ROSEMARY-GARLIC POTATO BREAD

Rosemary-Garlic Potato Bread image

I learned the joys of putting potatoes in bread during my time in the Napa Valley, so the flavors here are resonant of that magical place, but don't be afraid to change up the herbs or play with nuts and olives. You can't mess it up. Well, you can - I certainly have more than once - but you know what I mean. You can do this by hand, but it's messy, so I wrote this recipe with directions for using a stand mixer. -Duff

Time 5h30m

Yield 2 loaves

Number Of Ingredients 14

2 large russet potatoes, well-baked and still warm, recipe follows
1 garlic head, roasted and still warm, recipe follows
2 (1/4-ounce) envelopes active dry yeast
2 tablespoons sugar
3 tablespoons olive oil, plus extra for brushing
2 teaspoons kosher salt, plus more for sprinkling
4 cups all-purpose flour, plus more as needed
4 cups bread flour
1 1/2 tablespoons chopped fresh rosemary
2 large russet potatoes
Olive oil
Kosher salt and freshly ground black pepper
1 garlic head
Olive oil

Steps:

  • Peel and coarsely chop the potatoes. Squeeze the garlic from the garlic head into a medium bowl and add the potatoes.
  • In the bowl of a stand mixer fitted with the dough hook, combine the yeast, 2 cups warm water, and the sugar and let the yeast bloom for about 7 minutes, or until bubbly. Add the olive oil, potatoes, garlic, salt, and flours. Mix on medium speed for 15 minutes.
  • Turn the dough out into an oiled bowl, cover it with plastic wrap, and let it rise in a warm place for 1 1/2 hours, or until doubled in size.
  • Punch it down and let it rise again for 1 hour. Punch it down again and cut the dough in half. Shape each loaf into a ball, place them on a baking sheet, and let them rise for 45 minutes, or until nice and poofy.
  • Preheat the oven to 400 degrees F.
  • Brush the loaves with olive oil and sprinkle them with a wee bit of salt and some rosemary. Cut a big slash across the top of each and bake for about 45 minutes, or until the loaves are a nice rich brown and sound hollow when tapped. Let cool on a wire rack. Never refrigerate!
  • Bake potatoes (preferably russet potatoes - the big brown ubiquitous ones) in the oven. Rub the potatoes with a bit of olive oil, kosher salt, and pepper. Stick 'em with a fork like 20 times all over the place to let the steam out. Place them on a baking sheet and roast at 425 degrees F for 1 hour. The skin will get nice and crispy and you can scoop out the potato meat really easy, and also enjoy the skins as a snack while you bake. (As a poor culinary student, I always saved my potato skins as dinner. How did that bacon end up in my backpack? That's weird!
  • You should know how to roast garlic - it may save your life one day. Heat the oven to 425 degrees F. Chop off the pointy end of the head of the garlic and expose the cloves. Drizzle olive oil right onto the exposed garlic, wrap it tightly with aluminum foil, place on a baking sheet, and roast for 35 to 40 minutes. Really, though, don't time it - just roast them until they smell amazing. You'll know it when you smell it. You'll also know very quickly if you over-roast it - it'll smell awful and burnt. Throw that crap away and start over.

SOURDOUGH ROSEMARY POTATO BREAD

Sourdough Rosemary Potato Bread image

This makes 2 very large or 3 regular sized loaves. I like mine just shaped into a loaf and placed on a baking sheet, however I'm sure bread pans will work ok. This bread is very crusty on the outside (which if you don't like that just omit spraying with water) while nice and chewy on the inside. It can be tricky to bake as it tends to brown quickly so I place a foil tent over the loaves after they've baked for 15-20 minutes. (This makes great sandwiches, we like roast chicken and havarti cheese)

Time P1DT5h

Yield 3 regular size loaves

Number Of Ingredients 10

1 cup sourdough starter, brought to room temp
1 1/2 cups warm water
2 cups bread flour
1 cup mashed potatoes, plain and warm (I use prepared instant to make this quicker)
3/4 cup warm water
2 teaspoons salt
1/2 cup melted butter (can use oil) or 1/2 cup margarine (can use oil)
1/3 cup sugar
2 -3 tablespoons chopped fresh rosemary
6 -8 cups flour

Steps:

  • Combine the first four ingredients in a large non-metal bowl and blend well.
  • Cover and let stand overnight till light and bubbly.
  • Do not skip this step!
  • Add the next 5 ingredients and 3 c flour.
  • Mix in enough of the rest of the flour to make a soft but pliable not quite sticky dough (fingers when touching the dough should come back clean).
  • Place dough in an oiled bowl turning once to coat both sides, cover and let rise 2 hours.
  • Place dough on counter (lightly floured if needed) divide in 2 or three equal portions and let rest 10 minutes.
  • Form into loaf shape and place on greased baking sheet, do not make to thick or this will never get done in the middle.
  • Let rise till doubled.
  • Just before baking slash the tops with a sharp knife 4-5 times.
  • Spray dough and inside of oven w/ water (will need to repeat at least every 15 minutes) and bake in a 350 oven 1 hour for large loaves and 45 minutes for regular sized. Watch carefully to prevent overbrowning. May need to increase bake time depending on the area you live.

Time 1h15m

Number Of Ingredients 13

2 medium potatoes, peeled, boiled in water, no salt, measure out 1 1/2 cups, dry measure
1/2 c milk, warm
2 1/2 Tbsp unsalted butter, melted
3 Tbsp honey
1 egg, ex-large, beaten
1 Tbsp fresh rosemary, finely chopped, measured after chopping
2 tsp kosher salt
1/4 c warm water
1 Tbsp dry yeast, i use a rapid rise
1 tsp sugar
4 1/4 c unbleached all purpose flour, measurement is approximate
unsalted butter, softened, to grease loaf pans
additional flour to dust a board and to sprinkle on loaf tops before baking

Steps:

  • 1. To make the mashed potato, peel and large dice 2 medium potatoes (I use russets). Cover with plain, unsalted water. Bring to a boil and boil gently for 12-15 minutes, until tender. Drain completely and mash with a hand masher. Measure 1 1/2 cups in a dry measure cup. Place in a bowl. Cool a bit.
  • 2. To the potatoes, add the milk, melted butter, honey, 1 ex-large egg, beaten, chopped rosemary, and salt. Stir well to mix.
  • 3. In the bowl of a stand mixer, place 1/4 cup warm water, the tsp of sugar, and the dry yeast. Let proof for 7 minutes. It should be puffy and bubbly.
  • 4. Add all but about 3/4 cup of the flour ( about 3 1/2 cups total). Pour the potato liquid mixture over flour. Use the dough hook attachment to mix well. The dough will be sticky.
  • 5. Using the reserved flour ( the 3/4 cup), add small amounts, while keeping the mixer running on low speed. Continue for several minutes, until you notice the dough is sticking less to the bottom of the bowl, and starting to come together. You may not need all the reserved flour,....or you may need a little extra. Note: the dough will still be a bit sticky.
  • 6. Turn dough out, using a metal spoon, to a large bowl that is well buttered. Cover with plastic wrap. Let rise until doubled. Time will depend on how warm your ingredients are. It should take 60 - 75 minutes.
  • 7. Punch down doubled dough and cut in half with a sharp knife. Using a lightly floured board, lightly knead and shape both balls of dough in to a loaf shape.
  • 8. Place loaf shaped dough in 2 buttered regular sized loaf pans. Using a sharp knife or scissors, slash the top of loaves lengthwise. Dust the tops with flour. Cover with plastic wrap. Let rise until doubled in size. This should take 50 - 60 minutes.
  • 9. Remove the plastic wrap and bake loaves in 375 degree oven (350 for convection). Bake for 35 minutes.
  • 10. Remove loaves from oven and remove from pans immediately. Tap the bottoms to see if they sound hollow. A hollow sound will let you know they are done. If not hollow sounding, return to the oven for a few more minutes.
  • 11. Let loaves cool on a rack for at least one hour before slicing. Store in ziplock bag to keep fresh. Store in fridge after 1 day to retain fresh longer.

HOMEMADE POTATO ROSEMARY BREAD

Homemade Potato Rosemary Bread image

I had alot of leftover mashed potatoes from Thanksgiving dinner. I love a good sturdy white bread for turkey sandwiches so I decided to make some. I also had alot of rosemary so decided to combine the two in this recipe. It turned out great and the family all loved it with their turkey sammies. Enjoy! * The prep time listed is...

Categories     Other Breads

Time 2h15m

Number Of Ingredients 10

1 c water
1 c milk
1/4 c butter or evoo, your choice
3 tsp salt
1/4 c sugar
1 1/3 c mashed potatoes
2 pkg rapid rise yeast
7 - 8 c flour, you may need a little more. i used 1/2 unbleached bread flour and 1/2 white whole wheat flour.
1/4 c chopped fresh rosemary
butter for brushing the tops before & after baking

Steps:

  • 1. Grease 2 large bread pans - 9 1/2 x 5 1/2 inches In a microwave safe bowl, place water, milk, butter, sugar, & salt (I used leftover cold mashed potatoes so I added them here to warm them) Heat enough to melt butter. Pour into large bowl of electric stand mixer.
  • 2. Sprinkle yeast over liquid mixture. Add approx 3 1/3 cups of flour & the rosemary & beat well until well combined batter is formed. Beat in enough of the remaining flour to make a soft dough. Change beater to bread dough hook. Add more flour as needed to make a stiff but still soft dough. Let dough hook knead dough for 10 minutes, scraping down every couple minutes.
  • 3. Turn out onto a lightly floured surface & knead dough for a few minutes, incorporating a little more flour if needed until you have a dough that is soft & smooth & no longer sticky. Grease a large bowl with EVOO. Place dough, smooth side down in bowl to grease the surface Turn greased, smooth side up & cover with plastic wrap.
  • 4. Place in warm area to rise until doubled in size, about 35-40 minutes. I turn on my oven for a few minutes till it's about 90 degrees, turn oven off and place it in there. Punch down & divide in 2 pieces.
  • 5. On lightly floured surface, press dough out to remove air bubbles & form into a loaf. Place in prepared bread pan, repeat with 2nd piece of dough. Brush loaf with melted butter. Place in a warm area & loosly cover again with plastic wrap Let rise until doubled in size, approx. 40 minutes.
  • 6. Bake in a pre-heated 375 degree oven for 35-40 minutes. Loaves should be golden on top & sound hollow when tapped. Brush crust again with melted butter. Turn out onto wire racks to cool. Let cool for 10-15 minutes or as long as you can wait to slice into this baby. Slather with butter, dip in Italian butter, or make a nice turkey sammie and enjoy!

20 MINUTE ROSEMARY POTATO BREAD

Categories     Bread     Potato     Side     Bake     Vegetarian     Quick & Easy

Yield 8 people

Number Of Ingredients 5

2 packages Dry Pizza dough mix
Olive Oil (amt. varies)
2 Red skinned potatoes
1/4 cup Coarse Sea Salt
2 teaspoons Rosemary

Steps:

  • Combine 1 tablespoon Crushed Rosemary with Dry Pizza dough mix. Stir to combine evenly. Add water to mix and fold to even consistency. Roll into ball and set aside as you prepare the toppings Apply Olive Oil to baking sheet, swirling around to cover a 12" circle. Place Pizza Dough in center of pan and work into a rough circle, approx 12" in diameter. (a good trick I use is to apply Olive oil to two large spoon backs and use them to stretch dough. Bake Bread for 5 minutes at 450 degrees (on lowest rack in over), or until slightly brown on edges Slice Red Potatoes to Chip thickness and set aside. Crush other teaspoon of Rosemary and set aside. Remove Dough from oven. Place Potato Slices on top of dough, pressing slightly to adhere to dough. Sprinkle Crushed Rosemary and Coarse Sea Salt entirely over surface of bread. Drizzle Olive Oil over surface, and continue to bake another 10-15 minutes or until top is beginnng to brown slightly. Drizzle more oil if you choose, then allow to cool 5 minutes before cutting into 6-8 square servings. Serve with your choice of dipping sauces, or alongside pasta or soup. Very versatile bread, light and flavorful.

POTATO ROSEMARY BREAD STRATA WITH ASPARAGUS AND GRUYERE

Potato Rosemary Bread Strata With Asparagus and Gruyere image

Make and share this Potato Rosemary Bread Strata With Asparagus and Gruyere recipe from Food.com.

Provided by Doug2

Categories     Cheese

Time 1h10m

Yield 6-8 serving(s)

Number Of Ingredients 10

1/2 loaf potato rosemary bread, cut into 1-inch chunks
1 lb fresh asparagus, woody ends snapped and cut into 1-inch pieces
6 eggs, beaten
2 cups milk (whole milk preferred)
1 cup gruyere cheese, shredded
1 cup swiss cheese, shredded
1 cup parmesan cheese, shredded
1/4 cup fresh chives, finely chopped
1/4 cup fresh parsley, finely chopped
salt and pepper, to taste

Steps:

  • Preheat oven to 375 degrees.Spray bottom and sides of a 13" x 9" x 2" glass baking dish with cooking spray. Place half of the bread cubes in the bottom of the dish. Bring a medium pot of salted water to a boil. Add asparagus and cook until just tender - about 3-4 minutes. Drain and rinse under cool water.
  • In a large mixing bowl, whisk together the eggs, milk, salt and pepper.
  • In a small mixing bowl, combine cheeses. Add chives and parsley and then gently mix.
  • Place half of the asparagus on top of the bread cubes, then half of the cheese mixture.
  • Then put half of the egg mixture on top.
  • Repeat with remaining bread, asparagus, cheese mixture and egg mixture.
  • Make sure the bread cubes are mostly submerged in the egg mixture. If not, press them down.
  • For best results, let mixture rest for 15 minutes before cooking so the bread can absorb the egg.
  • Place glass baking dish on a baking sheet into the preheated oven.
  • Bake 35-40 minutes, until browned and puffed.
