1 (18.5 ounce) package chocolate cake mix
½ cup vegetable oil
1 egg
1 (12 ounce) container prepared chocolate frosting
2 cups milk chocolate chips
2 cups miniature marshmallows
½ cup chopped almonds, lightly toasted, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Mix cake mix, oil, and egg together in a bowl. Spread batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 15 minutes. Remove pan and leave oven on.
  • Pour frosting into a microwave-safe bowl. Cook in the microwave until warmed through, about 30 seconds. Pour frosting over the baked cake mix crust. Top with 1/2 the chocolate chips and 1/2 the almonds. Add marshmallows to cover. Top with remaining chocolate chips and almonds.
  • Bake in the hot oven until top is a nice golden brown, about 10 minutes. Let cool before cutting.

24 graham crackers (12 double ones)
2 cups miniature marshmallows
1 (6 ounce) package semi-sweet chocolate chips
1 cup salted cashews
1/2 cup butter
1/2 cup dark brown sugar, firmly packed
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F.
  • Spray a 9-inch by 13-inch cake pan with nonstick spray.
  • Line the bottom of the pan with a layer of graham crackers. It's OK to overlap a bit.
  • Sprinkle the graham crackers with the marshmallows.
  • Sprinkle the marshmallows with the chocolate chips.
  • Sprinkle the chocolate chips with the cashews.
  • In a small saucepan over low heat, combine the butter and brown sugar. Stir the mixture constantly until the sugar is dissolved.
  • Turn off the heat, move the saucepan to a cool burner, and stir in the vanilla.
  • Drizzle the contents of the saucepan evenly over the contents of the cake pan.
  • Bake at 350 degrees F for 10 to 12 minutes or until the marshmallows are golden on top.
  • Cool in the pan on a wire rack.
  • When the cookies are cool, cut into brownie-sized bars and serve.
