ROBYN'S ITALIAN BAKED WING DINGS

I cook these for a main dish or as an appetizer when I am entertaining. My measurements can be adjusted because I don't usually measure the ingredients. These tend to stick to the pan, so be careful when flipping.

20 chicken wings (wing dings)
1 tablespoon olive oil
1 tablespoon Worcestershire sauce
1 -1 1/2 teaspoon seasoning salt
1 -1 1/2 teaspoon garlic powder
1 -1 1/2 teaspoon black pepper
1 teaspoon ground red pepper
1 1/2 teaspoons italian seasoning
1 teaspoon dried parsley flakes

Steps:

  • Preheat oven to 425 degrees.
  • In a bowl, mix thawed wing dings with the above ingredients.
  • Line a baking sheet with foil and spray thoroughly with a non-stick cooking spray.
  • Align the wing dings on the baking sheet and bake for 45 minutes or until done, flipping half-way through. (I cook my wings this long or longer because I like the skin to be crispy instead of gummy).
  • Note: When flipping and removing, use tongs and pick them up carefully. The wings will stick and you don't want half of your meat stuck to the foil.

I love all types of chicken wings. I thought that a nice Italian style wing would be delicious. I came up with this recipe. My family loves them. It is a bit zesty with the Italian herbs, and a hint of garlic. The Parmesan cheese tops it off nicely. These are great for game day or a great anytime party appetizer. Enjoy!

1 1/2 cup(s) extra virgin olive oil light colored
1/2 cup(s) red wine vinegar
1 teaspoon(s) onion powder
2 teaspoon(s) oregano, dried
2 teaspoon(s) basil, dried
2 teaspoon(s) parsley flakes
1 teaspoon(s) salt
- black pepper to taste
4 clove(s) large cloves garlic minced
1 teaspoon(s) rosemary
2 teaspoon(s) sugar if desired (not necessary)
2 tablespoon(s) optional dijon mustard for zesty wings only
3-4 pound(s) chicken wings
TOPPING FOR TOSSING
4 tablespoon(s) butter
4 clove(s) garlic large piece grated or minced
1 teaspoon(s) garlic salt
- pepper to taste
1/2 teaspoon(s) italian seasoning dried
4 tablespoon(s) drippings from wings
1/2 -3/4 cup(s) parmagiano origiano or fresh grated parmesan cheese

Steps:

  • Snap wings on joint and cut. Cut tips off at joint. You need a nice sharp knife.
  • dMix all ingredients for marinade in a food processor, or blender. for 1-2 minutes. Cut tips off wings. Reserve half the marinade in refrigerator. Marinade wings in half the marinade. in a bowl or large ziplock style bag. Make sure to distribute marinade well on all sides of wings. Place in wings in refrigerator for at least 2 - 4 hours or overnight. The longer you marinade the wings. The stronger the flavor will be. note: The longer you marinade. The stronger the flavor.
  • Line baking sheet with foil. Remove wings from marinade. Place wings pieces on foiled pan. broil on high about 8 inches to a foot away from broiler heat. Broil until browned. Turn and broil the other side of wings. Reduce oven to 400° and bake on center rack until cooked through and crispy. Reserve 4 tbs drippings.
  • Get the marinade you reserved. Place in a large bowl. Remove chicken from pan. Place chicken in the Bowl. Toss chicken in marinade.
  • Place drippings in a large pan. Like a Dutch oven. Into drippings add the butter, garlic, garlic salt, pepper. italian seasoning. Heat until butter melts. Stir to combine. Add the wings. Tossing in mixture about 3 minutes Over heat. Do not burn Garlic. Remove wings and toss with Parmesan cheese, Italian seasoning and serve.

1/2 cup maple syrup
1/2 cup catsup
1/4 cup soy sauce
2 teaspoons dry mustard
1 teaspoon ginger
1/4 teaspoon garlic powder
2 1/2 lbs chicken drummettes

Steps:

  • Combine all ingredients except chicken in saucepan. Bring to boil, and simmer 5 minute Cool.
  • Place drummettes in bowl, or zippered plastic bag. Add cooled Sauce. Coat chicken evenly and refrigerate several hours or overnight.
  • Place drummettes, skin side up, on FOIL-LINED rimmed baking sheet. Spoon leftover Sauce over them.
  • Bake 45-50 minutes at 400º, until done, basting with sauce occasionally.

1 cup beer
1/4 cup unsulphured dark molasses
1/4 cup creamy peanut butter
1/4 cup Worcestershire sauce
1 1/2 tablespoons chili powder
1 medium lime, juice of
1/2 teaspoon dry mustard
1/4 teaspoon anise seed, toasted and ground
1/4 teaspoon salt
1 1/2 dozen chicken wings

Steps:

  • Preheat oven to 350ºF.
  • Grease a large baking pan or dish.
  • Combine everything except the wings in a large, heavy pan.
  • Simmer them over medium heat 15 to 20 minutes, until they have reduced to a thick sauce.
  • While the sauce simmers, prepare the chicken wings.
  • With a butcher knife, remove the wing tips, then cut each wing in half at the joint.
  • Add the wings to the sauce, and stir to coat them.
  • Ladle the wings and the sauce into the baking dish.
  • Bake for 25 minutes, then stir the wings in the sauce.
  • Turn the heat up to 425ºF and bake an additional 10 minutes, or until the sauce glazes the wings.
  • Serve the wings hot with ranch dressing, if desired.
  • These are a Texas specialty!

This recipe is from Carol Keates, the middle daugher in our family. I was shocked when she sent this one as she is known for her baking! this sounds really yummy though and I can't wait to try it out. Prep time does not include time marinating overnight.

1/2 cup maple syrup (such as Log Cabin)
1/2 cup ketchup
1/4 cup soy sauce
2 teaspoons dry mustard
1 teaspoon ginger
1/4 teaspoon garlic powder
2 1/2 lbs chicken wings, tips removed

Steps:

  • Combine ingredients from syrup to garlic powder, mixing well.
  • Bring to a boil and cook over medium heat for about 6 minutes.
  • Cut wings in half at joint, place in shallow foil lined baking dish.
  • Pour marinade over chicken wings.
  • Cover and marinade over night.
  • Brush wings with marinade before baking.
  • Bake at 400 degrees for 45-60 minutes. Spoon sauce over wings now and again.
  • Serve hot with sauce.
