ROASTED WINTER SQUASH WITH GORGONZOLA CHEESE



Roasted Winter Squash with Gorgonzola Cheese image

1 medium butternut squash, or other winter squash (about 1-1/2 pounds), rinsed
2 tablespoons unsalted butter, melted
1/2 teaspoon kosher salt
Freshly ground black pepper
1 to 2 ounces Gorgonzola cheese, crumbled

Steps:

  • Preheat oven to 400 degrees F. Peel the squash if desired. Halve the squash and scoop out and discard the seeds and strings. Cut into 1-inch wedges.
  • Brush a roasting pan lightly with some of the butter. In a medium bowl, toss the squash with the remaining butter and season with the salt. Spread out on the pan and roast for about 30 minutes. Turn the wedges over with a pancake-style spatula and continue to roast until tender and browned, about 30 minutes more. Transfer the squash to an ovenproof serving dish, season with pepper to taste and sprinkle with the cheese, while still hot, to melt slightly (if needed, return the squash to the oven to melt the cheese). Serve.

1 cup winter squash seeds
1 tablespoon olive oil
½ teaspoon salt, or to taste

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C). Line a baking sheet with parchment paper or aluminum foil.
  • After removing the seeds from the squash, rinse with water, and remove any strings and bits of squash. Pat dry, and place in a small bowl. Stir the olive oil and salt into the seeds until evenly coated. Spread out in an even layer on the prepared baking sheet.
  • Bake for 15 minutes, or until seeds start to pop. Remove from oven and cool on the baking sheet before serving.

1 (8 ounce) bottle buffalo wing sauce
1 (1 ounce) package ranch dressing mix
1 ½ tablespoons lemon pepper
seasoned salt
4 cups pumpkin seeds

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line baking sheet with wax paper.
  • Combine buffalo sauce, ranch seasoning, lemon pepper, and salt in a small bowl. Toss pumpkin seeds in mixture until evenly coated. Spread on the prepared sheet in an even layer.
