Pears
3 cups water
2 cups sugar
1 cup dry or off-dry Riesling
3 fresh rosemary sprigs
1 vanilla bean, split lengthwise
1/4 teaspoon whole black peppercorns
8 Forelle pears or other small pears, peeled, stems left intact
Pound cake
1 cup all purpose flour
1 cup yellow cornmeal
1 cup (2 sticks) unsalted butter, room temperature
1 1/3 cups sugar
1/4 teaspoon salt
5 large eggs, beaten to blend in medium bowl
1 teaspoon vanilla extract
Syrup and candied rosemary
1 cup sugar
1/2 cup water
8 (4-inch-long) fresh rosemary sprigs
Baker's sugar or other superfine sugar

Steps:

  • For pears:
  • Combine first 6 ingredients in large saucepan. Stir over medium heat until sugar dissolves. Add pears and bring syrup to boil, turning pears occasionally. Reduce heat to medium-low, cover, and simmer until pears are tender, about 20 minutes. Chill pears uncovered in syrup until cold, at least 3 hours. DO AHEAD Can be made 2 days ahead. Cover and keep chilled.
  • For pound cake:
  • Preheat oven to 325°F. Butter and flour 9x5x3-inch metal loaf pan. Whisk flour and cornmeal in medium bowl to blend. Using electric mixer, beat butter in large bowl until light and fluffy. Gradually beat in sugar, then salt. Drizzle in beaten eggs by tablespoonfuls, beating constantly, then beat in vanilla. Add dry ingredients in 3 additions, beating just to blend after each addition. Transfer batter to prepared pan.
  • Bake cake until brown on top and tester inserted into center comes out clean, about 1 hour 15 minutes. Cool cake in pan 15 minutes. Turn cake out onto rack and cool completely. DO AHEAD Can be made 1 day ahead. Wrap in foil and store at room temperature.
  • For syrup and candied rosemary:
  • Bring 1 cup sugar and 1/2 cup water to simmer in medium saucepan over medium-high heat, stirring until sugar dissolves. Add rosemary sprigs. Simmer until syrup reduces slightly, swirling pan occasionally, about 5 minutes. Using tongs, transfer rosemary sprigs to rack and drain. Cover and reserve rosemary syrup.
  • Pour baker's sugar into shallow bowl. Add drained rosemary sprigs to sugar, 1 at a time, turning to coat thickly. Place on paper towels. Dry at least 1 hour. DO AHEAD Can be made 1 day ahead. Let sprigs and syrup stand at room temperature.
  • Cut dark ends off cake. Cut eight 1/2- to 3/4-inch-thick cake slices. Cut each slice diagonally in half. Arrange 2 halves on each plate. Drain pears. Stand 1 pear on each plate. Drizzle each dessert with reserved rosemary syrup and garnish with candied rosemary sprig. Serve, passing remaining syrup separately.

BLOOD ORANGE ROSEMARY POUND CAKE

Nonstick baking spray, for the loaf pan
1 1/2 cups granulated sugar
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
2 large eggs plus 1 yolk
1 1/2 cups all-purpose flour
1 teaspoon kosher salt
1/2 cup blood orange soda or orange soda
1 tablespoon fresh rosemary, minced
2 blood oranges
1 cup powdered sugar, sifted

Steps:

  • Preheat the oven to 350 degrees F. Thoroughly spray a 6-cup (8 1/2-by-4 1/2-by-2 1/2-inch) loaf pan with nonstick baking spray.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream together the granulated sugar and butter. Add in the eggs and egg yolk one at a time, mixing after each addition. Turn the mixer to low and gradually add the flour and salt. Slowly add the blood orange soda, mixing until combined. Scrape the sides, add the rosemary and zest in one of the blood oranges. Mix again for about 30 seconds.
  • Scoop the batter into the prepared pan, spread evenly and place onto a baking sheet. Tap the baking sheet on the counter top to allow air bubble in the batter to escape. Bake until a toothpick inserted in the center does not come out totally clean but isn't wet with batter either, 1 hour and 15 minutes to 1 hour and 30 minutes. Allow to cool completely in the pan.
  • Meanwhile make the glaze: Zest the second blood orange and then juice it into a small measuring cup. Add the powdered sugar, orange zest and 2 tablespoons of the blood orange juice to a mixing bowl and whisk until the glaze is thick but pourable, adding an extra tablespoon of blood orange juice to thin if needed. Remove the cake from the loaf pan to a baking rack set over a baking sheet, drizzle the glaze over the cake and let set.

Steps:

  • Heat oven to 325°F. Grease bottom and sides of 9x5-inch loaf pan with shortening; lightly flour.
  • In large bowl, beat granulated sugar, butter, rosemary, lemon peel, vanilla and eggs with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 5 minutes, scraping bowl occasionally. Reduce speed to low; add flour alternately with whipping cream, beating just until smooth after each addition. Pour into pan.

2 3/4 cups all-purpose flour
1 cup cake flour (not self-rising)
1 tablespoon baking powder
Salt
2 1/4 cups sugar
3 tablespoons finely chopped fresh rosemary
1 1/2 teaspoons pure vanilla extract
3 large eggs, plus 1 large egg white
1 cup whole milk
1/4 cup Rosemary Honey

Steps:

  • Preheat oven to 350 degrees. Butter two 4 1/2-by-8 1/2-inch loaf pans, and line with parchment, leaving a 1-inch overhang on each long side. Butter parchment. Whisk together flours, baking powder, and 1 teaspoon salt.
  • Beat butter, sugar, rosemary, and vanilla with a mixer on medium speed until pale and fluffy, about 4 minutes. Beat in eggs and egg white, 1 at a time. Reduce speed to low. Beat in flour mixture in 2 additions, alternating with milk.
  • Divide batter between pans. Bake, rotating halfway through, until deep gold and a toothpick inserted in centers comes out with moist crumbs attached, 50 to 60 minutes. 1 cup butter (no substitutes)
4 -5 eggs
2 cups sifted cake flour
1 teaspoon baking powder
1 cup sugar
1/4 cup honey
1 tablespoon snipped fresh rosemary or 1 teaspoon dried rosemary, crushed
1/4 teaspoon orange extract or 1/4 teaspoon orange blossom water
2 teaspoons orange juice
2 teaspoons orange juice, for icing
1 cup powdered sugar, for icing
fresh rosemary, for garnish (optional)

Steps:

  • Allow butter and eggs to stand at room temperature for 30 minutes.
  • Grease and lightly flour two 8x4x2-inch loaf pans.
  • Combine flour and baking powder.
  • Set aside.
  • In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds or until softened.
  • Gradually add sugar, 2 tablespoons at a time, beating on medium speed about 6 minutes or until very light and fluffy.
  • Beat in honey.
  • Add eggs, one at a time, beating on low to medium speed for 1 minute after each addition and scraping bowl frequently.
  • (Batter may look slightly curdled.) Gradually add flour mixture, beating on low speed just until combined.
  • Gently stir in snipped or crushed rosemary, orange flower water or extract, orange peel, and orange juice.

1 tablespoon baking powder
1 cup yellow cornmeal

3 eggs
2 tablespoons cognac

Steps:

  • In a medium saucepan, cook plums with sugar, salt, lemon zest and rosemary over medium heat until fruit is very soft but not falling apart - about 10 minutes. Remove from heat and add cognac. 1. Butter a 5 1/2x10" loaf pan. Line the bottom with parchment paper. 2. Preheat oven to 350 degrees. 3. Sift together flour, baking powder, cornmeal and salt. 4. Cream together butter, rosemary, lemon zest and sugar until very light and fluffy. 5. Add eggs to butter mixture, one at a time, beating well after each addition. 6. Beat in flour mixture, alternating with cognac, just until well-combined. Spoon 2/3 of batter into pan. Evenly distribute 1/4 of prepared plums over batter. Add rest of the batter. ROSEMARY SYRUP
1/2 cup honey
3 tablespoons water
2 rosemary sprigs
MASCARPONE
1 cup mascarpone, at room temperature
1/2 cup heavy cream
2 tablespoons sugar
1/2 vanilla bean, split lengthwise and seeds scraped
Fresh figs, sliced, for serving (optional)

Steps:

  • Preheat the oven to 325°. Butter and flour a 9-by-5-inch metal loaf pan. In a medium bowl, whisk the 1 3/4 cups of cake flour with the polenta and salt. In a large bowl, using an electric mixer, beat the softened butter with the sugar at medium-high speed until pale and fluffy, about 2 minutes. Add the eggs one at a time, beating well between additions. Beat in the vanilla extract and lemon juice. Gradually add the flour mixture to the egg mixture, beating the batter at low speed until just incorporated. Scrape the batter into the prepared loaf pan and bake for about 1 hour, until a cake tester inserted in the center of the cake comes out with a few moist crumbs attached. Turn the pound cake out onto a rack and let it cool until warm. MEANWHILE, MAKE THE ROSEMARY SYRUP In a small saucepan, combine the honey with the water and rosemary sprigs and simmer over moderate heat for 2 minutes. Let the syrup cool to room temperature, about 15 minutes. Discard the rosemary sprigs. While the cake is still warm, lightly brush the top of the cake with the rosemary syrup. MAKE THE MASCARPONE In a medium bowl, whisk the mascarpone with the cream, sugar and vanilla-bean seeds. Using a serrated knife, cut the pound cake into thick slices and transfer to plates. Top each slice with a large dollop of mascarpone, drizzle with the rosemary syrup and serve with sliced figs, if using.
