Steps:

  • In a large bowl, whisk together the sour cream, dill, olive oil, lemon juice, and garlic powder. Season with sea salt and black pepper to taste.
  • Stir in the cucumbers and radishes.

1 bunch best farm stand radishes
to taste salt
sour cream

Steps:

  • 1. At your local farmers market, get the prettiest bunch of radishes, wash them well, trim the ends, and dry with paper towels.
  • 2. Slice radishes into half-moons, not thick, not thin - just right. Mix some sour cream with salt, then mix it with radishes.
  • 3. Eat right away, while the juice is still holding inside the slices.

This is a recipe my mom and grandmother use every time there's a family gathering or a special occasion. To make this a vegetarian dish just leave out the ham. Potatoes, carrots, and eggs do not have to be chilled completely after boiling. Dill can be substituted for parsley if desired.

6 potatoes, peeled
1 carrot, or more to taste
4 eggs
6 large pickles, cut into cubes
1 (15 ounce) can peas, drained
½ cup cubed fully cooked ham, or to taste
1 tablespoon chopped fresh parsley, or to taste
½ cup mayonnaise, or to taste

Steps:

  • Bring a large pot of water to a boil; add potatoes and carrot. Return mixture to a boil and add eggs; cook until potatoes are tender, 20 to 30 minutes. Drain and slightly cool mixture. Chop potatoes and carrot; peel and chop eggs.
  • Mix potatoes, carrot, eggs, pickles, peas, ham, and parsley together in a large bowl; stir in mayonnaise until salad is evenly coated.

1 lb radishes or 1 lb daikon radish
2 carrots
1/4 lb sweet red pepper, chopped
1 1/2 onions, chopped
5 garlic cloves, minced
salt
2 tablespoons oil
2 tablespoons 3% vinegar
sugar
ground red pepper
salt

Steps:

  • Julienne radish and carrot and toss with salt.
  • Chop red pepper, onion, garlic. The original recipe says to blanch these veggies. I think I would just use them raw.
  • Make dressing: combine vinegar with oil, sugar, pepper and salt.
  • Dress salad and blend carefully.

I am posting this for the Zaar World Tour. The Russian name for this recipe is Salat Iz Krasnoi I Beloi Rediski. Whew! Adapted from Woman's Day Encyclopedia of Cookery, Vol. 10.

1 bunch young red radish
1 bunch white radish, scraped
1/2 cup grated raw young carrot
1/2 cup sour cream
sugar
salt, to taste
lettuce leaf
chopped parsley
fresh dill (optional)

Steps:

  • Trim the red radishes; cut off roots and green leaves. Slice red and white radishes very thin.
  • Combine vegetables, reserving a small amount of carrot to garnish the salad when served.
  • Mix sour cream with sugar and salt to taste. Add the vegetables; stir well. Now make a mound of the salad and place on lettuce leaves placed in the salad bowl. Surround with small mounds of carrot. Sprinkle with finely chopped parsley, and dill, if desired. Serve chilled. Enjoy!
  • Makes 4 servings.
