Heard this recipe on NPR and was pleasantly surprised that the strange ingredients garnered such a great cranberry dish. All credit must go to NPR's Susan Stamberg who shares this recipe on air every year at Thanksgiving time.

2 cups cranberries, whole, raw, washed
1 small onion, small means should be able to cup hand around onion
3/4 cup sour cream
1/2 cup sugar
2 tablespoons prepared horseradish, red is a bit milder than white

Steps:

  • Grind the raw berries and onion together. (use an old-fashioned meat grinder or a food processor) - it should be chunky not a puree.
  • Add everything else and mix.
  • Put in a plastic container and freeze.
  • Early Thanksgiving morning, move it from freezer to refrigerator compartment to thaw. ("It should still have some little icy slivers left.").
  • The relish will be thick, creamy and shocking pink.

12 ounces fresh cranberries
1 orange (, with the peel ON)
1 cup granulated sugar

Steps:

  • Slice the very edge root ends off of the orange, just until you see the flesh. Leave the rest of the skin ON the orange and slice it into 8 pieces.
  • Place the fresh cranberries, orange slices and sugar in your food processor and process until smooth (or until no large chunks remain).
  • Refrigerate until ready to serve (it tastes best after being in the fridge for at least on hour) or for up to 1 week. Serve over turkey, chicken, pork loin etc.

2 medium navel oranges
2 bags (12 ounces each) fresh or frozen cranberries
2 medium apples, peeled and cut into chunks
2 celery ribs, cut into chunks
3 cups sugar

Steps:

  • Grate peel of oranges and set aside. Peel and discard white membrane. Separate orange into sections and place half in a food processor or blender. Add half of the cranberries, apples and celery. Process until coarsely chopped. , Transfer to a bowl; repeat with remaining oranges, cranberries, apples and celery. Stir in sugar and reserved orange peel. Cover and refrigerate overnight.

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries.
