This is a tasty baked cheddar spread!! This recipe was given to me by my cousin Teri who makes this at every family gathering!!

Number Of Ingredients 6

1 (8 ounce) package cream cheese, softened
1/2 cup Miracle Whip
1 cup cheddar cheese, shredded
1 bunch scallion, diced
1 (12 ounce) package bacon, cooked crispy
1 (1 lb) box Ritz cracker (4 sleeves of crackers)

Steps:

  • Combine cream cheese, miracle whip, shredded cheese and scallion.
  • Add half the amount of bacon (crumbled).
  • Spoon into a glass pie dish.
  • Crumble the remaining bacon and one sleeve of ritz crackers.
  • Sprinkle on top of cheese mixture.
  • Bake at 400F for 20 minutes.
  • Serve warm with the remaining ritz crackers.

2 c old cheddar cheese, grated
8 oz cream cheese, room temperature
4 oz butter, room temperature
1/4 c beer, non-alcohol beer, white wine or buttermilk
1 pinch black pepper
1 small onion, minced finely
sprig parsley or sprinkle paprika to decorate

Steps:

  • 1. In a large bowl or in food processor, combine softened cream cheese and butter until thoroughly blended.
  • 2. Add pinch pepper and just enough liquid (beer, non-alcohol beer or white wine) to make the cream cheese mixture fluffy.
  • 3. Add grated old Cheddar cheese and combine thoroughly. You may need to add just a bit more liquid so that it retains nice texture, but not to worry if it's a bit thick and heavy. It still tastes great!
  • 4. Add onion, but combine only until blended in. If using food processor, pulse on/off a couple of times, but do not overwork or onion taste can become overwhelming.
  • 5. Spoon into a bowl and sprinkle with a parsley sprig or some paprika so that it looks pretty. Remove from fridge about 20 minutes before serving. Serve with crackers.

Tastes just like the expensive Boursin® cheese spread you buy at the store. Reduced-fat cream cheese works well in this recipe. Delicious spread on crackers or as a fill on celery sticks. Good shelf life in the refrigerator. This can be eaten right way, but it's best if refrigerated for at least one day before serving.

I always make it around the holidays, or for football and hockey game nights. Everyone begs for this recipe. Turn this into a pub spread by adding a half cup of your favorite dark ale. Use brick cream cheese for a spread, or spreadable cream cheese for a dip. Serve with crispy crackers, toast, or bagels.

1 (8 ounce) package cream cheese
1 (8 ounce) container cold pack aged sharp Cheddar cheese (such as MacLaren's Imperial Sharp Cold Pack Cheddar Cheese product)
¼ cup finely chopped red onion
1 tablespoon Worcestershire sauce
2 teaspoons freshly ground black pepper
1 teaspoon paprika
1 dash hot sauce, or to taste

Steps:

  • Place cream cheese and cold pack Cheddar cheese in a microwave-safe bowl; slice cheese into chunks with a knife. Microwave cheese in 30-second intervals on high just until softened, stirring between intervals.
  • Stir red onion, Worcestershire sauce, black pepper, paprika, and hot sauce into cheese mixture with a fork until evenly combined; spoon into an airtight container and refrigerate, 8 hours to overnight.
  • Remove cheese spread from refrigerator about 30 minutes before serving.
