1 1/3 cups diced seedless watermelon
1/2 cup rum, white or dark
2 tablespoons orange-flavored liqueur, such as triple sec
Juice of 1 lime (about 2 tablespoons)
2 thin lime rounds, for garnish (optional)

Steps:

Puree the watermelon in a blender until very smooth. Pour into a cocktail shaker filled with ice and add the rum, liqueur and lime juice. Shake vigorously and strain into 2 ice-filled cocktail glasses. Garnish each with a lime round if using.

2 fluid ounces dark rum, divided
2 (1 inch) cubes watermelon
1 cup ice, or as needed
6 fluid ounces peach-flavored sparkling water

Steps:

Put 1 ounce rum in a jar or bowl. Add watermelon cubes, cover, and let sit until watermelon has absorbed the rum, at least 2 hours.
Fill a glass with ice and add remaining 1 ounce rum. Add sparkling water, rum-infused watermelon, and any leftover soaking juices.
