3 lbs frozen peas, rinsed in hot water
2 cups sweet pickles, chips, chopped
1 cup diced red bell pepper
2 cups diced celery
12 hard-boiled eggs, sliced
1/2 cup finely chopped onion
1 cup cubed American cheese
4 cups mayonnaise
1/4 cup sugar
1/4 cup chopped sweet pickle, chips
1 tablespoon diced red bell pepper

Steps:

  • In a large bowl, combine salad ingredients.
  • In a separate bowl mix dressing ingredients.
  • Add to the dressing to the salad mixture and gently toss.

Years ago, the chef at Knott's Berry Farm in Buena Park, CA was so kind and shared his recipe with me. A very good friend also has a recipe for an Asian salad, but she says this one is better.

1 - head cabbage, shredded or medium chopped
1 - chicken breast , cooked, cut into small bite-sized pieces
4 - green onions, sliced
2 package(s) ramen noodles, broken (discard seasoning packet)
1/4 cup(s) toasted sesame seeds
2 tablespoon(s) slivered or sliced toasted almond to garnish
DRESSING:
1 cup(s) salad oil
4 tablespoon(s) sugar
1/3 cup(s) rice vinegar
1 teaspoon(s) pepper
1 teaspoon(s) salt
SERVES 8 - 10

Steps:

  • Toss ingredients except almonds.
  • Refrigerate 1 hour, or until noodles are semi-soft.
  • Garnish with almonds to serve.

This alone for me is a reason to stop by Knotts Berry Farm's Resturant and have their famous chicken dinner.I remember as a child, going there for special occasions. And I never miss a chance to stop by and eat there when we are near by. I love their Cherry Rhubarb Sauce that comes before the main meal. Try it, I know you will love it!

1 lb cherry rhubarb, chopped in one inch slices
1 1/2 cups sugar
2 1/4 cups water

Steps:

  • Place rhubarb into a saucepan, pour sugar over the rhubarb, and let stand for one hour.
  • Add water to mixture and bring to a boil slowly, uncovered.
  • Cook for 1 to 5 minutes, until your rhubard is soft.
  • Cool, cover and refrigerate for several hours before servings.
  • Can add a dash of whipping cream to the top if you like for that extra touch.
