PINEAPPLE CHICKEN SALAD

This is one of my family's favorite summer dishes. The kids love this filling salad's sweet dressing. While the chicken is grilling, I prepare the dressing and vegetables.-Stephanie Moon, Boise, Idaho.

Number Of Ingredients 10

4 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon lemon-pepper seasoning
1 can (8 ounces) unsweetened sliced pineapple
3 tablespoons vegetable oil
2 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon honey
1/4 teaspoon ground ginger
8 cups assorted vegetables (lettuce, red onion, carrots, sweet red pepper and broccoli)
Salted peanuts, optional

Steps:

  • Sprinkle chicken with lemon-pepper. Grill over medium-hot heat or broil 4-6 in. from the heat for 15-18 minutes or until juices run clear, turning once. Set aside and keep warm. Drain pineapple, reserving 2 tablespoons juice (discard remaining juice or save for another use); set pineapple aside. In a jar with a tight-fitting lid, combine oil, soy sauce, vinegar, honey, ginger and reserved pineapple juice; shake well. Brush some of the dressing over pineapple; grill or broil for 2 minutes. Cut chicken into strips. Arrange vegetables on serving plates; top with pineapple and chicken. Sprinkle with peanuts if desired. Serve with remaining dressing.

1 fresh pineapple
4 cups sliced cooked chicken breast
1 medium onion, chopped
1 celery rib, chopped
1/3 cup golden raisins
1/3 cup slivered almonds, toasted
2/3 cup mayonnaise
1/4 cup unsweetened pineapple juice
1 tablespoon Dijon mustard
3/4 teaspoon curry powder
1/4 teaspoon salt
Leaf lettuce, optional

Steps:

  • Cut pineapple in half; remove fruit, leaving 1-in. shells. Set shells aside for serving; cut fruit into cubes. , In a large bowl, combine the chicken, onion, celery, raisins, almonds and 1 cup cubed pineapple (refrigerate remaining pineapple for another use)., In a small bowl, whisk the mayonnaise, pineapple juice, mustard, curry and salt; add to chicken salad and toss to coat. Refrigerate until chilled., Line pineapple shells with lettuce if desired; fill with chicken salad.

This is a really great recipe for chicken salad that I always get compliments on at family gatherings. I hope you like it. Makes about 6 good-sized sandwiches; approximately 5 cups.

1 rotisserie chicken, boned and chopped
1 (8 ounce) can crushed pineapple, drained
2 stalks celery, finely chopped
1 cup creamy salad dressing (such as Miracle Whip®)
½ cup sweetened dried cranberries (such as Craisins®)
½ cup mayonnaise
½ cup chopped apple
¼ cup chopped green onion
1 tablespoon finely chopped fresh rosemary
1 tablespoon chopped fresh dill
1 pinch seasoned salt, or to taste
salt and ground black pepper to taste

Steps:

  • Mix chicken, pineapple, celery, salad dressing, sweetened cranberries, mayonnaise, apple, green onion, rosemary, dill, seasoned salt, salt, and pepper together in a large bowl. Refrigerate until ready to serve.
