Steps:
- Arrange asparagus and onion separately on 2 baling sheets coated with cooking spray.
- Bake at 400 degrees F. 12-15 minutes for the asparagus and 15-18 minutes for the onion until lightly browned, stirring twice.
- Combine the vinegar and remaining ingredients in a small jar and shake vigorously.
- Arrange asparagus and onions on a platter.
- Pour mixture over and serve at room temperature.

- Heat oven to 425ºF.
- Line two 15 1/2x10 1/2-inch rimmed baking sheets with foil.
- Gently toss all ingredients in a large bowl until vegetables are coated with oil.
- Spread evenly on baking sheets.
- Roast 20 to 25 minutes stirring once until vegetables are slightly charred and tender.
- If preparing the asparagus and onion ahead, store them in a plastic bag large enough to accommodate the rest of the ingredients so you won't have to dirty a bowl.

I saw this on a Rachel Ray episode on Food Network and thought I'd give it a try. I really enjoyed it. I made one change by adding the balsamic vinegar.

Steps:
- Heat the extra-virgin olive oil, 3 turns of the pan, in a skillet over medium to medium-high heat.
- Add onions and cook until caramel colored, stirring occasionally.
- Pour 1-inch of water into a skillet and bring to boil.
- Add salt and asparagus and cook 3 minutes, drain.
- Stir mustard, balsamic vinegar, thyme and pepper into onions and toss with asparagus to coat.

- Preheat oven to 400°F.
- Line a large jelly-roll pan with parchment paper. Set aside.
- In a small pot, heat the oil, garlic, onion powder, and parsley on medium-low heat. Cook for 3 minutes, until the garlic mixture is fragrant but not browned.
- Spread the asparagus in a single layer on the prepared pan. Lightly sprinkle with coarse sea salt and freshly ground pepper. Drizzle on the garlic-oil mixture.

- Preheat oven to 450°F.
- Spread asparagus in a single layer on a shallow baking pan or baking sheet.
- Drizzle lightly with olive oil.
- Sprinkle salt to taste.
- Spread minced garlic over all stalks.
- Place pan in oven for 10-12 minutes--stalks should be roasted, but still crisp.
- Serve immediately.
FARRO WITH VIDALIA ONION AND ASPARAGUS
Steps:
- Bring a medium pot of water to a boil.
- Heat the olive oil in a large skillet over medium heat. Add the onions and 1/4 teaspoon salt and cook, stirring occasionally, until soft and translucent, about 25 minutes. Increase the heat to medium high and cook, stirring often, until golden brown, 5 to 10 minutes more.
- While the onions cook, add the farro to the boiling water along with 1 teaspoon salt. Boil until tender but still very toothsome, about 20 minutes. Add the asparagus and cook until crisp-tender, about 2 minutes; drain well.
- Add the farro and asparagus to the caramelized onions along with the parsley, vinegar and red pepper flakes. Season with salt and pepper. Transfer to a bowl and serve.

- Before peeling asparagus, start on the marinade. In a heavy saucepan, cook onions slowly in the olive oil with garlic, zest, herbs, and bay leaf. When tender (about 10 minutes), add peppercorns, wine, lemon juice, water, and salt. Cover and simmer slowly for about 20 minutes.
- Peel asparagus. Lay in a flameproof casserole dish and pour marinade over so asparagus is just covered with liquid (more water may be added if needed). Bring to a boil, cover, and simmer slowly for 20 minutes, or until asparagus is tender. Take out asparagus and arrange on serving platter. Boil down the cooking liquid until lightly syrupy and spoon over the asparagus. Sprinkle with parsley.

ROASTED VIDALIA ONION SOUP WITH BLACK TRUFFLE OIL

- In a Dutch oven or casserole set over moderate heat melt the butter. Add the shallots and cook, stirring, for 3 minutes. Add the garlic cloves, thyme, onions, chicken stock and salt and pepper, bring to a boil on top of the stove and cover with foil and lid. Transfer Dutch oven to a preheated 325 degree oven and cook for 4 hours. Discard thyme.
- In a blender puree soup, in batches, adding butter, a little at a time, until incorporated. Return to pan and heat until hot. Correct seasoning. Ladle soup into soup bowls and drizzle with truffle oil.

Steps:
- wash Asparagus cut up to 1 inch off bottom of stalks and discard
- cut the stalks in half and toss in bowl
- peel and cut the Vidalia in half then slice each half into 1/4 strips and toss into bowl with Asparagus
- add the other ingredients (Garlic, Oil, salt & pepper)and toss into the bowl with the Asparagus and Onions. Toss entire contents until coated well.
- Pour bowl contents onto a deep wide bread pan and spread out onto pan. Place into oven set to BROIL. Broil for about 10 minutes at a time stirring in between until it is roasted and onions appear slightly translucent.
- Remove from Oven and using tongs or spatula, place the contents into a serving dish and Serve. You can add Lemon juice to your serving if you like.
