1 1/4 cups water
1/4 cup nonfat dry milk powder
2 tablespoons honey
1 tablespoon butter or 1 tablespoon margarine
1 1/2 teaspoons salt
3 cups bread flour
1 1/2 teaspoons fast rising yeast
1/2 cup old fashioned oats
1/2 cup raisins

Steps:

  • Measure carefully, placing all ingredients except oats and raisins in the bread machine.
  • Set program to basic cycle and medium crust setting; press start.
  • Add oats and raisins at the end of the first kneading cycle.
  • Remove baked bread from pan and cool on wire rack.

This recipe came from the internet, and it is our favorite raisin bread. We especially love it as raisin toast for breakfast.

Number Of Ingredients 10

2/3 cup raisins, soaked in
3 tablespoons vanilla, for at least one hour (or microwaved - see below)
1 1/4 cups buttermilk (or plain milk soured with a tsp of white vinegar)
1 egg
1 teaspoon salt
3 tablespoons butter or 3 tablespoons margarine
2 tablespoons sugar
3 1/2 cups all-purpose flour or 3 1/2 cups bread flour
1 teaspoon cinnamon (optional)
1 1/2 teaspoons yeast

Steps:

  • Select basic or SWEET setting.
  • Special Notes: The recipe calls for 2 tsp of yeast, but I find this way too much yeast- blows the top off the machine!
  • This makes a 1 1/2 lb loaf which basically fills my 2 lb machine.
  • DO use pure vanilla extract for best results.
  • If you don't have the time to soak the raisins ahead of time (I never do) just microwave the raisins and vanilla for 1 minute on high or med-high in a micro-safe bowl.

I found this recipe on allrecipes.com and wanted to post it here for safe keeping. This is the best thing that has ever come out of my bread machine! A light fluffy tasty bread that my family gobbled up and asked for more! Remove your predetermined ideas of banana bread and try this yeast bread, the banana flavor is very subtle, but I think it adds to the nice texture. I am posting the recipe as I found it, but be warned I had to reduce the amount of yeast I used because when i used it with the full 2 1/2 teaspoons the dough spilled over the top of my ABM. I had better results with 2 tsp.

1 cup milk
2 tablespoons butter
2 bananas, ripe
3 1/2 cups all-purpose flour
2 tablespoons white sugar
1 teaspoon salt

2 1/2 teaspoons dry active yeast

1/2 cup walnuts, chopped

Steps:

  • Place milk, butter, bananas (no need to mash, the machine will do it for you!), flour, sugar, salt, cinnamon, and yeast in the AMB, in the order the manufacturer recommends (I did it in the order listed).
  • Select basic setting, press start. If your bread machine has a fruit/ nut setting add the raisins and nuts at the signal, or around 5 minutes before the kneading cycle has finished.

Sourdough Raisin Walnut Bread (Abm) image

About a month ago, my landlord told me about a bread that he and his wife love, made by a local bakery, Ace Bakery. I thought I would try to mimic the recipe and make some for them, so I had a peek on their website to see what ingredients are in it, only to find it contained sourdough, which I'd just become interested in making. Fast forward to a month later, I have a healthy starter, and gave this a try with excellent results! Many thanks to chef #2586, whose recipe #31998 gave me the basic tools to create this one from. Cooking time does not include time for bread machine to process.

2 cups proofed sourdough starter
2 tablespoons butter, melted
1/2 cup milk
1 teaspoon salt
1/4 cup honey
1 cup whole wheat flour
2 cups white bread flour
1 cup raisins
1 cup walnuts
cornmeal, for dusting baking sheet

Steps:

  • Place all ingredients, except raisins and walnuts, into bread machine pan, in order that they are listed. Process on dough setting. When the machine beeps for additions, add the raisins and walnuts (or around 3-5 minutes before the end of the kneading cycle.).
  • When cycle is complete, remove dough to lightly floured surface and shape into 2 round loaves (or one large loaf, your choice.).
  • Place round loaves on cornmeal coated cookie sheet, cover and let rise until bread has doubled in size. Be patient, sourdough without the addition of commercial yeast can take up to several hours to rise - mine typically takes three hours.
  • Bake at 375 degrees F for 25 to 30 minutes (30-40 if making one loaf.) Cool on wire rack.
  • NOTE: To proof your starter, feed it with equal parts of flour and lukewarm water, then let it sit overnight or up to 12 hours, covered. This is what develops the characteristic sour flavor and the longer the proof, the sourer it will be. If you start with 1 cup of starter and feed it 1 cup each of water and flour, you should have enough to make your bread and save the rest to start your next batch.

CINNAMON OATMEAL RAISIN BREAD



Cinnamon Oatmeal Raisin Bread image

This is a great bread lightly toasted and spread with honey or cream cheese. I got this recipe from my old West Bend BM. I no longer have the BM but I make this using the KA mixer. Use Old Fashion or Quick Oats, not instant. If you use dry active yeast, increase it to 2 1/4 teaspoons. Also, if desired, you can use AP flour or substitute one cup of whole wheat for one cup of the bread flour. Recipe makes a pound and a half loaf.

10 ounces milk, 90-100 f
3 cups bread flour
3/4 cup oats
2 tablespoons brown sugar, packed
1 1/2 teaspoons salt
1 1/2 teaspoons ground cinnamon

1/2 cup raisins

Steps:

  • If using a BM, add warm milk to pan, then add flour, oats, brown sugar, salt and cinnamon to pan. Place butter in corners of pan, make a well in center of dry ingredients and add yeast. Program for Specialty and desired Bread Color. When the signal alerts sound durring kneading cycle add the raisins (if your machine does not have an alert for add ins near the end of the kneading cycle, you will need to set your own timer, you want to add the raisins near the end of the kneading cycle).

  • If using a stand mixer, add dry ingredients to pan, add milk and butter, mix with paddle until a ball forms.
  • Cover and let rest for 20 minutes.
  • Change to the kneading hook and knead for 4 minutes. Let rest for 5 minutes. Knead 4 minutes more, then add raisins and knead until raisins are incorporated.
  • Form into a ball and place in a bowl, cover and let rise until doubled.
  • Form into loaf and put into greased pan (non-stick spray works well). Cover and let rise until doubled.
  • Bake in pre heated 350 f oven for about 40 minutes. Internal temp should register at least 190 f on an instant read thermometer.
  • Although the original recipe calls for only 1/2 cup raisins, I use a full cup.

This is one of my favorite ABM loaves. It is substantial without being heavy. I always end up leaving out the nuts though. Cooking time will vary with ABM model.

  • Add in the order directed by your ABM.
  • At the beep, add the chopped nuts.
