GREAT GRAINERY BREAD - ROBIN HOOD
Another wonderful, nutty bread. Very easy to make. I found the loaf pan suggested to be too small. My loaf hung over the edges quite a bit. Next time I'll bake in a 9 x 5 pan. Also, I put the rolls in a 10 inch quiche dish. I think the 9 x 9 square pan would have also been too small. As you can see from the photo.....there wasn't much left to photograph :)

Steps:
- Dissolve 1 tsp sugar in 1/2 cup warm water in large bowl. Sprinkle in yeast. Let stand 10 minutes, then stir well.
- Heat 1 cup water, milk, brown sugar and butter together to lukewarm, stirring to dissolve sugar. Add milk mixture and 2 cups flour to the yeast mixture. Beat with a wooden spoon or electric mixer until smooth and elastic.
- Stir in oats, bran, sesame seeds, sunflower seeds, salt and 2-3/4 cups of remaining flour gradually. If necessary, add more flour to make a soft dough which leaves sides of bowl. Turn out onto a floured board. Round up into a ball.
- Knead dough, adding more flour as necessary until dough is smooth, elastic and no longer sticky (about 10 minutes).
- Place in a lightly greased bowl. Cover with greased waxed paper and a tea towel.
- Let rise in a warm place (75°- 85°F/ 24°- 29°C) until doubled in size (45 - 60 minutes).
- Punch down. Turn out onto a lightly floured surface. Divide into 2 portions.
- Shape one portion into a loaf. Place seam side down in a greased 8 1/2" x 4 1/2" loaf pan. Shape the other portion into 16 balls. Place in a greased 9" (23 cm) square pan. Cover both with a tea towel.
- Let rise in warm place until doubled (35 - 45 minutes).
- Bake the loaf at 400°F for 25 - 30 minutes. Rolls at 375°F for 15 - 20 minutes. Remove from pans immediately. Cool on wire racks.
APPETIZER TOMATO CHEESE BREAD

- Preheat oven to 400°. In a small skillet, heat butter over medium heat. Add onion and cook until tender. Remove from the heat. Stir in the cheese, sour cream, mayonnaise and seasonings; set aside. , In a bowl, combine the baking mix and milk to form a soft dough. Turn dough onto a well-floured surface; knead lightly 10-12 times. Pat into a greased 13x9-in. baking dish, pushing dough up sides of dish to form a shallow rim. Arrange tomato slices over top. Spread with topping; sprinkle with paprika. , Bake for 25 minutes. Let stand for 10 minutes before cutting.

THE BEST HEALTHY WAFFLES (LOW FAT)
These are basically the only waffles I make. They are super simple, and a healthy, filling breakfast. I use Robin Hood Nutri Flour Blend for these. You can add fresh fruit or chocolate chips to the batter for a twist. I have also make chocolate waffles with this recipe, substituting milk for chocolate milk and adding some cocoa and a handful of chocolate chips.

- Sift dry ingrediants in one bowl.
- separate one of the eggs. add the yolk and the rest of the wet ingredients together and whisk.
- beat the egg white in a clean bowl until peaks form.
- Add the wet into the dry, mixing until just combined. fold in the egg white.
- Pour into a preheated greased waffle iron, and I cook mine for 3-4 minutes with my waffle iron. This recipe yeilds 16 small square waffles for me (using just under 1/3 cup of batter per waffle).
- These freeze well.

- Preheat oven to 400F.
- Grease muffin pans.
- COMBINE flour, sugar, baking powder, baking soda, salt, cinnamon and cheeses in large mixing bowl.
- BEAT egg, buttermilk, oil and apple together thoroughly.
- ADD liquid ingredients all at once to dry ingredients.
- Stir just until moistened.
- FILL greased muffin cups 3/4 full.
- SPRINKLE tops with 1/4 cup cheddar cheese if desired.

LOBSTER CREPES
Copied out of a Robin Hood flour booklet from 1985. The first paragraph of listed ingredients is for the crepes and the second for the lobster filling.

Steps:
- Crepes.
- Beat eggs, flour and seasonings. Gradually add milk, beating until smooth. Refrigerate 2 hours. For each crepe, pour 2-3 tbsp of batter in a heated, oiled crepe pan. Brown lightly on each side. Keep warm in a very low oven.
- Lobster Filling.
- Preheat oven to 425°. Break lobster into pieces. Melt butter and saute onion and mushrooms 3-5 minutes. Stir in flour and seasonings. Add milk gradually. Cook, stirring constantly until thickened. remove from heat. Add wine and lobster. Mix well.
- Spoon 3 tbsp filling into each crepe and roll up. Arrange crepes on ovenproof platter. Brush with half the melted butter. Sprinkle with cheese, mixed with crumbs. Bae at 425° for 5-8 minutes. Stir remaining melted butter into remaining sauce and serve over crepes.

ANGEL CRISP COOKIES
I've been making these wonderfully light cookies since 1964. I found the recipe in a old Robin Hood Flour cook Book.

Steps:
- Cream together sugars, butter, shortening, egg and vanilla.
- Mix dry ingredients together.
- Add to creamed mixture,mix throughly.
- Shape into 1-inch balls.
- Dip top half in water then sugar.
- Place into ungreased cookie sheet, press down in center with finger.
- Bake 425° for 8-10 minutes.
- I lised only baking time, not prep time.
