I've combined a few of my favorite things, resulting in a truly splendid and robust side dish worthy of company!

1 lb asparagus
1 1/2 tablespoons olive oil
1/2 teaspoon sea salt
1/4 teaspoon cracked pepper
1/4 cup crumbled blue cheese
1/2 cup walnuts, toasted

Steps:

  • Preheat oven to 425.
  • Trim and wash asparagus then arrange in a shallow roasting pan.
  • Drizzle olive oil over asparagus and sprinkle with salt and pepper.
  • Toss asparagus to evenly coat.
  • Roast in oven for 10-12 minutes.
  • Remove from oven and immediately sprinkle with blue cheese, then top with walnuts.

Roasted Butternut Squash with Beet Greens, Goat Cheese, Toasted Walnuts and Mint image

4 butternut squash
2 tablespoons olive oil
Salt and freshly ground black pepper
3 cups beet greens
3/4 cup walnuts
1/4 cup roughly chopped fresh mint leaves
1 cup crumbled goat cheese

Steps:

  • Preheat oven to 425 degrees F.
  • Peel and cut butternut squash into 1/2-inch cubes. Place on 2 sheet trays, drizzle with olive oil and 1 teaspoon salt and distribute evenly. Place in oven and bake until softened and golden.
  • Wash beet greens and de-stem and chiffonade greens. Toast walnuts in a medium skillet over medium heat.
  • Remove squash from the oven and toss in beet greens, mint and goat cheese. Top with toasted walnuts. Adjust seasonings with salt and pepper, to taste, and serve warm.

Steps:

  • Spray a baking sheet with cooking spray.
  • Take your walnuts and place them on the pan. (Do not chop until after they have baked).
  • Place the walnuts in the oven and bake them at 350 degrees for 5 to 10 minutes.
  • Make sure you keep an eye on them until they are done so that they don't burn.

Roasted Balsamic Asparagus with Goat Cheese and Toasted Walnuts image

How to make Roasted Balsamic Asparagus with Goat Cheese and Toasted Walnuts

Number Of Ingredients 6

1 bunch (about 1 pound) Asparagus
2 tablespoons Olive Oil
2 tablespoons Balsamic Vinegar
2 ounces Goat Cheese, crumbled
1/3 cup Walnut pieces (preferably halves or larger pieces)
Salt and pepper

Steps:

  • Preheat oven to 400 degrees
  • Cover a baking sheet with foil (shiny side up). Rinse asparagus and break or cut the bottom of the stalk.
  • Place the asparagus on the baking sheet in a single layer. Brush the asparagus with the olive oil, salt and pepper lightly and place in the heated oven for 10 minutes.
  • While the asparagus cooks, place the walnuts in a small dry skillet over medium-high heat and stir constantly for 2-3 minutes until the walnuts being to brown. Remove from heat.
  • Allow the walnuts to cool until they can be handled and then chop them into small pieces. Set aside.
  • Remove asparagus from oven and allow it to sit for about 5 minutes. Place the asparagus on a serving platter and brush with the balsamic vinegar. Place crumbled goat cheese and toasted walnuts on top of the asparagus and serve warm.
