SLOW COOKER BAVARIAN RED CABBAGE

Tasty recipe from my Mom's Crock Pot Cook book from the 70's

Number Of Ingredients 8

1 small head red cabbage (washed & coarsely sliced)
1 medium onion, chopped
3 tart apples (granny smith are good) cored and quartered
2 tsp salt
1 c hot water
1 1/2 Tbsp sugar
1/2 c red wine vinegar
3 Tbsp bacon grease or butter

Steps:

  • 1. Place all ingredients in crock pot in order listed. Cover and cook on low for 6 to 8 hours (High 3-4 hours)
  • 2. Stir well before serving.
  • 3. NOTE: may add any or all of the following, if you like: 1/4 tsp. freshly ground nutmeg 1/2 tsp. grounds cloves 1/2 tsp. caraway seeds (optional)
  • 4. This should fit a 4-5 qt slow cooker For larger (6 qt) crock pot, use large head of cabbage and add 1/2 C of apple juice

1 onion, diced
1 head red cabbage, cut up
2 tablespoons butter
2 -3 tablespoons vinegar
4 -5 tablespoons sugar
1 -2 apple, peeled and diced

Steps:

  • Saute onions in butter.
  • add cut up cabbage and vinegar.
  • cover and simmer for about 20 to 25 minutes.
  • add just enough sugar to make it sweet and sour tasting.
  • add apples and reheat.

You can braise this on the stove top as well in the crock pot! This is a long cooking recipe to make a very tender texture. The braised red cabbage of Alsace, counterbalances the fattiness making pork, duck or a traditional Christmas goose a great to serve with it. Seasoned with apples, ginger, cinnamon, coriander and nutmeg. Try even some lavender in it!

1 head red cabbage, quartered cored, and thinly sliced
1 large red onion, sliced
1 cup apple cider
1 granny smith apple, diced
1/3 cup balsamic vinegar
1 tablespoon honey
salt and pepper
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon ground coriander
1/8 teaspoon ground nutmeg

Steps:

  • Place all ingredients into a large crock pot.
  • It will be full but will cook down to about 1/5.
  • Cook for 5 hours on low.
  • Stirring occasionally adding water if needed.
  • Optional: Or you can cook stove top saute onions in some butter till softened add rest of ingredients and simmer 1-2 hours or bake at 350 degrees.

A delicately seasoned sweet and sour red cabbage dish that will compliment a German meal with Roladen and potato dumplings

1 shredded red cabbage
1 lb bacon, chopped
2 -3 onions, chopped
olive oil (for shine)
4 -5 apples, cut up in 1/2-1" pieces
vinegar or lemon juice
sugar
6 bay leaves, broken in half for more flavour

Steps:

  • Fry onion and bacon in large pot until bacon is a bit crispy.
  • Add red cabbage, apples, and bay leaves.
  • Add aprx 3 tbsp sugar.
  • Simmer for aprx.
  • 2-3 hours on low heat stirring often.
  • When the cabbage is fully cooked in about 3 hours, add the vinegar or lemon juice when pot is off the burner.
  • This dish will double in flavour if served the next day.

VEGAN STYLE ROTKOHL (GERMAN RED CABBAGE)

Veggies shouldn't have to miss out on German yumminess. This is a veganized post from "Cooking the German Way" e-book-- it originally called for 2 strips of bacon and cooking the onions in the bacon fat, but it says in the footnote that if you don't want to add bacon, simply use 2 TB butter or oil to cook the onions. If you don't have whole cloves, 1/4 tsp ground cloves = about 3 cloves but it's not recommended. I am otherwise copying the recipe as is, including the description: "This tangy, bright-colored side dish is delicious with beef, pork, or wild game. It does not go well with chicken or fish. The vinegar, with its natural acid, preserves the vivid color of the red cabbage. Leftover red cabbage can be chilled and served as a salad."

1 medium onion, peeled and chopped (1/3 cup pre-chopped)
2 tablespoons olive oil (or Earth Balance, or other oil you like)
10 -12 cups shredded red cabbage (about 2 1/3 lbs)
1 medium tart apple, cored and chopped (says "no need to peel")
4 -5 whole cloves
2 bay leaves
1/2 teaspoon kosher salt
1/8 teaspoon ground black pepper
1/4 cup red wine vinegar

Steps:

  • Gently heat the oil in a large heavy-bottom saucepan, and stir-fry the onions until transparent.
  • Add the cabbage and stir well. Add the remaining ingredients and stir again.
  • Cover and simmer over low heat for 1 hour, or until cabbage is tender. If possible, remove the whole cloves before serving.
