GRILLED SAFARI STEAK WITH MANGO CHUTNEY AND MUSHROOMS
Thanks to Peacefulnightdove for renaming this recipe. The real name Monkey Gland Steak - a Sweet Marinade Sauce But trust me No monkey here! African recipe posted for tour 2005. I used a mango chutney with Raisins and Red Chilies. Bought a rump roast that I sliced across the grain into steaks.

Steps:
- Cut and season the steaks.
- Mix the remainder of the ingredients together and place the steak in the marinade.
- Marinate for at least 1 hour.
- Grill the steak on the BBQ until desired doneness.
- At the same time, simmer the marinade in a saucepan to be poured over the steak when served.

Steps:
- Trim fat from beef. Cut beef into 6 serving size pieces.
- Combine undrained tomatoes, mushrooms, celery, and carrots in 5-6 quart slow cooker.
- Place beef on vegetables.
- Stir together broth, soup, and seasoning mix; pour over beef.
- Cover; cook on low-heat setting for 8-10 hours, or on high-heat setting for 4-5 hours.
- Serve with cooked noodles.

Steps:
- Combine beer, 1/2 cup oil, soy sauce, ginger, peppers, paprika, black pepper, coriander and garlic; mix well; marinate steaks in this for at least 6 hours.
- Drain steaks and pat dry. Bring to room temperature before cooking. Season to taste with salt and pepper.
- Heat oil in a large skillet until very hot (it may smoke so you may want to have ventilation). Add the steaks and cook until desired doneness, 3-5 minutes per side for medium rare (depending on thickness). You could opt to sear them and finish in the oven, but obviously, ovens are hard to find out in the bush.

SAFARI STEAK FOR THE HUNTER
This recipe is from Kenya. It is used by hunters on safari in preparing zebra, eland, antelope, or other game. The technique is good and can be used on our favorite food-beef steak.

Steps:
- Heat oil and butter in a 10 to 12 inch skillet until almost smoking.
- Fry steaks in pan, a few at a time, for about 3 minutes on each side, adding more oil and butter as needed.
- Season each steak with salt and pepper and set aside, keeping warm.
- Lower heat and add red wine and dessert wine.
- Stir with residue left in pan.
- Add garlic and cook for 2 minutes.
- Add tomato paste and water.
- Cook until sauce is quite thick.
- Combine mashed potatoes and yams(or sweet potatoes) ina 2 qt saucepan and beat thoroughly.
- Season the potato mixture to taste.
- Spread the potato mixture on a large platter.
- Arrange the steaks on the potatoes.
- Pour the sauce over the steaks.
- Sprinkle with chopped parsley.
