4 cups uncooked elbow macaroni (16 oz)
1 cup diced cooked ham
1 cup sliced celery
1/2 cup chopped green onions
1/4 cup sweet pickle relish
1 jar (2 oz) diced pimientos, drained
4 hard-cooked eggs, chopped
1 cup salad dressing or mayonnaise
2 tablespoons yellow mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook and drain macaroni as directed on package. Rinse with cold water to cool; drain well.
  • In large bowl, mix cooked macaroni, ham, celery, onions, pickle relish and pimientos.
  • In small bowl, mix all dressing ingredients until well blended. Add to salad; mix well. Gently stir in hard-cooked eggs. Serve immediately, or cover and refrigerate until serving time.

Are you looking for an easy, fuss-free recipe to make for a potluck? Give this one a try, because you can't get much easier than a recipe with only two steps. True, there is a little prep work involved, but nothing more intense than chopping a little ham and a few vegetables. This recipe is similar to a layered salad in that you can do a lot of the prep work in advance and store everything in air-tight containers in the refrigerator. When it comes time to assemble the salad, simply boil some pasta, stir in the ham, vegetables, mayonnaise and seasoning, then cover and chill at least two hours. This salad recipe, sent in by Keva Colston of Baton Rouge Louisiana, was published in the June 2007 issue of Southern Living and quickly garnered many favorable reviews and comments from readers. It seems most Southern cooks have a favorite cold pasta salad or layered salad they like to make on a warm afternoon. Not only are pasta and layered salads refreshing and satisfying as a main dish salad, they are versatile enough so that you can swap out ingredients with whatever you have in the fridge or garden.

1 cucumber, peeled, seeded, and diced
1 tomato, seeded and diced
1 small red bell pepper, diced
1 small yellow bell pepper, diced

1 1/2 teaspoons Cajun seasoning
2 teaspoons lemon juice

  • Prepare macaroni according to package directions. Drain and rinse with cold water until cool.

1 lb elbow macaroni, cooked
1/2 bunch green onion
1 large tomato
32 oz miracle whip (divided)
2 c boneless smoked ham
1 Tbsp black pepper
1/2 Tbsp celery seed

Steps:

  • 1. Cook macaroni as per directions. After macaroni is done I rinse under cold water to stop cooking process and cool it off before adding the other ingredients.
  • 2. Dice green onions and tomato and place in large bowl. Chop smoked ham into small bite size chunks and place into bowl. Add cooled macaroni and mix. Add half of the Miracle Whip, pepper and celery seeds to the macaroni mixture and chill.
  • 3. I usually make this in the morning and later on that evening or the next day I add more of the remaining Miracle Whip to the salad since the macaroni absorbs the dressing. Mix well and serve.
  • 4. I have also made this with regular diced ham (if I didn't have a ham already smoked) and I have also added a package of Oscar Mayer real bacon bits to the macaroni salad along with the ham to give it a differant twist.

Kosher salt
1 pound elbow macaroni
1 1/2 cups mayonnaise
3 stalks celery, small diced (about 1 1/2 cups)
1/2 bunch green onions, greens parts only, sliced (about 1/2 cup), plus for garnish
5 tablespoons apple cider vinegar
3 tablespoons whole-grain mustard
3 tablespoons bourbon whiskey
2 tablespoons honey
2 teaspoons salt
1 teaspoon ground black pepper
1/2 to 1 teaspoon liquid smoke

Steps:

  • In a large pot of heavily salted water, cook the macaroni according to package directions for al dente. Drain and add to a large bowl along with 2 tablespoons of the mayonnaise, and the celery and green onions. Toss well.
  • In a medium bowl, combine the remaining mayonnaise and the cider vinegar, mustard, bourbon, honey, salt, pepper and liquid smoke. Stir until smooth, then add to the macaroni. Taste and adjust the seasoning as needed.
  • Refrigerate for 1 to 3 hours to allow the flavors to meld. Garnish with green onions before serving.

½ cup cubed Cheddar cheese
¼ cup chopped celery
