This is the standard rub used in a restaurant located in Buffalo Gap, Texas. Makes ½ cup. Will cover 4-10 steaks, depending on size and flavor preference.

Number Of Ingredients 9

4 beef t-bone steaks (or up to 10 depending on size and how you like yours seasoned)
1 tablespoon canola oil
1 teaspoon paprika
1 teaspoon beef bouillon granules
1 tablespoon cornstarch or 1 tablespoon flour
4 teaspoons garlic powder
4 teaspoons kosher salt
4 teaspoons cracked black pepper
1 teaspoon dried oregano

Steps:

  • Blend all dry ingredients together and rub into both sides of at least 4 t-bone steaks.
  • Heat 1 tablespoon canola oil in large skillet at fairly high heat.
  • Cook steaks for 5 minutes; turn, drop heat to medium and continue cooking for approximately 10 minutes for medium-rare, depending on the thickness of your steaks.

2 to 4 beef T-Bone or Porterhouse Steaks, cut 1 inch thick (about 2 to 4 pounds)
Salt
2 tablespoons chili powder
2 tablespoons packed brown sugar
1 tablespoon ground cumin
2 teaspoons minced garlic
2 teaspoons cider vinegar
1 teaspoon Worcestershire sauce
1/4 teaspoon ground red pepper

Steps:

  • 1)Combine BBQ Rub ingredients; press evenly onto beef steaks. 2)Place steaks on grid over medium, ash-covered coals. Grill, covered, 11 to 16 minutes (over medium heat on preheated gas grill, 15 to 19 minutes) for medium rare (145degreesF) to medium (160degreesF) doneness, turning occasionally. Remove bones and carve steaks into slices, if desired. Season with salt, as desired. To broil, place steaks on rack in broiler pan so surface of beef is 3 to 4 inches from heat. Broil 15 to 20 minutes for medium rare to medium doneness, turning once.

2 teaspoons paprika
1 ½ teaspoons ground black pepper
¾ teaspoon onion powder
¾ teaspoon garlic powder, or to taste

¾ teaspoon ground turmeric, or to taste
4 (16 ounce) t-bone steaks, at room temperature

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil the grate. Stir the salt, paprika, black pepper, onion powder, garlic powder, cayenne pepper, coriander, and turmeric together in a small bowl; set aside.
  • Rub the steaks on all sides with the seasoning mixture. Cook on the preheated grill to your desired degree of doneness, 3 to 3 1/2 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).

1 tablespoon black pepper
2 tablespoon cumin
2 tablespoon chili powder
2 tablespoon brown sugar
1 tablespoon Sugar
1 tablespoon oregano
4 tablespoon paprika
2 tablespoon Salt
3 tablespoon garlic powder
1 tablespoon celery salt
4 - 6 boneless chicken breasts or thighs

Steps:

  • Pour all the spices into a sandwich-size sealable plastic bag. Shake well. This can be stored for months and make enough for approximately 5-1/2 pounds chicken. Place a piece of chicken and 1 tablespoons of rub in a gallon-size sealable bag. Shake until all the chicken is in the bag and uniformly covered. Refrigerate up to one hour before grilling (refrigeration gives more intense flavor). Grill the chicken over medium heat on a covered grill about 5 - 7 inches per side or until the meat is no longer pink on the inside. Arrange the pieces on a dinner plate and cover tightly with aluminun foil. Let sit for at least 10 minutes (very important). Serve with barbecue dipping sauce.

Rubs can be applied just before cooking, but for a more pronounced flavour, apply your rub and refrigerate for several hours. When a rub is applied and is tightly wrapped and refrigerated for 12-24 hours, the flavour will infuse the meat. I have found that kosher salt is the best to use as the sharp pieces of salt, when rubbed, permeate the meat more efficiently.

1/4 cup onion, chopped
1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons soy sauce
1 tablespoon sugar

1 teaspoon salt
1/2 teaspoon pepper
