PARMESAN SAGE RICE
I adapted this from several different recipes on this web site. It invariably gets rave reviews and is great as a side dish with chicken, salmon and other meats. Also goes great with salad with vinaigrette dressing. This is so easy to make and your friends will be very impressed (mine were)! This recipe will make enough for 2-3 people unless you're very light eaters. It doubles/triples/quadruples well. I recently prepared it for 10 friends and had to up the cups of water considerably but with rice it's not a big deal to just add more water and let it simmer for longer.

Steps:
- Add rice, oil, cayenne and garlic salt to a medium sauce pan. Put temperature on medium and saute, stirring constantly, until the rice is evenly covered with the oil. You want to saute it at least 5 minutes to make the rice have a crispier (but not crunchy) texture when it's all finished.
- Add the chicken broth. Bring to a boil, then cover, turn down to low and let simmer for 15 minutes.
- After 15 minutes check it to make sure it's not too crunchy. If it is, just add a little more water and let it simmer longer.
- Remove from heat.
- Add Parmesan, sage, parsley and pepper and mix it up until Parmesan "disappears" into the rice.
- Add more of whatever you like to taste. It should be salty enough with the garlic salt, chicken broth and Parmesan, so be careful about that.

- Bring rice and water to a boil in a 1 1/2- to 2-quart heavy saucepan. Cover pan and cook rice over low heat until tender and most of water is evaporated, about 30 minutes.
- Let rice stand, covered, off heat 10 minutes. Fluff with a fork, then stir in sesame oil and salt and pepper to taste.
SAGE AND PARMESAN RICE
A nice side dish for poultry. I made a change in the rice/broth ratio, and cooking method on recommendation of some of the reviewers, and after trying it myself again. This changed the servings to 4 instead of 2. Thanks to all reviewers for your input!

- Melt butter in saucepan and stir in the sage. Turn off heat and let sit.
- In another sauce pan heat broth to boiling; add rice and lower heat.
- Simmer, covered until rice is tender, 15 to 20 minutes.
- Put rice into serving dish and toss with sage butter and Parmesan.

- Melt the 4 tablespoons butter in a 3- to4-quart heavy saucepan over medium heat.
- When the butter is foaming, scatter the sage leaves in the pan and heat for a minute or so, just until they are sizzling.
- Pour in 5 cups of hot water or stock, and stir in the salt.
- Increase the heat, and bring the liquid to a boil, then stir in the rice and bring back to a boil.
- Cover the pan, and lower the heat so the water is bubbling gently.
- Cook for 13 to 14 minutes, then check the rice for doneness; at this point, stir in the scallions, to cook for the last minute or two, until the rice is creamy and al dente.
- When the rice is fully cooked, turn off the heat, drop in the butter pieces, and stir vigorously until thoroughly incorporated.
- Stir in the 1/2 cup of grated cheese, spoon the riso into warm pasta bowls, and serve immediately, passing additional grated cheese at the table.

SESAME RICE WITH SCALLIONS
Steps:
- Cook 1 1/2 cups sushi rice as the label directs. Meanwhile, cook 1/4 cup sesame seeds in 1 tablespoon peanut oil in a small skillet over medium heat, stirring, until toasted, 4 to 5 minutes. Stir in 4 finely chopped scallions, 1 teaspoon sugar and 1/2 teaspoon salt. Toss with the rice.

SESAME RICE
This is how I love my brown rice. I always use short grain rice, adding about 1/2 cup more water than called for. With a splash of soy sauce, I'm in heaven!

- In a saucepan with a tight-fitting lid, toss the rice with 1/2 teaspoons of the sesame oil to coat the grains.
- Add the water, cover, and bring to a boil, then reduce the heat and simmer until the rice is tender, about 40 to 45 minutes.
- Stir in the scallions, sesame seeds, the remaining sesame oil, and soy sauce to taste.
- Enjoy!
- Note:.
- Toast sesame seeds in a single layer on an unoiled baking tray at 350*F for 2 to 3 minutes, until fragrant and golden.
- Watch carefully, so as not to burn!

i needed a rice recipe to go with some kabobs that i was making and i decided to alter my spanish rice recipe to have a more asian feel....this is what i threw together & i have to say, it came out really good!!

Steps:
- add water, all of the seasonings except the butter & half of the seasame seeds to a microwave safe measuring cup & heat in the microwave for 2 minutes to dissolve the bullion, set aside.
- brown rice in hot oil in a large skillet for approximately 5 minutes.
- add chopped onion, minced garlic & saute til onions are soft.
- add seasoned water to the browned rice, reduce heat to low, cover and simmer for 15 minutes.
- do not check on the rice before the 15 minutes is up, this will allow steam to escape and may make your rice turn out undercooked.
- after 15 minutes uncover, turn rice over, place butter pats on top recover & let steam for 3-5 more minutes.
- fluff with a fork to distribute the butter, sprinkle with remaining sesame seeds & serve.
