 cup sugar
1 teaspoon cornstarch
1/4 teaspoon celery seed
1/4 teaspoon cinnamon
1/2 cup cranberry juice
1/4 cup red wine vinegar

Steps:

  • To make dressing:.
  • Drain the raspberries (I reserve the juice for another use.) Blend and push through a sieve to strain seeds.
  • Combine raspberry pulp with remaining dressing ingredients in a medium saucepan.
  • Bring to a boil over medium heat. Cook and stir 1 minute until thickened. Cool. Cover and refrigerate until using.
  • To serve:.
  • Toss all salad ingredients in a salad bowl, or serve each ingredient in individual dishes for a "build your own salad". Serve with cooled dressing.
