STONE FRUIT AND BERRY CRUMBLE



Stone Fruit and Berry Crumble image

2 cups fresh blueberries
2 cups diced peaches
2 cups fresh raspberries
1/4 cup uncooked oats
1/4 cup brown sugar
1/4 cup melted unsalted butter
Nonfat Greek yogurt, for serving

Steps:

  • For the fruit: Preheat the oven to 400 degrees F.
  • Put the blueberries, peaches and raspberries in a 2-quart baking dish and roast until soft, 10 to 12 minutes. Strain the fruit juices into a saucepan and return the fruit to the baking dish. Bring the juices to a simmer over medium heat and reduce until syrupy, 10 to 12 minutes. Pour over the fruit.
  • For the crumble: Reduce the oven to 325 degrees F.
  • Combine the oats, brown sugar and melted butter in a small mixing bowl. Spread the crumble mixture on a sheet tray and bake until it just starts to brown, 10 to 12 minutes.
  • Sprinkle the crumble on top of the fruit. Scoop to serve with Greek yogurt.

BULGOGI-INSPIRED BEEF QUESADILLAS

1 red onion, thinly sliced
1 cup white vinegar
1/4 cup sugar
1/4 cup kosher salt
1 1/4 cups soy sauce
1/2 cup gochujang
1/4 cup plus 2 tablespoons sesame oil
1/4 cup sesame seeds
1/4 cup white vinegar
2 tablespoons mirin
1 Asian pear, coarsely chopped
2 pounds ground beef
4 tablespoons unsalted butter
12 slices American cheese
Six 10-inch flour tortillas
1/2 head iceberg lettuce, shredded
Sesame seeds, for sprinkling

Steps:

  • For the pickled onions: Combine the onions, vinegar, sugar and salt to in a small saucepan and bring to a boil. Remove from the heat and let cool completely. Drain the pickled onions and set aside.
  • Meanwhile, prepare the beef: Combine the soy sauce, gochujang, sesame oil, sesame seeds, white vinegar, mirin and Asian pear in a blender and blend until smooth. Pour over the ground beef in a bowl and mix thoroughly.
  • Heat a large, heavy-bottomed skillet over medium-high heat. Add the beef and cook, breaking it up into pieces with a wooden spoon, until browned and cooked through, 8 to 10 minutes.
  • To serve: Heat a large cast-iron skillet over medium heat; add 2 tablespoons of the butter and let melt. Meanwhile, place 2 slices of the American cheese in a tortilla, then top with some of the ground beef, pickled onions and iceberg lettuce. Sprinkle with sesame seeds. Fold the tortilla in half to make a half-moon. Repeat with the remaining ingredients to make 5 more quesadillas. Working in batches, cook the quesadillas in a single layer, adding more butter as needed to the skillet, until golden and crispy on both sides, about 4 minutes per side.

RABBIT WITH ROSEMARY SPAETZLE, ONION SOUBISE AND MUSTARD VERMOUTH SAUCE



Rabbit with Rosemary Spaetzle, Onion Soubise and Mustard Vermouth Sauce image

4 rabbit legs
Kosher salt and freshly ground black pepper
2 tablespoons neutral cooking oil
3 white onions, thinly sliced
1 cup vermouth
1/4 cup Dijon mustard
1 stick unsalted butter, at room temperature
1 sprig fresh rosemary
1/2 cup heavy cream
2 large eggs
1/4 cup milk
1 tablespoon chopped fresh rosemary
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup all-purpose flour
1 stick unsalted butter

Steps:

  • Preheat the oven to 350 degrees F.
  • Sprinkle the rabbit legs with salt and pepper. Place a large Dutch oven over high heat and add the oil. Let get hot, then add the rabbit legs and sear on both sides, 5 to 7 minutes per side. Transfer to a plate until ready to use.
  • Reduce the heat to medium-low, then add the onions. Season with salt and saute until translucent, 5 to 7 minutes. Add the vermouth and mustard and bring to a simmer. Add the butter, the rabbit legs and rosemary atop the onions. Cover the pan and bake until the rabbit is tender, 35 to 40 minutes.
  • Remove the rabbit from the Dutch oven and set aside. Put the Dutch oven back over medium-high heat and add the cream to the cooking liquid and onions. Cook until heated through and thickened, about 2 minutes.
  • For the spaetzle: Bring a large pot of water to a boil.
  • Whisk the eggs, milk, rosemary, salt and pepper together in a small mixing bowl. Add the flour gradually until a thick batter is formed.
  • Over the boiling water, push the batter through the bottom of a colander with a spatula and simmer until the spaetzle float to the top, 3 to 4 minutes. Strain and place on a paper towel-lined sheet tray. Let cool slightly.
  • Heat a 14-inch cast-iron pan over medium-high heat. Add the butter and heat until frothy and browned. Add the spaetzle and cook until crisp, 2 to 3 minutes. Drain on the paper towels and season with salt.
  • Place the spaetzle in a large shallow dish and top with the rabbit legs. Pour the sauce over the legs and serve.

Butter-Poached Lobster Rolls with Celery Fennel Slaw image

Kosher salt and freshly cracked black pepper
Three 1 1/2- to 2-pound live Maine lobsters
2 tablespoons neutral cooking oil
1 white onion, thinly sliced
2 cloves garlic, chopped
2 fresh bay leaves
1 cup vermouth
1 cup heavy cream
1 pound unsalted butter, cubed, plus 2 tablespoons for toasting buns
1/4 cup yellow mustard seeds
1 cup red wine vinegar
1 tablespoon granulated sugar
1 head celery
1 head fennel, fronds reserved
1 ounce mustard oil
6 top-sliced hot dog buns

Steps:

  • Bring a large pot of salted water to a boil.
  • Remove the claws and tails from the lobsters. Boil the tails for 1 minute and the claws for 4 minutes, then remove from the water. Immediately remove the meat from the shells and set aside.
  • Add the oil to a medium saucepan over medium-high heat. Add and sweat the onions, garlic and bay leaves until the onions are translucent, about 3 minutes. Carefully add the vermouth and reduce until dry, about 2 minutes. Add the cream, then reduce by two-thirds, until thick. Slowly whisk in the pound of butter little by little until fully emulsified. Add the lobster tail and claw meat to the butter cream sauce and poach over low heat at 165 degrees F until cooked through, 7 to 10 minutes. Remove the lobster from the pan and allow to cool just to the touch. Rough chop and set aside.
  • Add the mustard seeds, vinegar, sugar and 1 tablespoon kosher salt to a small saucepan and bring to a simmer. Meanwhile, separate the celery into stalks. Using a Japanese mandoline, slice the celery into paper-thin strips. Cut the fennel bulb into quarters. Using the Japanese mandoline, slice the fennel bulb paper thin.
  • In a medium bowl, toss the celery slices, fennel slices, mustard oil and 2 tablespoons pickled mustard seeds. Taste and adjust as desired with more mustard seeds. Keep cool until ready to serve.
  • In a 12-inch cast-iron pan, melt the remaining 2 tablespoons butter and griddle the buns, top side-down, over medium-high heat until golden brown.
  • Open the buns and fill with spoonfuls of the lobster mixture. Top with a handful of the slaw and garnish with the reserved fennel fronds.

Add half the grapefruit juice mixture to each; top with grapefruit soda and grapefruit slices.
