8 slices white bread or Texas toast
6 ounces softened butter
3 tablespoons stone-ground mustard
8 slices baked ham
8 slices Muenster cheese
3 eggs beaten
1/4 cup whole milk
Salt and freshly ground black pepper

Steps:

  • Spread all the bread slices, 1 side only, with the butter and mustard. Add the 2 slices of ham and 2 slices of cheese to each of 4 bread slices. Cover with remaining bread to make a traditional sandwich.
  • In a large shallow bowl add the beaten eggs and the whole milk. Season with salt and pepper, to taste, and combine well. Dip each sandwich into the egg mixture making sure you cover the whole sandwich, including the sides. Place on a large platter until ready to cook. Heat the remainder of the softened butter in a large skillet. When the butter has melted and the pan is very hot, add the sandwiches and cook turning once, until golden brown, about 4 to 6 minutes. Transfer to serving plates and serve immediately.

2 tablespoons canola oil
7 tablespoons unsalted butter, at room temperature
3 large yellow onions, sliced thin
1 tablespoon sherry vinegar
2 teaspoons sugar
1 teaspoon kosher salt
12 slices brioche
12 ounces honey ham, sliced thin
10 ounces Emmentaler cheese, sliced thin

Steps:

  • Heat the canola oil and 1 tablespoon of the butter in a large saute pan over medium heat. Once the butter is melted, add the onions and cook, stirring occasionally, until dark brown and caramelized, 25 to 35 minutes.
  • Add the vinegar, sugar and 1/4 cup water to the pan. Continue cooking, scraping up any browned bits, until the liquid is completely evaporated and the onions are soft and jammy, about 10 minutes. Transfer to a bowl and reserve.
  • Heat a stovetop griddle to medium low. Butter one side of each brioche slice with 1/2 tablespoon of the remaining butter. Flip the bread buttered-side down and place 2 slices of ham on half of the slices. Top the ham with a dollop of the caramelized onions and spread evenly over the ham. To the empty 6 slices of bread, add 2 slices of cheese. Fold the two halves together to make sandwiches.
  • Place the sandwiches on the griddle and cook until golden brown, 2 to 3 minutes. Using a spatula, flip the sandwiches to toast on other side and melt the cheese, another 2 to 3 minutes. Remove to a platter and cover loosely with foil. Hold the sandwiches in a warm oven until ready to serve.
  • Slice the sandwiches diagonally in half to serve.

2 cups grated Gruyere or Swiss cheese
1/2 cup mayonnaise
3 tablespoons Dijon mustard
1 tablespoon prepared horseradish
6 slices Pullman bread or other high quality white bread
9 to 12 slices ham
2 tomatoes, thinly sliced
Butter, as needed

Steps:

  • In a medium bowl, mix the grated cheese, mayonnaise, Dijon mustard, and horseradish. Place a liberal layer of the cheese on 1 side of each of the 6 slices of bread. Place the ham and tomato slices on 3 of the pieces of the cheese topped bread, then top them with the remaining 3 slices of bread to form a sandwich. Place butter in a large saute pan over low to medium heat. Add the sandwiches to the melted butter and slowly brown them on both sides while allowing the cheese to melt inside. Cut the crusts from the sandwiches and then cut them crosswise into 8 hors d'oeuvre size portions. Serve warm.

2 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups hot milk
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Pinch nutmeg
12 ounces Gruyere, grated (5 cups)
1/2 cup freshly grated Parmesan
16 slices white sandwich bread, crusts removed
Dijon mustard
8 ounces baked Virginia ham, sliced but not paper thin

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter over low heat in a small saucepan and add the flour all at once, stirring with a wooden spoon for 2 minutes. Slowly pour the hot milk into the butter?flour mixture and cook, whisking constantly, until the sauce is thickened. Off the heat add the salt, pepper, nutmeg, 1/2 cup grated Gruyere, and the Parmesan and set aside.
  • To toast the bread, place the slices on 2 baking sheets and bake for 5 minutes. Turn each slice and bake for another 2 minutes, until toasted.
  • Lightly brush half the toasted breads with mustard, add a slice of ham to each, and sprinkle with half the remaining Gruyere. Top with another piece of toasted bread. Slather the tops with the cheese sauce, sprinkle with the remaining Gruyere, and bake the sandwiches for 5 minutes. Turn on the broiler and broil for 3 to 5 minutes, or until the topping is bubbly and lightly browned. Serve hot.
