1 pound thin asparagus, trimmed
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 cup freshly grated Parmesan cheese (about 1 1/2 ounces)
1 teaspoon finely grated lemon zest
Juice of 1/4 lemon

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with a wire rack.
  • Put the asparagus, olive oil, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a medium bowl. Toss to coat evenly. Spread the asparagus in a single layer on the prepared baking sheet. Roast for 10 to 12 minutes, until lightly browned and tender, but still bright green.
  • Meanwhile, spread the Parmesan evenly in the bottom of a medium nonstick skillet over medium heat. Cook undisturbed until the cheese melts, sticks together and turns golden brown, about 2 minutes, then flip with a rubber spatula and cook until golden on the second side, about 2 minutes more. Transfer the frico to a wire rack-lined baking sheet to cool completely, about 2 minutes. Break the frico into small crumbles and put in a small bowl. Add the lemon zest and 1/2 teaspoon black pepper and toss to combine.
  • Transfer the roasted asparagus to a serving platter and squeeze the fresh lemon juice over the top. Top with the crumbled frico mixture.

2 tablespoons sesame oil
1/2 teaspoon cayenne chili pepper flakes
8 stalks asparagus, woody ends snapped off
2/3 cup extra firm tofu, cut into 1/2 inch cubes
1 cup sliced button mushroom
1 clove garlic, minced
2 teaspoons granulated sugar
2 tablespoons soy sauce

Steps:

  • Heat sesame oil and red pepper flakes in nonstick skillet or wok.
  • Cut asparagus spears into 1 1/2 inch pieces.
  • Add asparagus and tofu to heated sesame oil and stir-fry for 5 minutes.
  • Add mushrooms and cook for 3 minutes.
  • Add garlic, saute, stirring constantly, for 30 seconds.
  • Mix sugar and soy sauce together in small bowl until combined and add to pan.
  • Mix well to coat and stir-fry for 3-4 minutes.
  • Asparagus should be crisp-tender at this point.
  • Serve.

1 lb new potato (cut in half or quarters)
3 tablespoons olive oil
1 teaspoon kosher salt
1/4 teaspoon black pepper
1 garlic clove, chopped
1 lb asparagus, trimmed

Steps:

  • Heat oven to 400°F
  • Place the potatoes in a roasting pan. Drizzle with the oil. Season with 3/4 tsp salt and pepper, garlic and toss.
  • Roast for 30 minutes, shaking the pan once.
  • Add the asparagus to the pan with the potatoes, season with the remaining salt, and toss. Roast until the asparagus is tender, 12-15 minutes.
  • Recipe modifications:.
  • I mixed the oil, s&p, garlic (used two tsp Christopher Ranch chopped garlic, but not everyone loves garlic like me), potatoes and (and then asparagus, separately) in a bowl and put them in the pan. I prepare my asparagus by holding each stem at both ends, and bending it until it snaps. It snaps off at just the right length. I believe it took about 5-10 minutes longer to roast the asparagus than the recipe called for, so keep an eye on yours. After I added the asparagus, I scraped out the seasoning mix and drizzled it onto the potatoes and asparagus before returning the pan to the oven.

1 lb asparagus, trimmed
2 tablespoons white vinegar
1 tablespoon reduced sodium soy sauce
2 teaspoons canola oil
1 teaspoon sesame oil
1/2 teaspoon grated fresh ginger
2 -3 dashes asian red chili sauce (such as sriracha)
1 bunch radish, trimmed and cut into wedges
2 tablespoons finely chopped scallions

Steps:

  • Fill a medium bowl with ice water and place by the stove. Bring 1 inch of water to a boil in a large saucepan fitted with a steamer basket.
  • Cut off the tips of the asparagus, then thinly slice the remaining asparagus stalks on the diagonal. Place in the steamer basket and steam until tender-crisp, about 1 minute. Transfer the asparagus to the ice water. Drain.
  • Combine vinegar, soy sauce, canola oil, sesame oil, ginger and chile sauce (if using) in a large bowl.
  • Add the asparagus, radishes and scallion; toss to combine.

2 teaspoons fresh horseradish, peeled and grated

Steps:

  • Preheat oven to 450 degrees F; spray a large rimmed baking pan with cooking spray.
  • Place asparagus, in a single layer, on pan and season with salt and pepper; roast in oven, shaking pan occasionally, until tender crisp, about 15 minutes total.

This came from "Simply Delicious - Flexpoints Cookbook" from Weight Watchers. Out of all the recipes in there, this is the one that I want to try the most. At time of posting, I have not tried this. But I plan on doing so soon. I can't find tofu here in town so it will have to wait until I can get into the city to get some. The book says this is 2 points per serving. The numbers as presented here come up as closer to 3 points (2.9) but that is because it isn't counting on reduced fat tofu. Plus it isn't counting the balsamic vinegar.

2 tablespoons balsamic vinegar
1 tablespoon extra virgin olive oil
3 garlic cloves, finely chopped or 1 1/2 teaspoons garlic paste
1 tablespoon fresh rosemary, finely chopped or 1 teaspoon dried rosemary
1 teaspoon lemon zest, grated
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 lb reduced-fat firm tofu, cut into 1 inch cubes
1 lb asparagus, trimmed and cut into 2-inch lengths (1 bunch)
1 (6 ounce) bag radishes, trimmed
1 small red onion, cut into 4 wedges

Steps:

  • Preheat the oven to 400°F Spray a large, nonstick roasting pan with nonstick spray.
  • Combine the vinegar, oil, garlic, rosemary, lemon zest, salt, and pepper in a large bowl. Add the tofu, asparagus, radishes and onion; toss gently to coat.
  • **Note: As radishes are never all the same size, I would probably halve the larger ones.
  • Turn the mixture into the roasting pan and spread into one layer. Roast until the vegetables are tender and lightly browned, turning once, 20-25 minutes.
  • I like my roasted veggies to have that really lovely dark brown colour to them, so I would probably lean towards the end of the cooking time.
