CAESAR SALAD CAKE

3 tablespoons vodka
2 teaspoons confectioners' sugar
Green and yellow food coloring
3 sheets edible wafer paper
Cooking spray
1 15- to 16-ounce box yellow cake mix (plus required ingredients)
1 16-ounce tub white frosting
1 ounce white chocolate

Steps:

  • Make the lettuce: Mix the vodka and confectioners' sugar in a pie dish. Add a few drops each of green and yellow food coloring and mix gently with a pastry brush. Do not fully mix; you want to have a few shades of green in the dish.
  • Lay out the wafer paper on a piece of parchment lightly coated with cooking spray. Brush with the food coloring mixture to fully cover, painting darker shades of green in some spots. Let dry until crisp, at least 2 hours.
  • Coat a 1 1/2-quart ovenproof bowl and 3 muffin cups with cooking spray. Prepare the cake mix as directed; fill the muffin cups with batter, then pour the rest into the bowl. Bake at 325 degrees F, 15 minutes for the cupcakes and 45 to 50 minutes for the bowl cake. Let cool.
  • Make the croutons: Cut the cupcakes into 3/4-inch squares. Toast under the broiler until lightly browned; set aside.
  • Remove the bowl cake and cut in half horizontally with a long serrated knife. Spread frosting on the bottom half and cover with the top half.
  • Place the bowl cake in a salad bowl that's slightly larger than the cake. Frost the top of the cake. Reserve 1/2 cup frosting for the dressing.
  • Tear the green-tinted wafer paper into small pieces and arrange on top of the cake; reserve a few pieces for the dressing.
  • Shave the white chocolate into thin shards with a vegetable peeler. Sprinkle the white chocolate and cake croutons on top of the cake.
  • Melt the reserved frosting in the microwave until pourable. Crumble some reserved green wafer paper into the frosting to look like herbs; stir, then pour into a salad dressing bottle.

CAKE:
1 c miracle whip salad dressing not mayonnaise
1 c granulated sugar
1 tsp vanilla
2 1/4 c sifted cake flour
1/2 c baking cocoa
1 tsp baking soda
1 tsp baking powder
1 dash(es) salt
3/4 c cold water
FROSTING:
8 oz pkg. philadelphia brand cream cheese, softened
1 Tbsp milk
1 tsp vanilla
1 dash(es) salt
5 c powdered sugar, sifted
3 oz (1 oz. each) squares unsweetened chocolate, melted

Steps:

  • 1. Preheat oven to 350^. Grease and flour or spray two 8-inch layer pans.Set aside. Combine salad dressing and sugar. Blend in vanilla. Add sifted dry ingredients to salad dressing mixture alternately with water, mixing well after each addition. Pour into prepared pans and bake for 25-30 minutes. Cool 10 minutes; remove from pans. Frost with: --- Chocolate "Philly" Frosting: Combine cream cheese, milk, vanilla and salt. Mix until well blended. Gradually add the sifted powdered sugar. Stir in melted chocolate. Spread between and sides of cake ,frosting top last.

2 c flour
1 c sugar
1/2 c cocoa, unsweetened
1/4 tsp salt (don't heap this, use a scant 1/4 tsp.)
2 tsp baking soda
COMBINE THE ABOVE INGREDIENTS IN A SIFTER AND SIFT IT ALL AT ONCE INTO A MIXING BOWL
THEN ADD
1 c miracle whip
1 c cold water
1 tsp vanilla

Steps:

  • 1. When all the ingredients are mixed together, stir well. Do not over beat.
  • 2. Pour into a buttered and floured cake pan. You can use 2 small round pans or an 8 x 10. If you use a dark glass pan, watch the heat.
  • 3. Bake at 350 degrees for 30-40 minutes or until done. Don't be tempted to overcook this cake, and don't poke it unless you think it is about done or it will fall. Let cool completely before frosting. I put it in the freezer for several hours before frosting. If you use the fudge frosting, make sure the cake is back to about room temperature before you pour the frosting on.

1 cup Miracle Whip
1 cup warm water
2 teaspoons baking soda (level)
2 cups flour

1 cup milk
1 cup shortening
1 cup sugar
1 dash salt
vanilla

  • Stir sugar and cocoa together.
  • Add salad dressing and mix well.
  • Dissolve soda in warm water.

  • Heat oven to 350°F. Mix all ingredients together well. Pour into large baking pan. Bake 55 to 60 minutes. I like to frost this cake with the following homemade Peanut Butter Frosting: Cream ¼ cup butter or margarine together with ¼ cup peanut butter and 1 teaspoon vanilla. Add 2½ cups sifted confectioners' sugar, alternately with 3 tablespoons milk and beat until light, fluffy and spreadable.

  • Dissolve 2 level teaspoons Baking soda into 1 cup Salad Dressing. (mix well).
  • Cream in the following ingredients: 1 cup sugar, 4 tbs. Cocoa, ¼ teaspoons Salt, ½ teaspoons Vanilla.
  • Add 1 cup Water.
  • Add in 2 cups flour (not level). THIS BATTER WILL BE THIN.
  • Mix batter well and pour into a greased pan, bake at 350° for 30 to 35 minutes until done. Cake will be done when a toothpick inserted into the middle comes our clean.
  • Cool completely and frost!
