PISTACHIO ROSEWATER MADELEINES



Pistachio Rosewater Madeleines image

These airy but buttery Pistachio Madeleines are the perfect little treat for any occasion! Infused with rosewater and dipped in creamy white chocolate!

Number Of Ingredients 12

90 g All Purpose Flour, (plus more if needed)
40 g Shelled, Unsalted Pistachios
1/2 tsp Baking Powder
1/8 tsp Salt
2 Large Eggs
1/2 cup White Sugar
1/2 tsp Vanilla
1/2 tsp Rosewater
1/4 tsp Pistachio Extract or Almond Extract
1/2 cup Unsalted Butter, (melted)
1/2 cup Melted White Chocolate, (for dipping)
Crushed Pistachios, (for decorating)

Steps:

  • Preheat oven to 350°F. Prepare 2 madeleine pans by brushing them well with cooking spray.
  • Add pistachios and flour to a food processor and pulse until the pistachios are well-ground and fine in texture (don't over process as pistachios will eventually turn into a paste). Place a medium sized mixing bowl over top of a food scale, then sift the flour mixture into the bowl, discarding any large pistachio pieces left over. The mixture should weigh 120g, if it weighs less, then add more flour until 120g is achieved.
  • Add baking powder and salt to the flour mixture, then whisk to combine. Set aside.
  • Add eggs and sugar to a stand mixer fitted with the whip attachment. Turn the stand mixer on high and whip the mixture for about 8 minutes. When done, the batter should look thick, tripled in volume, and it should ribbon off the attachment. Add vanilla, rosewater, and pistachio extract, mix until just combined.
  • Remove the bowl from the stand mixer, then add the dry ingredients to the bowl. Lightly whisk the dry ingredients into the batter, only mixing until just combined.
  • Delicately fold the the melted butter into the batter until it is well combined, but the batter isn't deflated. It may be easiest to do this in 2 steps: scoop some batter into the melted butter and fold together, then pour that into the rest of the batter, and fold until combined again.
  • Using a 1½" cookie scoop, scoop the batter into the prepare madeleine pans, using the cookie scoop to lightly spread the batter into the pan. Place into the freezer for 15 minutes.
  • Remove the pans from the freezer and place into the oven to bake for 11-12 minutes. Remove from oven and place onto a wire rack to cool.
  • When cooled, dip each madeleine into the melted white chocolate and decorate with crushed pistachios.

1 stick (4 ounces) unsalted butter, melted until browned
2 teaspoons vanilla extract
1 and 1/2 teaspoons lemon zest, finely grated
1 cup all-purpose flour
1 and 1/4 teaspoons baking powder
1/4 teaspoon salt
3 large eggs, at room temperature
3/4 cup granulated sugar
1/2 cup confectioners sugar, sifted, optional

Steps:

  • Cut the butter in tablespoons and place them in a heavy saucepan over medium heat. Once the butter has melted, reduce the heat to low and continue cooking, until the solids sink to the bottom of the pan and turn golden brown, about 10 minutes. Remove from heat and pour the browned butter into a small bowl. Stir the vanilla and lemon zest into the butter, then set aside to cool.
  • In a medium mixing bowl, whisk together the flour, baking powder, and salt. Set aside until needed.
  • In the bowl of a stand mixer fitted with the whisk attachment, beat the eggs at medium speed while gradually adding the sugar. Once all of the sugar has been added, increase the speed to medium-high and continue whipping the mixture until it's very thick and pale in color, about 3 to 4 minutes. Turn the mixer off and, using a silicon spatula, fold in the flour mixture in three additions, stirring just until combined. Fold in the butter mixture.
  • Cover the bowl and refrigerate for at least 4 hours, and up to 2 days.
  • 30 minutes before you're ready to bake, preheat the oven to 375 degrees (F). Generously brush the molds of your madeleine pan with butter, then lightly dust with flour.
  • Using a medium cookie scoop, spoon level scoops of the batter into the center of each mold. You don't need to spread the batter.
  • Bake for 12 minutes, or until the "bellies" have risen and they're golden brown.
  • Cool madeleines in the pan placed on a cooling rack for a minute or two, then gently loosen them from the molds. If they stick, carefully run a small knife around the edge of the cakes until they release.
  • Dust with confectioners' sugar and serve warm, with coffee or tea.

2/3 c. sugar
2 teaspoons rose water
1/4 teaspoon almond extract
1/4 pound {1 stick} unsalted butter, melted and cooled
1 c. all-purpose flour
1/4 c. cornstarch
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
Confectioners' sugar {optional}

Steps:

  • Preheat oven to 375°F. Using a pastry brush, brush melted butter in madeleine pan and dust with flour. In the bowl of an electric mixer fitted with a paddle attachment, beat the eggs, sugar, rose water and almond extract on medium speed for 3 minutes, or until light yellow and fluffy. Add the butter and mix. Sift together the flour, cornstarch, baking powder, and salt, and stir into batter with a rubber spatula. With a soup spoon, drop the batter into the pans, filling each shell almost full. Bake the madeleines for 10 to 12 minutes, until they spring back when pressed. Tap the madeleines out onto a baking pan lined with parchment paper and allow to cool. Dust with confectioners' sugar, if desired.

3/4 cups all purpose flour

  • Preheat oven to 375. Beat sugar and eggs together until thoroughly blended. Add lemon rind and melted butter. Mix to blend. Sift together dry ingredients. Add all at once to egg mixture. All-purpose flour, for dusting
2 large egg whites, at room temperature
1 cup yellow cake mix (recommended: Betty Crocker Supermoist Butter Recipe)
3 tablespoons unsalted butter, melted
3 tablespoons honey
2 tablespoons water
1 tablespoon lemon zest
1/2 teaspoon almond extract

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 325 degrees F. Butter 12 madeleine molds liberally with butter. Dust with flour and set aside.
  • Batter: In a medium bowl, using an electric hand mixer, beat the egg whites until frothy. Add the cake mix, butter, honey, water, lemon zest, and almond extract. Beat the ingredients on low speed for 30 seconds. Increase the speed to high and beat until the batter is smooth, about 2 minutes. Spoon the batter into the prepared molds. Bake until the edges are golden and the center of the cookies spring back when touched, about 15 to 16 minutes. Cool for 5 minutes. Using a small rubber spatula, remove the madeleines and arrange, scalloped side up, on a wire rack. Cool for 15 minutes and serve.
