Toffee Snowballs (Russian Teacakes or Mexican Wedding Cookies) image

A tasty twist on a traditional treat. A friend passed on the recipe she had found online. I tweaked it to fit what I had in the pantry. The original recipe called for chopped Heath bars instead of the toffee bits and mini chocolate chips.

1 cup real butter, at room temperature
5 tablespoons sugar
2 teaspoons vanilla
1 tablespoon water
1/4 teaspoon salt
2 cups flour
2 cups finely chopped pecans
3 ounces toffee pieces
3 ounces mini chocolate chips
powdered sugar, for rolling cookies

Steps:

  • Line cookie sheets with parchment paper and set aside. Preheat oven to 325ºF.
  • Cream butter until light & fluffy. Add sugar, vanilla and water. Mix well. Stir flour and salt into mixture. Add pecans, toffee bits and mini chocolate chips and mix thoroughly.
  • Roll into tablespoon-sized balls. Bake for 18-20 minutes or until lightly browned.
  • Roll in powdered sugar while warm. Once cooled, roll in powdered sugar again.

1 c butter, softened
1/2 c powdered sugar
1/2 tsp vanilla extract
1/2 tsp almond extract / powder is ok
2 1/4 c all purpose flour
1/4 tsp salt
3/4 c pecans, finely chopped
powdered sugar

Steps:

  • 1. Heat oven to 400 F In a large mixing bowl, combine softened butter (2 sticks= 1 cup) powdered sugar 1/2 cup vanilla and almond extract 1/2tsp each *I like to cut my butter up even if it is soft, just makes the process easier. Beat with mixer at medium speed until light and fluffy.
  • 2. In a bowl to the side ready to go... flour and salt, mix this up a bit with a fork or wisk.
  • 3. Combine flour and butter mixture still using the mixer, and add pecans until blended. I have stopped short a few times and I liked it equally as well.
  • 4. *Once combined, the mixture should be able to be made into walnut sized balls, any bigger or smaller you should adjust baking time. This is not a perfect science so don't worry over it.
  • 5. Place the balls on a ungreased cookie sheet two inches apart. Bake for 10-12 minutes *Immediately roll cookies in powdered sugar. *Cool completely and REROLL cookies again in powdered sugar before storing.

1 cup unsalted butter
1/2 cup confectioners' sugar, plus more for rolling
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup finely chopped pecans
1/2 cup candied glace cherries, chopped

Steps:

  • Cream the butter, sugar, and vanilla thoroughly. Sift together the flour and salt, add to the butter, and mix. Fold in the nuts and cherries and chill the dough for 1 hour.
  • Preheat the oven to 400 degrees F.
  • Roll the dough into 1-inch balls and place on an ungreased cookie sheet (they do not spread as they bake). Bake until set but do not brown, about 10 minutes.
  • While still warm but set, roll the cookies in confectioners' sugar and cool. Roll in confectioners' sugar again and bake again for 10 to 12 minutes.

(1 1/2) 3/4 cup finely chopped nuts

  • Mix together soft butter, confectioners sugar, vanilla. Sift together Flour, salt. Mix in 3/4 Cup finely chopped nuts Chill Dough. Roll into 1" balls. Place 2 1/2 " apart on ungreased baking sheet. Bake 400 degrees for 10-12 minutes. Bake until set, but not brown. While still warm, roll in confectioners sugar. Cool. Roll in sugar again. Enjoy !

1/2 cup sifted powdered sugar
1 cup chopped walnuts
1 tsp vanilla
1/4 tsp salt

  • preheat oven to 400 degrees In a medium bowl, cream butter and vanilla until smooth. Combine the confectioners' sugar and flour; stir into the butter mixture until just blended. Mix in the chopped walnuts. Chill the dough completely. Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet. Bake for 8-10 minutes in the preheated oven. When cool, roll in remaining confectioners' sugar. I also like to roll mine in the sugar a second time.

How to make Mom's Russian Teacakes

1 cup butter, softened
½ cup powdered sugar
1 teaspoon vanilla
2 ¼ cups flour
¼ teaspoon salt
¾ cup finely chopped nuts (pecans, walnuts, or almonds)
Powdered sugar for rolling
Instructions

Steps:

  • Preaheat oven to 375°. Line two cookie sheets with parchment paper.
  • Mix butter, ½ cup powdered sugar, and vanilla with an electric mixer until fluffy. Add flour and salt and mix until the dough comes together. Stir in the nuts. If dough is too soft, chill it until you can work it easily with your hands.
  • Scoop 1 tablespoon balls of dough and place on prepared cookie sheet.
  • Bake cookies for 7-8 minutes until bottoms are just slightly brown. Remove from oven and cool for just a minute, until you can handle them. Fill a small bowl with powdered sugar and roll each cookie in the sugar until coated. Place on a rack to cool. (Once cookies are cooled, you may want to re-roll them in more powdered sugar.)
