4 packages (2 ounces each) thinly sliced deli corned beef, finely chopped
1 package (8 ounces) cream cheese, cubed
1 can (8 ounces) sauerkraut, rinsed and drained
1 cup sour cream
1 cup shredded Swiss cheese
Rye bread or crackers

Steps:

  • In a 1-1/2-qt. slow cooker, combine the first 5 ingredients. Cover and cook on low for 2 hours or until cheese is melted; stir until blended. Serve warm with bread or crackers.

My mother gave me this recipe, and told me never to share it, but I think everyone should enjoy it. This dip is definitely better if you make it one day ahead. It can be easily halved, because it makes so much!

2 cups sour cream
1 tablespoon dried parsley
3 tablespoons grated onion

  • In a medium bowl combine the mayonnaise, sour cream, parsley, onion, dill weed, and salt. Mix all together, cover, and refrigerate overnight.

2 cucumbers (sliced) - optional
1 (10 ounce) package cherry tomatoes - optional

Steps:

  • Combine all ingredients together in a large bowl.
  • Cover and store in fridge for at least 30 minutes before serving (I like to make it the day before serving it so that the flavors can really meld together).
  • Serve with your favorite vegetables (carrots, broccoli, cauliflower, peppers, tomatoes, etc), crackers, or potato chips.
