2 small zucchini, halved lengthwise and sliced 1/2 inch thick
1 bunch asparagus, trimmed and cut into 2-inch pieces
3 tablespoons extra-virgin olive oil
Freshly ground pepper
1 small onion, diced
2 cloves garlic, thinly sliced
1 28-ounce can diced tomatoes
1/2 cup grated pecorino romano or parmesan cheese, plus more for topping
9 ounces fresh linguine
1/2 cup chopped fresh basil

Steps:

  • Preheat the oven to 425 degrees F. Bring a large pot of salted water to a boil. Meanwhile, toss the zucchini and asparagus with 1 1/2 tablespoons olive oil on a rimmed baking sheet; season with salt and pepper. Roast until tender, about 20 minutes. Heat the remaining 1 1/2 tablespoons olive oil in a large skillet over medium heat. Add the onion; cook, stirring occasionally, until softened, about 8 minutes. Add the garlic and cook 30 more seconds. Increase the heat to medium high, add the tomatoes and simmer, stirring occasionally, 15 minutes. Remove from the heat and stir in the cheese. Meanwhile, add the linguine to the boiling water and cook as the label directs. Reserve 1/2 cup cooking water, then drain the pasta and add to the skillet with the sauce. Add the roasted vegetables and the reserved cooking water; toss to combine, then stir in the basil. Divide among bowls and top with more cheese.

I found this recipe on another web site and made it for Sunday night dinner - the family loved it. I wanted to get it posted before I lost the recipe. You could low carb this recipe by omitting the pasta and serving on a bed of salad greens.

1 1/2 cups yellow squash, julienne-cut
1 1/4 cups carrots, julienne-cut
1 cup sliced onion, vertically sliced
1 cup zucchini, julienne-cut
1 cup red bell pepper, julienne-cut
1 tablespoon olive oil
4 boneless skinless chicken breasts
1/2 teaspoon dried basil
1/2 teaspoon dry oregano
1/4 cup balsamic vinegar
1/4 cup fresh lemon juice
1 tablespoon olive oil
1 1/2 teaspoons Dijon mustard
1 teaspoon salt
1/4 teaspoon black pepper
1 garlic clove, crushed
1 (12 ounce) box ziti pasta, cooked
2 tablespoons fresh basil, chopped
16 cherry tomatoes, halved
feta cheese, to garnish

Steps:

  • Preheat oven to 450 degrees.
  • Combine all the vegetables with the olive oil, toss gently to coat. Bake at 450 for 20 minutes, turning occasionally; cool.
  • Prepare grill.
  • Sprinkle chicken with dried basil and oregano; cook chicken 4 minutes on each side or until chicken is doen. Cool; cut into 1/4 inch wide strips.
  • Combine all ingredients for the vinaigrette, with a whisk.
  • Combine the roasted vegetables, chicken, vinaigrette, pasta, fresh basil, tomatoes and feta in a large bowl; toss gently to coat.

6 garlic cloves
2 zucchini
1 eggplant

10 tomatoes

  • chop all the vegetables into equal sizes and put into a bowl.
  • add to them the sugar, salt, pepper, olive oil and the italian seasoning.
  • mix well together.
  • heat the oven to 350'f/180'c.
  • place the vegetables into a large baking dish and put in oven for 45 minutes, stirring a couple of times.
  • take half of the vegetables and put into a blender or food processor with the glass of white wine and whiz to a puree.
  • pour this mixture back into the dish and mix with the vegetables.
  • add the fresh basil leaves and olives and return to the oven for 10 minutes.

1 garlic head, seperated and peeled
1 tablespoon olive oil
1 onion
1 red bell pepper
4 cups chicken broth (sodium reduced)
2 cups water
2 carrots
1 tablespoon tomato paste
1 teaspoon dried basil
1/4 teaspoon pepper
4 cups shredded escarole (, I use Kale "or" Spinach)
1 1/2 cups broccoli, chopped
1 cup small shell pasta (shells, macaroni etc)
salt (optional)
grated parmesan cheese

Steps:

  • Preheat oven to 400.
  • Allow garlic to sit for 15 mins.
  • Then wrap garlic in foil and place in a small casserole.
  • Bake 45 to 50 mins or until soft when squeezed.
  • Warm oil in a soup pot over med heat.
  • Add onions and peppers.
  • saute 5 mins, add broth, water, carrots, tomato paste, basil and blk pepper.
  • Bring to a boil, reduce heat and cover, simmer 10 mins.
  • Remove 1 cup liquid.
  • Mash garlic into the liquid.
  • Stir into the pot.
  • Add escarole (greens) and simmer 7 mins.
  • Add broccoli, cover and turn off heat.
  • Cook the pasta according to package directions.
  • Drain and stir into the soup.
  • Adjust seasonings.
  • Pour into bowls and pass the parmesan!

2 medium red, green or yellow bell peppers, each cut into 12 pieces
1 cup fresh mushrooms, cut in half
1 medium zucchini, cut into 1 1/2-inch pieces (2 cups)
1 tablespoon olive or vegetable oil
1/2 teaspoon Italian seasoning
1/4 teaspoon salt
1 package (1.8 oz) white sauce mix
2 cups milk
1 cup shredded Havarti cheese (4 oz)
1 cup shredded Cheddar cheese (4 oz)

Steps:

  • Heat oven to 450°F. Spray 8-inch square (2-quart) baking dish with cooking spray. Cook and drain pasta as directed on package.
  • Meanwhile, in large bowl, toss bell peppers, mushrooms, zucchini, oil, Italian seasoning and salt to coat. Spoon into ungreased 15x10x1-inch pan. Bake uncovered about 20 minutes or until crisp-tender. Cool slightly. Coarsely chop vegetables.
  • Reduce oven temperature to 350°F. In 4-quart saucepan, mix sauce mix (dry) and milk. Heat to boiling over medium heat, stirring constantly; remove from heat. Stir in cheeses until melted. Stir in pasta until well coated.
  • Spoon half of pasta mixture into baking dish. Reserve about 1/2 cup of the vegetables. Spoon remaining vegetables evenly over pasta. Top with remaining pasta. Sprinkle with reserved vegetables.
  • Cover with foil; bake 30 minutes. Uncover; bake 10 to 15 minutes longer or until bubbly.

8 slices smoked back bacon, Cut into slices
2 (400 g) cans chopped tomatoes
1/2 green bell pepper, cut into thick slices

100 g cherry tomatoes, Halved
1 tablespoon tomato puree
2 garlic cloves, crushed

200 g cheddar cheese, Grated
2 tablespoons cornflour

Steps:

  • Place the olive oil in a roasting pan and heat in the oven at 170c until hot.
  • Meanwhile, for the tomato sauce, place the tomatoes, tomato puree, oregano, sugar and ground black pepper into a sucepan and bring to a simmer.
  • Mix the bell pepper, onions, and tomatoes in the roasting pan until coated in the oil.
  • Cook until soft and golden brown, approximately 30 minutes, stir occasionally.
  • The tomato sauce should also be thick by now.
  • Mix the roasted vegetables and tomato sauce into a large, deep oven dish.
  • Fry the bacon until cooked and add the garlic for 30 seconds, add to the mix.
  • Cook the pasta in boiling water until al dente, drain and stir into the mix.
  • Mix together a little of the milk and the cornflour to form a smooth paste, add this to the rest of the milk.
  • Place in a sucepan and cook over a medium heat, stirring constantly until thickened.
  • Add the cheese and black pepper, stir until combined.
  • Pour the cheese sauce over the pasta mix.
  • Cook at 170c for 30 mins or until golden brown on top.

8 ripe Roma tomatoes, quartered
1/4 cup chopped fresh basil, plus more for garnish

1/2 cup heavy cream
1 pound fusilli

1 (14 ounce) can Italian-style diced tomatoes
1 (14 ounce) jar prepared alfredo sauce
1 cup Italian cheese, mix
1/2 cup grated parmesan cheese (2tb reserved) or 1/2 cup romano cheese (2tb reserved)
2 carrots, sliced diagonally into 3/4-inch thick pieces
1 cup onion, sliced
1 red bell pepper, sliced into 1/2-inch thick pieces

  • 1. Preheat oven to 450 degrees. Cook pasta according to package directions, drain, and return pasta to pot used for boiling. You can chop your vegetables while the oven is preheating and water is boiling. Feel free to use other vegetables that roast well, like fresh green beans or parsnips.
  • 2. Toss vegetables and garlic in olive oil an season with kosher salt, black pepper, and red pepper flakes to taste. Spread in 9x13 pan in single layer for 20 minutes, or until vegetables are slightly charred.
  • 3. Remove vegetables from oven and decrease temperature to 375. In pot used for boiling pasta, toss pasta with can of tomatoes, alfredo sauce, italian cheese, and other cheese (reserving 2tbp for topping). Fold vegetables into mixture, and return mixture to 9x13 pan. Top with additional cheese and parsley for garnish.
  • 4. Bake for 20 minutes or until heated through. Serve with a green salad.

This is one of my favorite pasta salads. It has everything I love- roasted and fresh veggies, goat cheese, pasta and a spunky, garlicky, Dijon mustard dressing. Plus it's so simple to make!

8 oz grape tomatoes
1 can(s) 8-1/2 oz quartered artichocke hearts in water drained
15 kalamata olives pitted and halved
4 scallions chopped
4 oz goat cheese crumbled
1-1/2 c penne pasta (i like dreamfield's low carb)
olive oil or cooking spray to coat the veggies
salt and pepper to taste
1 dash(es) dried oregano
DRESSING
1 clove garlic chopped
1 tsp dijon mustard
1/4 c plus an extra 1-2 tsp rice wine vinegar
1/2 c olive oil, extra virgin
kosher salt
freshly ground black pepper

Steps:

  • 1. Pre heat oven to 375 degrees. Line your baking sheets with aluminum foil for easy cleanup. Spritz tomatoes and canned artichoke hearts with cooking spray or toss in olive oil and sprinkle with the kosher salt and pepper. Bake tomatoes for 15-20 minutes until they begin to pop a bit and get a little toasty brown.
  • 2. Cook your artichockes the same amount of time, but flip them over after about eight minutes so both sides can brown.
  • 3. While these are cooking, make your dressing, cook your pasta according to package directions and prep your other veggies. To make the dressing, combine all ingredients in a small jar and shake to combine. Finally, time to assemble the salad. Place all prepared vegetables in a bowl and add the cooked, cooled pasta and that very small pinch of oregano. Crumble your goat cheese, add your dressing and salad is ready to be refrigerated for about a 1/2 hour or longer, depending on your schedule.
  • 4. Sometimes I find that the pasta soaks up a lot of the dressing, so right before service, add an additional T of olive oil and a tsp or two of vinegar, just to regenerate the salad.

ROASTED ROOT VEGETABLE PASTA SALAD

2 tablespoons canola oil
1 tablespoon cider vinegar
1 tablespoon spicy brown mustard
Salt and freshly ground black pepper
8 ounces penne pasta, cooked and cooled
2 to 3 cups leftover Roasted Root Vegetable Salad recipe, roughly chopped
1 tablespoon chopped fresh parsley leaves
1 medium onion, sliced

Steps:

  • In a small bowl whisk together the oil, vinegar, mustard, and salt and pepper, to taste.
  • Add the pasta and the leftover root vegetables to a large serving bowl. Stir in the parsley and the sliced red onion. Toss with the vinaigrette and refrigerate to let the flavors develop, about 1 hour.

FETTUCCINE AND ROASTED VEGETABLE PASTA BAKE

1 orange sweet potato, peeled and finely sliced
1 large red onion, sliced
3 medium zucchini, sliced on the diagonal
1 tablespoon olive oil
375 g egg fettuccine pasta (fresh, such as Latina brand)
250 g ricotta cheese
425 g alfredo sauce, storebought or home-made
2 eggs, lightly beaten
1/4 cup freshly grated parmesan cheese

Steps:

  • Preheat the oven to 180 degree C.
  • Grease and line the base of a 22cm springform cake pan with baking paper.
  • Place the onion, sweet potato, zucchini and olive ol in a roasing pan and toss to coat vegetables.
  • Season with some salt and pepper.
  • Bake for 20-25 minutes or until softened and lightly coloured on edges.
  • Cook the fettuccini according to packet directions.
  • Rinse under cold water once cooked.
  • Combine the roasted vegetables, fettuccini, ricotta, alfredo sauce and eggs in a large bowl and mix well.
  • Spoon into the prepared pan and sprinkle with parmesan.
  • Bake for 25-30 minutes or until lightly golden on top.
  • Remove from oven and cool slightly.
  • Can be served warm or at room temperature.
  • Serve with salad for a lovely lunch or dinner.

8 cups cauliflower florets
5 carrots, cut into 1/2-inch-thick slices
1 red onion, cut into 1-inch chunks
2 cloves garlic, minced
2 Tbsp. olive oil
3 cups rigatoni pasta, uncooked
1 can (14.5 oz.) fat-free reduced-sodium chicken broth
1 can (14.5 oz.) diced tomatoes, drained
1/4 cup chopped fresh basil
1 pkg. (8 oz.) KRAFT Shredded Italian* Five Cheese with a TOUCH OF PHILADELPHIA, divided

Steps:

  • Heat oven to 400ºF.
  • Spread cauliflower, carrots, onions and garlic onto foil-covered rimmed baking sheet. Drizzle with oil; stir to evenly coat vegetables. Bake 30 min. or until vegetables are tender and golden brown. Meanwhile, cook pasta in large saucepan as directed on package, omitting salt.

I have tried many different pesto recipes and tried to combine what I liked most from all of them to create this pesto sauce. I LOVE baked tomatoes with basil and balsalmic vinegar, so that is why I added these three to the recipe. The asparagus was on hand and thought it would bring a nice flavor to the recipe, as well as the scallions.

1/2 cup pine nuts
2 cups fresh basil
1/4 cup fresh thyme
1 cup fresh parsley
2 garlic cloves
1 cup parmesan cheese, grated
3/4 cup extra virgin olive oil
1 teaspoon sea salt
2 teaspoons balsamic vinegar
1 teaspoon ground black pepper
2 tablespoons extra virgin olive oil
4 chicken breasts
2 tablespoons McCormick grill seasoning
2 cups flour
4 plum tomatoes
3/4 cup scallion, chopped
2 cups asparagus, chopped
12 ounces whole wheat spaghetti

Steps:

  • Place pin nuts in a non-stick skillet and toast over medium heat until slightly browned (3 to 5 mins).
  • While pin nuts are toasting, put remaining 9 ingredients in a food processor.
  • When pin nuts are toasted add them to the food processor and mix pesto sauce until smooth.
  • In a large pot, start boiling water for pasta.
  • Preheat oven to 375 degrees.
  • While water is coming to a boil, cut up the asparagus, scallions and tomatoes, keeping them all separate from one another.
  • Cook spaghetti according to box directions. Add asparagus to water 5 minutes before pasta is fully cooked, strain, and replace in pot over lowest heat setting. Add pesto sauce to spaghetti and mix.
  • Heat oil in oven proof skillet over medium-high heat.
  • Fillet chicken breasts in half, sprinkle with grill seasoning, coat with flour and place in skillet and cook 2-3 mins on each side until slightly browned.
  • Add tomatoes and scallions to chicken and place skillet into preheated oven.
  • Cook chicken for 15-20 minutes.
  • When chicken is done, remove from oven.
  • Place Pesto-asparagus pasta on a plate and place a slice of chicken on top. Garnish as desired.
