BLINI (RUSSIAN PANCAKES)

Widely popular Russian dish, especially eaten during the Maslenitsa festival in Russia. All kinds of fillings are possible--sweet or savory.

4 ¼ cups milk
5 eggs
⅓ teaspoon salt
2 tablespoons white sugar
½ teaspoon baking soda
⅛ teaspoon citric acid powder
4 cups all-purpose flour
3 tablespoons vegetable oil
1 cup boiling water
⅔ cup butter, divided

Steps:

  • Beat together the milk and the eggs. Stir in the salt and the sugar and mix well. Add the baking soda and citric acid.
  • Blend in the flour. Add the vegetable oil and pour in the boiling water, stirring constantly. The batter should be very thin, almost watery. Set the bowl aside and let it rest for 20 minutes.
  • Melt a tablespoon of butter in a small frying pan over medium-high heat. Pick the pan up off the heat. Pour in a ladleful of batter while you rotate your wrist, tilting the pan so the batter makes a circle and coats the bottom. The blini should be very thin.
  • Return the pan to the heat. Cook the blini for 90 seconds. Carefully lift up an edge of the blini to see if it's fully cooked: the edges will be golden and it should have brown spots on the surface. Flip the blini over and cook the other side for 1 minute.
  • Transfer the blini to a plate lined with a clean kitchen towel. Continue cooking the blini, adding an additional tablespoon of butter to the pan after each 4 blini. Stack them on top of each other and cover with the kitchen towel to keep warm.
  • Spread your favorite filling in the center of the blini, and fold three times to make a triangle shape. You can also fold up all 4 sides, like a small burrito.

These sweet, tangy fritters are reminiscent of American buttermilk pancakes but chewier and less cakey.
1¼ cups flour
1½ tablespoons sugar
1 teaspoon baking soda
1/2 teaspoon fine salt
2 eggs
2 cups unflavored whole milk kefir or buttermilk
Neutral oil such as canola or sunflower, for frying

Steps:

  • 1. Whisk together flour, sugar, baking soda and salt in a large bowl. In another bowl, lightly beat eggs and whisk in kefir. 2. Add dry ingredients to the kefir mixture, all at once, and stir to combine. Don't over-whisk: A few lumps are to be expected. 3. Heat a nonstick skillet over medium heat (a 12-inch skillet will hold four pancakes; use multiple skillets or cook in batches). Add enough oil to slick the surface, and decrease the heat to medium-low or low: These need time to cook through as the surface browns. 4.Using a measuring cup or ladle, add 1/4-cup portions of batter to the pan. Cook slowly, as with typical pancakes: until bubbles form on the top surface and the batter begins to lose its gloss, and until the pancakes are golden brown on one side (this may take 3-4 minutes). Flip, and repeat on other side. When gently touched, cooked oladi should feel soft and springy, not wet inside. Adjust heat as necessary to keep the pancakes from browning too quickly. 5. If cooking in batches, place cooked pancakes on a plate loosely covered with foil and keep warm in a 150-degree oven, or serve them as they come out of the pan. Serve plain or with sour cream, jam or honey.

SIRNIKI (RUSSIAN CHEESE PANCAKES)

These Russian Fried Cheese Pancakes (Patties), prounounced SEER-ni-kee, are delicious served hot out of the pan, the outsides still crispy, the insides creamy... They are very easy, and the dough can be made ahead. Sirniki are usually served as a brunch or breakfast dish, or as a dessert, with sour cream or jam. Some like both!

1 lb farmer cheese
2 eggs
2 tablespoons sugar
1 teaspoon salt
1/2 cup flour, plus
extra flour, for dipping
2 tablespoons butter, approx

Steps:

  • In a food processor, pulse the farmer�s cheese until it is uniformly crumpled. Add the eggs, sugar, salt, and ½ cup of flour. Pulse or mix to combine. Refrigerate 1 hour, or even overnight. The dough will remain thick but sticky.
  • Put approximately 1/3 cup of flour into a bowl, and use this to prevent the dough from sticking to your hands. Using 2 teaspoons, drop 1½ï¿½ balls of dough into the flour, roll them round, and flatten to about 3/8� thick. Place them on a plate in a single layer until all the patties are all formed.
  • Heat a frying pan with 1 T. butter, and fry the patties on each side until golden. You will need to add more butter as you go.
  • Serve hot with sour cream and/or jam. This recipe will make approximately 20 small patties.
  • NOTE: Farmer Cheese is usually found near the cream cheese; my store sells Friendship brand. These days, the packages are just under 1/2 pound (don't you hate this incremental downsizing?), and 2 packages will work fine.
  • About the Times, Prep time is mostly frying time, and Passive time is the chilling time.

This recipe was given to me by my Russian teacher/neighbor. It is tried and true, and my family loves it! Cooking time really depends on how many skillets you are using! Many years ago when I first started making the blini, I used 1 skillet and it took forever to use up all the batter. Now I use 4 skillets and the time goes by quickly. I have substituted coconut oil and it tastes delicious, but it tends to harden if the batter is cold. Batter can be refrigerated for later use. Serve hot with sour cream and/or jelly.

25 g yeast (about .8 ounces)

Steps:

  • Mix yeast with warm milk, add flour and blend until smooth. Allow the dough to rise in a warm place (for about 2 hours). If using the oven/stove for other cooking, you can turn on one burner at very low heat, just enough to create some heat. Put the dough in a bowl, covered with a thin washcloth on the adjacent unlit burner or in the center of the stove to rise. It will also rise at room temperature, but works better warm.
  • Mix eggs, salt and sugar and 1 tablespoon oil into the dough and allow to rise again (for about 1/2 hour). Without mixing dough again, use a wet spoon to spoon out portions of dough onto a greased hot pan. Dollop out with a soup spoon, the pancakes are small. 1 c warm milk
1/4 Tbsp active dry yeast
2 c all purpose flour
2 Tbsp sugar
1 egg, lightly beaten
2 Tbsp oil
1/8 tsp salt

  • 1. In a large bowl, mix the milk, yeast and flour with a wooden spoon.
  • 2. Cover the bowl with plastic wrap and let rise in a warm place until the dough doubles, 30-50 minutes.
  • 3. When the dough has doubled in size, add the eggs, oil, sugar and salt. Mix until thoroughly incorporated.
  • 4. Cover and repeat rising time, once again until the dough doubles.
  • 5. Heat a few Tbsp. of oil in a nonstick skillet on medium heat.
  • 6. Since the dough is very sticky, it will stick to the spoon. Fill a mug with water and dunk your spoon in the water every time you get more dough. Gently scoop the dough, trying not to deflate it as much as possible. The dough doesn't stick to the spoon and effortlessly slides right off and into the skillet.
  • 7. Cook until golden on both sides.
  • 8. Drain on a paper towel. Enjoy with sour cream, jam, berries, etc. You can also add apples, berries, chocolate chips or nuts to the oladi. Simply add them to the batter when adding eggs, sugar, oil and salt.
  • 9. HINT: Whisk some sour cream with sugar and vanilla and dunk each pancake in the sour cream mixture. Layer all the oladi in a bowl and the sweet sour cream will seep into the oladi, making them even more tender and juicy.

1 lb zucchini
1 egg
1 garlic clove
1/2 c flour
1/4 tsp baking soda
to taste salt
to taste fresh dill, optional
oil sufficient for pan frying

Steps:

  • 1. Wash zucchini (or you can use any kind of squash), if they have seeds, remove them, skin them and grate on the grater, medium slots. Add some salt, mix everything, and leave for about 10 minutes.
  • 2. If there is a lot of liquid in the zucchini mix, remove it. Add fresh chopped dill (if you like), one egg and pressed garlic, mix everything.
  • 3. Add flour to the mixture, start with ½ cup of flour and mix dough. If you see you need to add more flour for consistency, do that.
  • 4. Warm the frying pan with oil in it over the medium heat. Take dough with a spoon and put some of it on the warmed up frying pan forming a small pancake. Fry pancake 1-2 minutes on each side till golden color. And repeat the same procedure for the rest of the dough you have left.
  • 5. Zucchini pancakes are ready! Serve them warm with sour cream or mayonnaise for lunch or as an appetizer. Enjoy!

1 tablespoon sugar
1 cup milk, divided
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder

  • Beat eggs a little, add sugar and half of milk and beat again.
  • Sift flour, baking powder and salt, add to egg mixture and beat till smooth.

1 1/2 lbs potatoes, peeled grated and squeezed dry- 4 to 5 medium
1/2 lemon, juice of
1 onion
2 egg yolks
1 1/2 tablespoons matzo meal
3/4 teaspoon salt
1/2 teaspoon pepper
vegetable oil, for frying

Steps:

  • In large bowl toss potatoes with lemon juice.
  • Grate onion; squeeze out liquid and discard. Add grated onion to bowl with potatoes.
  • Mix in remaining ingredients except oil.
  • Heat 1/2 inch oil in large skillet over medium-high heat. Portion 1/4-cup measures of potato mixture into hot oil, spacing apart. Cook until golden brown, about 3 minutes on each side, turning once. Drain on paper towels.
  • Keep hot on baking sheet in 325 degree oven. Repeat with remaining potato mixture, adding oil to skillet, as needed. Serve with applesauce, if desired.

2 eggs
1 tablespoon white sugar
1/3 teaspoon salt
1/2 cup all-purpose flour
2 1/2 cups milk
1 tablespoon vegetable oil
1 tablespoon butter

Steps:

  • In a medium bowl, whisk together the eggs, sugar, and salt. Sift the flour into the bowl, and stir in along with the milk. Mix until smooth and well blended. The batter should be thin.
  • Heat a griddle or skillet over medium heat. Lightly oil the pan or spray with cooking spray. Pour about 2 tablespoons of the batter, or as much as desired, into the pan. Tilt the pan to spread the batter out evenly. When the edges are crisp looking and the center appears dry, slide a spatula carefully under the blin. Flip, and cook for about 1 minute on the other side, or until lightly browned.
  • Remove blini to a plate. Put a little butter on top, and continue to stack the blini on top of each other. To serve, spread with desired filling, then fold in half, and in half again to form a triangle. Mmm Mmm!
