Cornmeal
2 to 2-3/4 cups all-purpose flour
1-1/2 cups rye flour
1/2 cup finely chopped onion
3 tablespoons sugar
2 tablespoons caraway seeds
1 teaspoon salt
1 package (1/4 ounce) active dry yeast
1-1/2 cups 2% milk
3 tablespoons butter
1 large egg white
1-1/2 teaspoons water

Steps:

  • Grease a 9x5-in. loaf pan and sprinkle lightly with cornmeal; set aside., In a large bowl, combine 1 cup all-purpose flour, rye flour, onion, sugar, caraway, salt and yeast. In a small saucepan, heat the milk and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Stir in enough remaining all-purpose flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Shape into a loaf. Place in prepared pan. Cover and let rise until doubled, about 30 minutes. Combine egg white and water; brush over loaf. Bake at 350° for 40-45 minutes or until golden brown. Remove from pan to a wire rack to cool completely.

2 cups proofed sourdough starter
1/2 cup chopped onion
1 tablespoon olive oil
2 tablespoons butter
1/4 cup water
1 teaspoon salt
2 cups rye flour
1 cup white bread flour

Steps:

  • To proof your starter, feed it with equal parts of flour and water, cover loosely and let it sit overnight or up to 12 hours (longer proof=sourer flavor).
  • At this point, measure out your 2 cups of starter into mixing bowl and proceed with recipe.
  • Saute onions in olive oil until they become translucent.
  • Remove from heat and add butter, water and salt.
  • Cool to lukewarm (85 degrees F) and stir into starter.
  • Add the rye flour and mix well.
  • Add the white flour gradually, until it is too stiff to mix by hand.
  • Turn onto a floured surface and knead in enough remaining flour until dough is satiny.
  • Shape into an elongate loaf.
  • Place on baking sheet and let rise, covered, in a warm place for 1 to 2 hours, or until about doubled in bulk (rising time will vary according to your starter, but it takes longer than breads made with commercial yeast).
  • Preheat oven to 375 degrees F.
  • Make diagonal slashes in top of loaf with a razor blade or very sharp knife.
  • Bake for 40 to 50 minutes.
  • Remove from baking sheet and cool on wire rack.
  • This bread could also be made using the dough cycle of your bread machine.

TRADITIONAL FRENCH PISTOLETS - LITTLE ONION AND RYE BREAD ROLLS



Traditional French Pistolets - Little Onion and Rye Bread Rolls image

These lovely little dinner or breakfast rolls are found everywhere in Belgium, and in most parts of France too. The last time I had them was a cosy Bed and Breakfast in Bruges, where they were served warm with fresh butter and boiled eggs for breakfast. They can vary in what type of flour is used, but they must always have the distinctive split, due to them being cut with the handle of a wooden spoon before baking. They are crusty and yet light inside, and make great sandwiches for picnics or a light lunch. This recipe is the result of numerous trial and error baking sessions, and the pistolets bread rolls are nutty and full of onion flavour. I start these off in the bread machine for ease when I am pushed for time, but they are just as easily made the more traditional way, mixing and proving by hand. NB: As one reviewer found out, baking can be a challenge, and in most cases an exact science. Do try to stick to the recipe as written - you won't be disappointed! Thanks!

310 ml tepid water
20 g fresh yeast, crumbled
2 tablespoons olive oil or 2 tablespoons melted butter
1 teaspoon salt
1 teaspoon sugar
400 g strong white bread flour (high gluten)
100 g rye flour
2 -3 tablespoons dried onion
water, and onion salt or onion powder, for finish
flour, for dusting

Steps:

  • To start the dough in the bread machine, add the ingredients in the order posted - except the topping and extra flour for dusting. Put on "dough" setting to mix, prove and rise.
  • Pre-heat the oven to 220C/425F/Gas mark 7.
  • Once the dough has risen, turn out of the tin on to a floured board and knock back, then knead for a minute or two. Cut into 12 pieces and shape into ovals. Place on well greased and floured baking sheets and cover with oiled cling-film; leave them in a warm place to rise for 30 minutes, or until almost doubled in size.
  • Brush the rolls with water and then sprinkle with onion salt or normal salt, before dusting with flour. Using an oiled handle of a wooden spoon, split each roll almost in half lengthways, see photo. Allow to rest for 3 to 5 minutes before baking in pre-heated oven for 15 to 20 minutes. The pistolets should sound hollow when tapped and have a crusty finish. Allow them to cool slightly on a wire rack then serve warm with butter and fillings to taste. These freeze very well.

Steps:

  • 1.Preheat the oven to 375°. Lightly butter a 9-by-13-inch baking dish. On a large rimmed baking sheet, toast the rye bread cubes for about 15 minutes, tossing once halfway through, until lightly golden and dry. Transfer the bread to a large bowl. 2.In a skillet, melt the butter. Add the onion and celery; cook over moderate heat until tender, about 10 minutes. 1 cup rye flour
3 cups bread flour

1 teaspoon fast rising yeast (Bread machine yeast)
2 tablespoons dried onion flakes
1 teaspoon caraway seed
1 teaspoon black caraway seed

Steps:

  • Place ingredients except seeds and onion flakes in bread machine according to the instructions of your machine. Mine calls for wet ingredients first so I listed them in order to be placed into the machine. Be sure to place the salt and yeast in separate corners.
  • Set machine on the dough cycle. Place seeds and onion flakes in when machine beeps during the end of kneading.
  • Lightly oil large baking pan.
  • When dough cycle is finished remove dough to a floured work surface. Divide into two. Roll out into a 1 inch disk. Fold one side in to center pressing with rolling pin, then the other half fold to center pressing inches Then fold at center line pressing seams to seal. Roll the loaf forward and back to form a 12 inch loaf. Repeat with the other 1/2 of the dough.
  • Place both on the pan leaving room for them to raise. Cover with oiled plastic wrap. Place in a warm draft free place for 45 minutes.
  • Remove wrap dust with flour and score the loafs Leave to stand for ten minutes while you preheat oven to 425 degrees.
  • Bake for 20 minutes.
  • It will sound hallow when you tap on the bottom which will be dark.
  • Cool on wire rack.

1 pound lean ground beef
2 large eggs
2 tablespoons Worcestershire sauce
4 cloves garlic, minced, divided

1 (8 ounce) package baby bella mushrooms, chopped

Steps:

  • Place 1/2 cup bread crumbs on a plate. Combine remaining bread crumbs with ground beef, eggs, Worcestershire sauce, and 1/2 of the garlic in a large bowl. Mix well and form into 4 large balls. Place each ball in the bread crumbs and press to flatten and coat burgers on each side.
  • Heat 1 tablespoon oil in a skillet over medium heat. Add onions and remaining garlic and cook until browned, 5 to 7 minutes. Reduce heat to low, add butter and mushrooms, and season with salt and pepper. Add red wine and cook for 5 minutes more.
  • Meanwhile, heat remaining oil in another skillet over medium-low heat. Add burgers, cover, and cook until bread crumbs on the bottom have turned a nice brown color, 5 to 7 minutes. water (add enough water to tomato sauce already listed to make 1-2/3 cups tomato and water mixed together)
1 tablespoon water (additional)
2 tablespoons molasses
2 tablespoons olive oil

1 cup rye flour
1 cup whole wheat flour
2 cups bread flour
2 tablespoons vital wheat gluten
3 tablespoons caraway seeds

Steps:

  • Measure wet ingredients (water and tomato sauce to equal 1-2/3 cups, PLUS 1 tablespoon MORE water, molasses, olive oil, and lemon juice) into ABM pan.
  • Measure rye, whole wheat, and bread flours, vital wheat gluten, caraway seeds, and dried onions into large mixing bowl.
  • Spoon dry ingredient mixture into ABM pan.
  • Measure bread machine yeast ~ add it to one corner of the ABM pan.
  • Measure salt ~ add it to opposite corner (from the yeast) of the ABM pan.
  • Select DOUGH cycle (or whole wheat cycle, 2-lb loaf, and light crust, if baking in the ABM).
  • Check dough after machine has mixed for about 5-8 minutes ~ push any visible flour from corners of pan into dough with a spatula ~ check dough for a nice smooth consistency; if dough appears too dry or shaggy, then add 1 teaspoon water ~ if dough appears too wet, add 1 teaspoon flour.
  • Caution: Rye flour dough mixture should appear to be stickier/more wet than doughs made without rye flour!
  • For baking in the oven after using the DOUGH cycle, pour dough out onto a plastic mat (or onto table or counter top) sprayed with cooking spray.
  • Punch down the dough and shape into a loaf; place dough into a 10-5/8 x 5-1/2 x 2-3/4 loaf pan sprayed with cooking spray; slash dough diagonally three times; let dough rise again for approximately 40 minutes, or until dough is 1 1/2 inches above baking pan.
  • Preheat oven to 350°F (glass) ~ or preheat oven to 375F (metal pans).
  • Bake in a 10-5/8 x 5-1/2 x 2-3/4 Pyrex loaf pan at 350F for 20 minutes ~ check loaf and tent with foil if bread is browning too fast ~ bake another 10 minutes for a total bake time of 30 minutes.
  • Cool in pan 5 minutes, then turn onto a wire rack ~ cool 20 minutes.
  • For a soft buttery crust, brush about 2 tablespoons melted butter over entire outside surface of bread (top, bottom, and sides). Cool completely, then place bread into a plastic bread bag for storage at room temperature.
  • Note: Dough can be divided into two 1-lb loaves; and baked in 8x4 metal pans at 375F for 20-25 minutes.

How to make Jewish Onion Rye Bread

Number Of Ingredients 10

2 cups milk
1/4 cup sugar
4 teaspoons salt
1/4 cup oil
1 package yeast
1 cup lukewarm water
6 cups white flour
2 1/2 cups rye flour (use more rye and less white for a darker rye)
3 tablespoons caraway seeds
1 cup chopped onion

Steps:

  • Scald milk, add the sugar, salt and oil. Stir until sugar dissolves, then let cool to lukewarm. Dissolve the yeast in the lukewarm water. Stir in the cooled milk mixture. Add white flour and mix well. Stir in caraway, onion and 2 cups of rye flour. Turn out onto rye floured board and knead until smooth, adding additional rye flour until dough is stiff. Grease a steep sided bowl. Shape dough into ball, and place in bowl, then turn upside down so that oiled, smooth side is on top. Cover with a towel and allow to double for 1 to 2 hours. Punch down dough, cover it and allow it to double again. Grease 3 loaf pans and sprinkle with cornmeal. Punch down dough again, then divide it into three. Let dough rest 10-15 minutes Shape into three loaves, place in pans, and sprinkle with kosher salt. Cover and allow to double again, about 1 hour Preheat oven to 500 degrees F for 1 hour. Throw 1/3 cup of water onto walls of oven before putting loaf in. (Omit for a less crusty bread). Bake 45 minutes at 450 degrees F, throwing water on the oven walls three times more in the first five minutes, or, alternatively, bake one hour at 350 degrees F, until it sounds hollow when tapped. Remove and allow to cool on rack.

HEARTY ONION RYE BREAD (BREAD MACHINE)

This recipe is based on one from Cooking Light. The original recipe is a sourdough Mennonite recipe, apparently from the Volga German community. Cooking Light simplified it by using yogurt instead of sourdough starter. I've reworked it for the bread machine. It made a big, beautiful and fragrant loaf.

3/4 teaspoon white pepper
1 tablespoon water
1 egg yolk
1 1/2 teaspoons kosher salt

Steps:

  • In a large skillet, heat the oil and saute the onions over medium low heat, stirring frequently, until they are golden brown, about 10 minutes. Remove from heat and cool completely.
  • Place the yogurt, egg, rye flour, 2 cups bread flour, yeast, caraway, salt and pepper in the bread pan in the order recommended by the manufacturer. Set and run on the dough cycle. Check about 10 minutes into the cycle and add as much of the remaining bread flour as needed to form a ball.
  • About five minutes before the end of the cycle (or when your machine signals), add the onions.
  • After the dough has risen, remove from the bread pan. Shape into a 7 inch round (or your preferred shape, and let rise.
  • Preheat oven to 350 deg.
  • Beat together the water and egg yolk and brush on the loaf. Sprinkle with the kosher salt, if desired. Make three parallel slashes across the top of the loaf, and place in oven.
  • Bake approximately 35 minutes or until loaf tests as done. Let cool completely before slicing.
  • Note: I used full-fat yogurt, as the Greek or Arabic yogurt I buy is full-fat. I also needed to add about 1/2 cup flour - this is always a judgment call, so be guided.
