We added Cheddar and chives to this classic and quick side that goes from mixing bowl to oven in less than 10 minutes. It bakes up golden brown and puffy -- perfect for a potluck or holiday gathering.

One 15-ounce can whole corn kernels, drained
One 15-ounce can creamed corn
1 large egg
1 1/2 cups shredded sharp Cheddar
1 cup yellow cornmeal
1 cup sour cream
6 tablespoons unsalted butter, melted
1/4 cup chopped fresh chives
1/4 cup sugar
2 teaspoons baking soda
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the whole corn, creamed corn, egg, Cheddar, cornmeal, sour cream, butter, chives, sugar, baking soda, 1 1/2 teaspoons salt and a generous amount of black pepper to a large bowl and stir until well combined.
  • Pour the mixture into a 2-quart baking dish and bake until lightly golden on the outside and set in the middle, 30 to 35 minutes.

I robbed from one recipe to give to another, hence the name. With corn, bacon, cream cheese, butter and cheddar, you just can't go wrong. Enjoy! Great side dish with that Easter ham!

Number Of Ingredients 10

4 ears of sweet corn, cut from cob
1/2 large red onion, diced
4-5 slice smoked bacon, cooked, crumbled (reserve bacon fat)
4 oz cream cheese, softened, cubed
1 c cooked rice
1 c cheddar cheese, shredded
2 Tbsp butter
1 1/2 c milk, separated
2 eggs, beaten ( with 1/2 cup of the milk)
salt and pepper to taste

Steps:

  • 1. Cook 1/2 cup dry rice (this will make 1 cup) Set aside.
  • 2. Cut fresh (raw) corn from the cob. Set aside
  • 3. Fry bacon till crisp. Retain bacon fat. Crumble bacon and set aside.
  • 4. Saute onion in bacon fat till tender. Add butter and cut corn. Saute for 10 min. or till caramelized.
  • 5. Add cream cheese and 1 cup milk. Heat until cheese melts. Add cooked rice. Season to taste with salt and pepper. Cool for about 15 min.
  • 6. Beat 2 eggs with remaining 1/2 cup milk. Add to mixture. Add shredded cheddar. Mix well. Pour into buttered casserole dish.
  • 7. Top with crumbled bacon. Bake for 30 min. at 350 degrees

We kicked up this easy corn casserole with a jalapeño to balance the creaminess of the cream-style corn, sour cream and butter.

2 pkg. (8-1/2 oz. each) corn muffin mix
2 cans (14.75 oz. each) cream-style corn
1 tub (16 oz.) sour cream
3/4 cup butter, melted
1 small jalapeño pepper, seeded, finely chopped

Steps:

  • Heat oven to 375ºF.
  • Mix muffin mix, creamed corn and sour cream in large bowl until blended. Add melted butter; mix well. Stir in peppers.
  • Spoon into 13x9-inch pan sprayed with cooking spray.
  • Bake 55 min. to 1 hour or until golden brown. Cool 5 min. before serving.
