CURRY ROASTED SWEET POTATOES



Curry roasted sweet potatoes image

Roasted sweet potatoes flavored with curry spices and roasted until soft, sweet and slighly caramelized is a delicious and easy side dish recipe.

4 sweet potatoes (peeled and cubed )
2 tbsp oil
1 tbsp Garam Masala
1 tsp cinnamon
1 tsp turmeric
1-2 tsp salt

Steps:

  • Preheat the oven to 200°C/400°F.
  • Place the cubed sweet potatoes in a large mixing bowl.
  • Pour over the oil and spices. Transfer to a large sheetpan.
  • Place in the oven and roast for 30-45 minutes, turning half way, until the sweet potatoes are soft and starting to caramelize.
  • Remove from the oven and serve.

1 1/2 tablespoons virgin coconut oil
1 3/4 pounds sweet potatoes, peeled and cut into 1/2-inch chunks
2 teaspoons light brown sugar, packed
3/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/4 teaspoon grated nutmeg

Steps:

  • Heat oven to 350 degrees. Melt the coconut oil in a small saucepan over low heat.
  • In a large bowl, toss together potatoes, coconut oil, sugar, salt, pepper and nutmeg.
  • Spread the potatoes in an even layer on a large baking sheet. Roast, tossing occasionally, until soft and caramelized, about 1 hour.

These easy, butter-free, dairy-free mashed yams from Chloe Coscarelli, the vegan cookbook author, are gussied up with creamy coconut milk, maple syrup and warm autumn spices.

3 large garnet or other yams, peeled and cut into 2-inch pieces
1 cup canned coconut milk, mixed well before measuring
1/3 cup maple syrup or packed brown sugar
1/2 teaspoon sea salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/3 cup currants, soaked in warm water for 10 to 15 minutes and drained

Steps:

  • Place yam pieces in a large pot and cover with cold water. Cover and bring to a boil. Cook until fork-tender, 15 to 20 minutes. Drain and return to pot.
  • Add coconut milk, maple syrup, salt and spices, and mash with a potato masher until smooth. Adjust seasoning to taste. Add more coconut milk for a creamier texture and more maple syrup for a sweeter flavor. Mix in currants and serve.
